Steps:
- Bring water and salt to rapid boil.
- Add grits, reduce heat, and cook until grits are thickened, about 3-4 minutes.
- Stir in butter and Velveeta cheese until melted.
- Mix eggs, milk, and black pepper together, and then add to the grits mixture.
- Stir in the chopped jalapenos.
- Pour into casserole dish.
- Bake uncovered for 45 minutes or until set in a 300 degree oven.
- Sprinkle Jack cheese on top, and return to the oven for 15 more minutes.

CHEESE & JALAPENO GRIT FRITTERS

Steps:
- 1. In a medium saucepan add 1 tablespoon oil and minced onion. Cook until translucent. Add minced jalapenos and cook for 2 minutes. Next add the chicken broth and bring to a boil. Add the garlic and slowly stir in the grits. Reduce the heat to low and cook, stirring frequently, until the grits are tender, 20 minutes. Remove the saucepan from the heat and stir in the cheese, bacon, butter and cream. Season with salt and pepper and serve immediately.
- 2. Cool mixture and refrigerate for at least 4 hours up to 24 hours.
- 3. Remove grit mixture from the refrigerator. Roll grits into 1 1/2-inch balls. Whisk together eggs and water. Dip balls in egg wash, and roll in breadcrumbs.
- 4. Pour oil to depth of 3 inches in a large, heavy skillet; heat over medium-high heat to 350°. Fry fritters, in batches, 3 to 4 minutes or until golden brown. Drain on paper towels. Keep fritters warm on a wire rack in a pan in a 225° oven up to 30 minutes. Serve warm with sweet chili sauce or Cajun Pour oil to depth of 3 inches in a large, heavy skillet; heat over medium-high heat to 350°. Fry fritters, in batches, 3 to 4 minutes or until golden brown. Drain on paper towels. Keep fritters warm on a wire rack in a pan in a 225° oven up to 30 minutes. Serve warm with Sweet Chili Sauce or Cajun Mayonnaise . (recipe below)
- 5. Cajun Mayonnaise: 1/2 cup, finely chopped celery 1/2 cup, finely chopped green onions 1/4 cup prepared horseradish 1/4 lemon juice 2 tablespoons, catsup 2 tablespoons, Worcestershire sauce 1 tablespoon, prepared mustard 1 tablespoon, white vinegar 1 tablespoon, Tabasco sauce 1 tablespoon, minced garlic 2 teaspoons, sweet paprika 1 teaspoon, salt Mix all ingredients well and chill.
ROASTED GARLIC JALAPENO CHEESE GRITS
Steps:
- Preheat the oven to 325 degrees F. Lightly butter a 2-quart oven-safe dish.
- Cut the top off of the garlic head to expose the garlic. Put the head on a piece of aluminum and drizzle with olive oil. Sprinkle with salt and pepper and close. Place the garlic into the oven and roast until soft, about 45 minutes. Remove from the oven and open to cool slightly before using.
- Bring the chicken stock, 1 1/2 cups water and 1 teaspoon salt to a rolling boil in a large pot over high heat. Add the grits and stir well with a whisk. Cook, stirring constantly, until the liquid is absorbed, about 5 minutes. Remove from the heat and stir in the butter. Add the eggs while whisking quickly, and fold in 3 tablespoons of the roasted garlic, the cheeses, jalapenos, cayenne, 1/2 teaspoon black pepper and white pepper. Once the grits are thoroughly combined and smooth, transfer to the prepared baking dish and cover with foil.
- Bake for 1 hour 20 minutes, then remove foil and cook 10 minutes longer to brown the top.
JALAPENO CHEESE FRITTERS
Appetizer balls with a soft cheesy interiors with a crunchy exterior. Serve with your dip of choice. I believe this to be an Abuelo's recipe.

Steps:
- In a mixing bowl, place softened cream cheese, shredded Monterrey, Cheddar, deseeded jalapenos and seasoning, mix well. Using a level tablespoon as measurement, measure cheese fritters. Roll into balls and place on a plate or sheet pan and set aside. Prepare breading station.
- Breading Station: In a 1/2 size foil pan place flour. In another 1/2 size foil pan, crack eggs add water. Whip to create egg wash. In another 1/2 size metal foil pan place bread crumbs. Place an empty 1/2 size foil pan next to the bread crumbs. Place the unbreaded cheese balls next to the flour. Start breading procedure.
- Breading Procedure: Place 20 cheese balls into flour. Toss gently to coat. Shake off excess flour and place cheese balls into egg wash. Cover cheese balls completely with egg wash. Transfer cheese balls to bread crumbs. Toss gently to coat. Shake off excess bread crumbs and return cheese balls to egg wash. Return cheese balls to bread crumbs. Toss gently to coat thoroughly. Place on sheet tray lined with parchment paper.
- Frying Procedure: Heat counter top fryer or frying pan filled with oil to 360 degrees. Fry cheese balls for about 1 1/2 minutes on until golden brown. Place fritters on a plate lined with paper towel to absorb excess grease. Serve immediately with ranch dressing for dipping.
CREAMY JALAPENO CHEESE GRITS
Grits are a great substitute for potatoes, pasta, or rice. This particular recipe is wonderful served under grilled shrimp.

Steps:
- Melt butter with olive oil in medium pot.
- Add onions, garlic, and chopped jalapenos. Saute until onions are softened.
- Add chicken broth and milk; bring to a boil.
- Add grits, lower heat and stir constantly with a whisk for three to five minutes until cooked.
- Add Velveeta and pepper jack cheese. Cook until cheese is melted and well blended.
- If grits are too thick, add a little milk to loosen them up.
- Serve immediately.

Steps:
- Preheat oven to 350 degrees F.
- Cook the grits according to the directions on the back of the package (usually between 5-10 minutes), whisking the whole time to avoid lumps.
- Remove from the heat and add next 6 ingredients (cheddar through chilies).
- Stir well and season with garlic salt, to taste.
- Pour into a buttered 9x9-inch baking dish and bake for 1 hour.
- Let cool slightly before slicing and serving.

Steps:
- Bring the stock to a boil over medium heat.
- Add in half-and-half, and bring back to a boil.
- Whisk in grits, reduce heat to low, and cook for 10-15 minutes until creamy, stirring occasionally.
- Add chopped jalapenos, and let cook for 5 more minutes.
- Turn off heat, add in cheese, and stir till melted and incorporated.
- Note: Salt needed will vary depending on stock used.

I had these grit fritters at Bone's in Atlanta. They are rich and creamy and easy to make. Try these at home - you won't be disappointed!

- In small saucepan, bring water and salt to a boil, slowly stir in grits and cook for 6-8 minutes until very thick.
- Remove from heat and let cook, about 5 minutes.
- Stir in herb Boursin cheese and place mixture in refrigerator until cold and still.
- Roll into 1 ounce balls, set aside. (I used a large pampered chef scoop).
- Combine milk and eggs for egg wash.
- Dip grits fritters into the following: flour, egg wash, then breadcrumbs.
- Fry in oil until golden brown (approx 3-5 minutes).
- Drain on paper towels and serve hot.
