Petite deep fried cheese sandwiches that were served in the King's Food Host restaurants in Omaha and Lincoln Nebraska. I got this recipe from a friend of mine who worked at King's in the 1960's.

6 slices American cheese
6 slices white bread
mayonnaise
1 egg
1/2 cup milk
3/4 cup flour
1 teaspoon salt
corn flake crumbs, crushed fine
oil (for deep frying)

Steps:

  • Prepare 3 sandwiches, using mayonnaise and 2 slices of cheese for each. Cut the crusts off the sandwiches. Cut each sandwich diagonally both ways, making 4 triangles.
  • Combine egg, milk, flour and salt.
  • Dip each triangle into egg mixture and then coat with the corn flake crumbs.
  • Deep fry at 375°F until golden brown.

1 cup corn flakes
3 tablespoons mayonnaise
oil (for deep frying)

Steps:

  • Spread mayonnaise on bread, and use 2 slices of American Cheese each.
  • Cut sandwiches into triangles, cut off crust.
  • Combine egg, milk, flour and salt. Dip the triangle sandwiches into egg mixture.
  • Coat with corn flake crumbs.
  • Deep Fry in oil at 375 degrees until golden.

"I remember enjoying these crispy golden sandwiches at a restaurant when I was a teenager," writes Darlene Brenden of Salem, Oregon. "After it closed, I came up with this recipe. Now I make a batch and keep them in the freezer, ready to fry at any time. It's like reliving my teen years all over again!"

Number Of Ingredients 8

1/4 cup mayonnaise
8 slices bread
8 slices process American cheese
1 egg
1/2 cup milk
1/4 teaspoon salt
1 cup crushed saltines (about 25 crackers)
Oil for frying

Steps:

  • Spread mayonnaise on one side of each slice of bread. Top four slices with two cheese slices. Top with remaining bread, mayonnaise side down. Cut each sandwich into four triangles., In a bowl, beat the egg, milk and salt. Dip sandwiches into egg mixture, then roll in cracker crumbs. Wrap in foil and freeze for up to 1 month., In a skillet, heat 1 in. of oil to 375°. Fry a few frozen sandwiches at a time for 2 minutes on each side or until golden brown.

The actual recipe is a secret (in fact, even people that worked there say they didn't know ALL the ingredients). I searched, and experimented, and...

6 slice white bread
6 slice american cheese
miracle whip or mayo
1 egg
1/2 c milk
3/4 c flour
1 tsp salt
kellogg's corn flake crumbs or very finely ground cracker crumbs
oil for frying

Steps:

  • 1. Make 3 sandwiches using 2 slices of bread spread with Miracle Whip or mayo (Kings used Miracle Whip), and 2 slices of American cheese for each sandwich. Cut the crusts off, and then slice each sandwich diagonally, to make 4 triangles.
  • 2. In a small bowl, combine the egg, milk, flour & salt and whisk to make a batter.
  • 3. Dip each triangle in the batter, covering completely. Let the excess drip off, and then coat with crumbs.
  • 4. Fry the triangles in 375 degree oil until golden brown.
  • 5. *Note: If you are just making one sandwich for yourself, you can use the leftover batter & crumbs to make onion rings. They are wonderful!!

mayonnaise
6 slice white bread ..or try whole wheat bread
6 slice american cheese...only!
crushed corn flakes...or soda crackers
oil for cooking
** batter recipe below:
1 large egg
1/2 c milk
1 tsp salt
3/4 c flour
catsup for dipping

Steps:

  • 1. For frenchies...Cut crusts off bread and spread mayonnaise to taste on one side of each bread slice. Place one slice of cheese between two slices of bread. ****NOTE: USE ONLY AMERICAN CHEESE. Cut each sandwich diagonally to make 4 triangles. Best Secret Tip. If you freeze them overnight,the bread asorbs some of the mayonnaise..it helps to firm them up. Try it with and without freezing.. see what you think.
  • 2. For batter,combine beaten egg, milk,salt and flour. Dip each triangle in batter, then dip in crushed cornflakes as needed.
  • 3. Heat oil to 375 degrees, in your fryer. Fry Frenchies untill browned, but not burned. Serve with catsup and a dill pickle on the side. Chow down...and enjoy this special treat from the past!
  • 4. Variation: For Tuna Frenchies, substitute cheese with canned,drained tuna mixed with a wee bit of mayonnaise and salt. The mayonnaise will hold the tuna together. Follow the above recipe. I have made these with canned salmon.. and served hot at a graduation part They looked so pretty on a tray, decorated with parsley sprigs and radish roses.

1 1/2 sleeves ritz crackers, (50 crackers), pulsed in a food processor to coarse crumbs
2/3 cup milk
2 large eggs
1/2 cup mayonnaise
8 slices hearty white sandwich bread
6 slices american cheese
3 to 4 quarts vegetable oil

Steps:

  • 1. Line large rimmed baking sheet with parchment paper. Spread cracker crumbs in shallow dish. Whisk milk and eggs together in medium bowl.
  • 2. Spread 1 Tbsp. of the mayonnaise on one side of each slice of bread. Arrange 1 1/2 slices of cheese on 4 of the slices of bread and top with remaining 4 slices bread, with the mayonnaise side facing the cheese. Cut each sandwich diagonally into quarters.
  • 3. One at a time, dip sandwich quarters into egg mixture, then coat with the cracker crumbs, pressing to adhere. Put on the prepared baking sheet and refrigerate til set, about 1 hour. Pour oil into large Dutch oven til it measures 2 inches deep. Heat oil to 375 degrees over medium high heat.
  • 4. Lay half of the chilled sandwich quarters in oil and fry til golden brown on both sides, 2 to 3 minutes, flipping halfway through. Transfer sandwich quarters to a large paper towel lined plate to drain briefly. Repeat with remaining sandwich quarters. Serve. Serves 4

The Frenchee (sandwich) hails from the great state of Nebraska. First created by King's Food Host Restaurant which is no longer in business. Here is an artery-cloggin' version that my dad loves and makes when my mom isn't looking.

3/4 cup all-purpose flour
1 teaspoon salt
1 egg, lightly beaten
1 cup milk
8 slices white bread
mayonnaise
mustard (optional)
4 slices American cheese (thin slices)
4 slices swiss cheese (thin slices) or 4 slices monterey jack cheese (thin slices)
oil (for deep frying) or vegetable shortening (for deep frying)
1 (7 ounce) box corn flakes, finely crushed
ketchup (optional)

Steps:

  • In a large shallow bowl, stir together the flour and salt.
  • Mix together the egg and milk in a glass measuring cup.
  • Gradually add the egg/milk mixture to the flour mixture, whisking until the batter is smooth; set aside.
  • Spread 4 slices of bread lightly with mayonnaise and mustard, if desired.
  • Top each piece of bread with a slice of American cheese and a slice of Swiss or Monterey Jack cheese.
  • Cover each with a second slice and bread and lightly press the sandwiches together.
  • In a deep 12-inch fry pan (dad uses a deep electric fry pan), heat oil or shortening of 1 inch deep to 350°F.
  • Put the crushed cornflakes in a pie plate.
  • Dip a sandwich in the batter to lightly, but completely cover, the dip sandwich in the cornflake crumbs; repeat with another sandwich.
  • Carefully add both sandwiches to the hot oil; Fry until golden on one side; carefully turn and fry until golden on the other side.
  • Remove sandwiches to a paper towel lined plate; dip, coat, and fry the remaining two sandwiches.
  • Cut sandwiches into quarters and eat dipped in ketchup if desired.
