Ridiculously addictive appetizers. I brought them to a party and everyone attacked them like starving piranha on a cow. I included them in a tin of cookies for my hubby's co-workers and one of them ate all of them before anyone else could try them. She also demanded the recipe. From the cookbook "Fix, Freeze, Feast" by Katie Neville and Lindsey Tkacsik. Make them ahead of time, keep in your freezer and bake what you need. I plan to have these on hand all the time.

Number Of Ingredients 7

2 lbs sharp cheddar cheese, shredded
2 cups unsalted butter, softened
5 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon cayenne pepper
1 (8 ounce) jar small pimento-stuffed green olives, well drained (optional)
raw pecan halves (optional)

Steps:

  • Combine cheese, butter, flour, salt, and cayenne in a large bowl: knead into a dough.
  • Roll dough into 1 inch balls and place on an un-greased baking sheet.
  • If using olives, form each ball around 1 olive.
  • If using pecans, press 1 pecan half onto each ball.
  • Can bake them right now (see instructions below) or freeze for later.
  • Place in trays in freezer for 30 minutes.
  • Remove from freezer and place in freezer bags or container.
  • Seal and freeze.
  • Can bake them straight from freezer.
  • Preheat oven to 425°F.
  • Place cheese balls 3 inches apart on an un-greased baking sheet.
  • Bake 15-17 minutes if frozen, 13-15 minutes if thawed.

1 cup shredded Cheddar cheese
2 tablespoons olive oil
1/2 cup all-purpose flour
1/8-1/4 teaspoon cayenne pepper
24 olives of your choice (pimento-stuffed green olives are especially good)

Steps:

  • 1. Place the shredded cheese in a medium-sized bowl, and drizzle with the olive oil. Toss to combine. 2. Sift the flour and cayenne pepper directly onto the cheese mixture. Use the back of a fork to blend well. 3. Dry the olives slightly by rolling them around on a paper towel. This will help the dough adhere better. Mold a scant tablespoon of dough around each olive, pressing together well. 4. Lightly coat a cookie sheet with olive oil cooking spray. Arrange the wrapped olives on the sheet, spacing them about 2 inches apart. 5. Bake in a preheated 400°F oven for 15 minutes, or until lightly browned. Serve immediately. If you prefer, freeze the unbaked bites in a single layer and, when solidly frozen, transfer to a zip-lock plastic bag. Bake the frozen bites in a preheated 400°F oven for about 20 minutes, or until lightly browned. Serve immediately.

I baked these muffins for the kids I babysit, and they couldn't get enough. Their favorite part? The filling, of course! -Jodie Gharbi, Shreveport, Louisiana

1 package (8 ounces) cream cheese, softened
1/2 cup sugar
3/4 teaspoon grated lemon zest
1/4 teaspoon vanilla extract
MUFFINS:
2 cups all-purpose flour
2/3 cup sugar
1 tablespoon baking powder
1 teaspoon grated lemon zest
1/2 teaspoon salt
1 large egg
1 cup 2% milk
1/4 cup butter, melted
1-1/4 cups pomegranate seeds
2 teaspoons coarse sugar

Steps:

  • Preheat oven to 400°. For filling, mix first four ingredients until blended. , In a large bowl, whisk together first five muffin ingredients. In another bowl, whisk together egg, milk and melted butter. Add to dry ingredients, stirring just until moistened. Fold in pomegranate seeds., Fill paper-lined muffin cups one-third full with batter. Drop filling by tablespoonfuls into center of each muffin; cover with remaining batter. Sprinkle with coarse sugar., Bake until top springs back when lightly touched, 18-22 minutes. Cool 5 minutes before removing from pans to wire racks. Serve warm. Refrigerate leftovers.
