This is one of my favorite recipes for soda bread. It's versatile-you can do endless sweet or savory variations. I serve it sliced alongside assorted spreads and cheeses. -Theresa Vujosevic, Hamburg, New Jersey For a savory Irish bread: Omit Sugar and Raisin and replace with 1 medium onion, 5 gloves of garlic (chopped and sauteed until translucent). Number Of Ingredients 9

1 tablespoon olive oil
1 medium onion, chopped
5 garlic cloves, minced
4 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1/4 cup cold butter, cubed
1 large egg, room temperature
1-1/2 cups buttermilk

Steps:

  • Preheat oven to 425°. In a small skillet, heat oil over medium-high heat. Add onion; cook and stir until light golden brown, 3-5 minutes. Add garlic; cook and stir 30 seconds longer. Cool., In a large bowl, whisk flour, salt and baking soda. Cut in butter until mixture resembles coarse crumbs. Stir in cooled onion mixture; make a well in center. In a small bowl, whisk egg and buttermilk; pour into well. Using a wooden spoon, mix dough until too stiff to stir. Turn onto a lightly floured surface; knead gently 10 times. Shape into a round loaf., Transfer to a large greased cast-iron skillet or baking sheet. Using a sharp knife, cut a shallow "X" on the top of loaf. Bake until golden brown, 35-40 minutes., Remove from pan to a wire rack; serve warm.

I begged this recipe from my co-worker when he 'accidentally' mentioned he had a great soda bread recipe. It was perfect timing, because St. Patrick's Day was only days away!

4 cups bread flour, plus more for dusting
1 ½ teaspoons salt
1 tablespoon baking powder
6 tablespoons butter, softened
1 ¼ cups buttermilk
2 tablespoons confectioners' sugar
¾ cup finely chopped onion
¾ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Line a baking sheet with parchment paper.
  • In a large mixing bowl, whisk together bread flour, salt, and baking powder until thoroughly combined. Beat in the butter, buttermilk, and confectioners' sugar to make a dough; gently mix in the onion and Cheddar cheese. Divide dough in half, and shape each half into a ball. Place the loaves onto the prepared baking sheet, and gently flatten to about 2 inches thick. Dust each loaf with flour.
  • Bake on a preheated oven until browned, about 30 minutes. Cool on racks for a few minutes; serve warm.

2 cups all-purpose flour
1 cup whole wheat flour
1 cup shredded old cheddar cheese
2 tablespoons sugar
1 teaspoon baking soda
1 teaspoon salt
1/4 cup chopped green onion
1 1/2 cups buttermilk
1/4 cup vegetable oil
1 pinch cayenne pepper
1 tablespoon all-purpose flour (for topping)

Steps:

  • Preheat oven to 375°F (190°C).
  • In large bowl, whisk together all-purpose flour, whole wheat flour, cheese, onions, sugar, baking soda, salt and cayenne.
  • In small bowl, whisk together buttermilk and oil. Add to dry ingredients all at once; stir with fork until soft dough forms.
  • Turn out dough onto lightly floured surface. With floured hands, press dough into ball; knead lightly 10 times. Place on greased baking sheet; gently pat out dough into 6-in (15 cm) circle.
  • Topping:.
  • Sprinkle flour over loaf. With sharp knife, score large X on top of loaf. Bake in oven for about 45 minutes or until golden and tester inserted in centre comes out clean.

Sharp cheddar cheese combined with tender onions and it 's a quick bread that goes great with green salads.

1 ½ cups all-purpose flour
3 teaspoons baking powder
1 teaspoon salt
2 tablespoons margarine
½ cup shredded sharp Cheddar cheese
½ cup finely diced onion
1 tablespoon margarine
1 egg
½ cup milk
½ cup shredded sharp Cheddar cheese

Steps:

  • Preheat oven to 400 degrees F (205 degrees C). Grease one 8 inch round or one 8x8 inch square pan.
  • Combine flour, baking powder and salt, cut in 2 tablespoons of the butter until mixture is crumbly. Stir in 1/2 cup of the grated cheese. Make a well in the center of the mixture.
  • Fry the onion in 1 tablespoon of the butter or margarine until clear and golden. Set aside.
  • In a small bowl beat the egg and stir in the milk and the cooked onion. Pour egg mixture into the well in the flour mixture. Stir until just moistened. You will have a soft dough. Pat dough into the prepared pan. Sprinkle remaining 1/2 cup grated cheese over top.
  • Bake at 400 degrees F (205 degrees C) for 25 minutes. Serve hot. Makes about 6 servings.

Traditional soda bread gets a tasty twist in this version, flavoured with soured cream, cheese and fried onion.

250 g strong white flour, plus extra for dusting
250 g wholemeal flour
20 g baking powder
40 g caster sugar
75 g unsalted butter, softened
200 ml buttermilk
100 ml sour cream
150 g cheddar cheese
1 onions, chopped and gently fried in a little sunflower or 1 vegetable oil, until softened but not browned

Steps:

  • Preheat the oven to 400°F Line a baking sheet.
  • Place the flours, baking powder and sugar in a large bowl. Make a well in the centre and work in the butter, buttermilk, soured cream, Cheddar cheese and fried onion to make a soft dough.
  • Shape the dough into a ball. Flatten slightly and cut a cross into the top, then dust the top with a little flour.
  • Place the loaf on a lined baking sheet and bake for 25 minutes until golden brown. Transfer to a wire rack to cool.

Cheese, oat & spring onion soda bread image

Make the most of oats, a cupboard staple, with this moreish cheese and spring onion soda bread. Enjoy with soups, salads or simply slathered in butter

120g rolled oats, plus extra for the topping
250g plain flour, plus extra for dusting
1 tsp bicarbonate of soda
150g mature cheddar, grated
4 spring onions, chopped
350ml buttermilk, plus a little extra (optional)
½ tsp Dijon mustard

Steps:

  • Heat the oven to 200C/180C fan/gas 6 and line a baking tray with baking parchment. Blitz the oats in a food processor until fine, then tip into a large bowl along with the flour, bicarbonate of soda, ½ tsp salt and 1 tsp freshly ground black pepper. Quickly mix together to combine. Mix in 130g of the cheese and all of the spring onions.
  • Mix the buttermilk and mustard together in a jug, then pour this into the dry ingredients and use a cutlery knife to quickly mix into a soft, shaggy dough. If the dough still looks dry, add another 1-2 tbsp buttermilk. Turn the dough out on a floured surface and knead briefly to just bring it together into a ball.
  • Transfer the dough to the prepared tray and flatten it slightly into a thick disc using your palm. Use a sharp knife to cut a very deep cross into the top, then scatter with the remaining cheese and a small handful of oats. Bake for 35-45 mins until deeply browned and the loaf sounds hollow when tapped on the bottom. Leave to cool on a wire rack before slicing and serving.

  • Heat oven to 200°C/180°C fan/gas 6. In a large frying pan, heat a large glug of oil and add the onions. Fry for 30 minutes on a low-medium heat, stirring now and then, until soft and lightly caramelised. Add the sugar and cook for 10 minutes. Turn off the heat and cool for 5 minutes.
  • Stir the still-warm onions into the yogurt and add a squeeze of lemon. Using a wooden spoon, stir the yogurt mixture into the flour/oats, then bring the dough together with your hands.
  • Shape into a round loaf, then slice a cross on top of the dough using a sharp knife. Sprinkle a few oats on top, then bake in the oven for 45 minutes. Remove from the oven and top with the remaining cheese, then bake for 15 minutes more until the cheese is golden and melted. You might need to cover the loaf for the last 5 minutes. Cool on a wire rack. Serve with butter and salt.

  • Sift the flour, bicarbonate of soda and salt into a mixing bowl, and add a couple of grindings of black pepper. Stir in most of the spring onions and cheese, keeping a little back for the top of the loaf.
  • Make a well in the centre and add enough buttermilk to bring together into a clean ball. Add a little extra milk if needed.
  • Shape into an 18cm round and put on the prepared tray. Mark the loaf into quarters, cutting almost all the way through. Brush with a little milk, then scatter the remaining spring onions and cheese on top. Bake for 35-40 minutes until the loaf is crisp and sounds hollow. Cool for at least 30 minutes on a wire rack before eating.
