CHEDDAR AND BACON PINWHEELS



Cheddar and Bacon Pinwheels image

Number Of Ingredients 8

8 slices bacon
6 ounces cream cheese, at room temperature
6 scallions, green part only, thinly sliced
Kosher salt and freshly ground black pepper
2 sheets frozen puff pastry (from a 17.3-ounce package), thawed
All-purpose flour, for dusting
4 ounces Cheddar, grated
1 large egg

Steps:

  • Preheat the oven to 375 degrees F. Line 2 baking sheets with parchment paper.
  • Cook the bacon in a large skillet over medium-high heat until crispy, 5 to 8 minutes. Remove to a paper towel-lined plate to drain and allow to cool slightly, then finely chop. Set aside.
  • In a small bowl, stir together the cream cheese and scallions. Season with salt and pepper.
  • Unfold the pastry sheets on a lightly floured work surface. Lightly roll each piece of pastry into a 10-inch square. Spread the cream cheese mixture over the entire surface of each piece of pastry, leaving a slight border around the edges. Sprinkle the Cheddar and bacon in an even layer over the top of the cream cheese mixture. Tightly roll each pastry sheet into a log (jelly roll style), then pinch the seam closed and place seam-side down on the work surface.
  • Using a sharp knife, cut both logs crosswise into 12 pinwheels each, approximately 1 inch thick. Transfer 12 pinwheels to each prepared baking sheet, spiral-side up. In a small bowl, whisk the egg and 1 tablespoon water until combined to make an egg wash. Brush the tops and sides of the pinwheels with the egg wash.
  • Bake the pinwheels until puffed and golden, 25 to 30 minutes. Serve warm.

TRIPLE-CHEESE SPIRALS



Triple-Cheese Spirals image

Kosher salt
12 ounces gemelli, cavatappi or other spiral-shaped pasta
3 tablespoons unsalted butter
1 tablespoon all-purpose flour
1 teaspoon dry mustard
Pinch of cayenne pepper
1 (12-ounce) can evaporated milk
1/2 cup whole milk
3/4 cup shredded yellow sharp cheddar cheese
3/4 cup shredded monterey jack cheese
1/2 cup grated parmesan cheese
1/2 cup panko (Japanese breadcrumbs)
2 tablespoons chopped fresh parsley, chives and/or scallions

Steps:

  • Bring a pot of salted water to a boil; add the pasta and cook until al dente, about 8 minutes. Meanwhile, melt 1 tablespoon butter in a saucepan over medium heat. Add the flour, mustard and cayenne and stir with a wooden spoon to make a paste. Cook, stirring, until the paste puffs slightly, about 1 minute. Whisk in both milks and 1/2 teaspoon salt and simmer, whisking occasionally, until slightly thickened and creamy, 6 to 7 minutes. Add the cheddar and jack cheeses and all but 2 tablespoons of the parmesan and whisk until melted; keep warm. Combine the panko, herbs and/or scallions, 1 tablespoon butter and the remaining parmesan in a microwave-safe bowl and microwave until the butter melts, about 1 minute; toss. Drain the pasta, reserving about 1 cup cooking water, and return to the pot. Toss with the remaining 1 tablespoon butter, then stir in the cheese sauce, adding the reserved cooking water if needed. Season with salt and top with the breadcrumb mixture.

3-1/2 cups uncooked spiral pasta
4 tablespoons butter, divided
3 tablespoons all-purpose flour
3 cups 2% milk
2-1/2 cups shredded cheddar cheese, divided
3/4 cup grated Parmesan cheese, divided
1/2 teaspoon salt
1/2 teaspoon pepper
1/2 cup dry bread crumbs

Steps:

  • Cook pasta according to package directions. Meanwhile, in a Dutch oven, melt 3 tablespoons butter. Stir in flour until smooth; gradually add milk. Bring to a boil; cook and stir for 2 minutes or until thickened. Add 2 cups cheddar cheese, 1/2 cup Parmesan cheese, salt and pepper., Drain pasta. Add to cheese mixture; toss gently to coat. Transfer to a greased 11x7-in. baking dish. Melt remaining butter; add bread crumbs and remaining cheddar and Parmesan cheeses. Sprinkle over top. Bake, uncovered, at 400° for 20-25 minutes or until golden brown.

2 tablespoons bread flour, plus 2 teaspoon
½ cup whole milk
2 ½ cups bread flour, plus more for dusting
¼ cup granulated sugar
1 teaspoon kosher salt
2 ¼ teaspoons instant yeast
½ cup whole milk
1 tablespoon milk powder
2 large eggs, divided
3 tablespoons unsalted butter, softened
nonstick cooking spray, for greasing
1 cup shredded Cabot Vermont Sharp Cheddar Cheese
1 cup shredded Cabot New York Extra Sharp Cheddar Cheese
1 tablespoon coarse sea salt
1 loaf pan, 9x5 in (22x12 cm)

Steps:

  • Make the roux: In a small saucepan, whisk together the bread flour and milk. Cook over medium-low heat, stirring constantly with a wooden spoon to prevent the mixture from burning, until it begins to thicken into a paste and creates streaks across the bottom of the pot, about 5 minutes. Transfer the roux to a medium bowl and cover with plastic wrap, pressing directly against the surface. Let cool to room temperature, about 30 minutes.
  • Make the dough: In a medium bowl, whisk together the flour, sugar, kosher salt, and yeast.
  • In a large bowl, whisk together the milk, milk powder, 1 egg, and the roux.
  • Using a wooden spoon, stir the dry ingredients into the wet ingredients until the dough begins to come together in shaggy mass. Add the butter and knead with your hands until the dough is smooth and elastic, about 10 minutes.
  • Shape the dough into a ball. Place in a large bowl greased with nonstick spray and cover loosely with plastic wrap. Let proof until doubled in size, about 1 hour.
  • Preheat the oven to 350°F (180°C). Grease a 9x5-inch loaf pan with nonstick spray.
  • Punch down the dough, then turn out onto a floured surface. Roll the dough into a 9x9-inch square.
  • Sprinkle the Cabot Vermont Sharp Cheddar Cheese and Cabot New York Extra Sharp Cheddar Cheese evenly across the dough. Starting from a long end, roll the dough up, and place seam-side down on the surface. Using a sharp knife, slice the roll in half lengthwise to expose the filling. Twist the halves together into a braid.
  • Place the loaf in the prepared pan and cover loosely with plastic wrap. Let proof until doubled in size, about 1 hour.
  • Beat the remaining egg, then brush over the loaf. Sprinkle the sea salt on top.
  • Bake the bread until the cheese is bubbly and the top is deep golden brown, about 30 minutes. Let cool slightly, about 15 minutes, then slice.
  • Enjoy!

STUFFED CHEESE SPIRALS



Stuffed Cheese Spirals image

A quick appetizer using prepared dough and melted cheese. This would be equally good with a little crisp bacon inside!

1 (8 ounce) package refrigerated crescent rolls
1 tablespoon melted butter, or to taste
¼ cup shredded sharp Cheddar cheese
2 green onions, finely chopped
1 pinch garlic powder, or to taste

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Spray a baking sheet with cooking spray.
  • Unroll crescent roll dough on the prepared baking sheet. Spread butter over dough and sprinkle with Cheddar cheese and green onion. Season with garlic powder.
  • Roll dough back to its original shape. Cut dough with a sharp knife into 8 even slices. Arrange slices cut-side up on the baking sheet about 1 inch apart.
  • Bake in the preheated oven until golden brown, 9 to 12 minutes.
