This apple walnut salad delivers sweet and tangy flavor to simple salad greens with a quick apple cider vinaigrette, cranberries and Gorgonzola cheese. -Taste of Home Test Kitchen, Milwaukee, Wisconsin

5 cups torn romaine
5 cups torn red leaf lettuce
1 large red apple, chopped
1 large green apple, chopped
1 cup (4 ounces) crumbled Gorgonzola cheese
1/2 cup chopped walnuts, toasted
1/3 cup thinly sliced red onion
1/3 cup dried cranberries
CIDER VINAIGRETTE:
3/4 cup apple cider or juice
3 tablespoons cider vinegar
2 teaspoons honey
1/4 teaspoon salt
1/4 teaspoon pepper
1/4 cup walnut oil or canola oil

Steps:

  • In a salad bowl, combine the first eight ingredients., In a small bowl, whisk the cider, vinegar, honey, salt and pepper; gradually whisk in oil. Drizzle over salad; toss to coat. Serve immediately.

10 cups torn mixed salad greens
1 cup chopped red apple
1 cup cubed cheddar cheese
1 cup chopped walnuts, toasted
HONEY DRESSING:
2/3 cup honey
2 tablespoons cider vinegar
1 teaspoon celery seed
1 teaspoon ground mustard
1 teaspoon paprika
1 teaspoon lemon juice
1 teaspoon grated onion
1/4 teaspoon salt
1 cup canola oil

Steps:

  • In a large salad bowl, combine the greens, apple, cheese and walnuts; set aside. , In a blender, combine the first eight dressing ingredients. While processing, gradually add oil in a steady stream. Serve with salad.

1 tablespoon(s) finely chopped chives
1 tablespoon(s) fresh parsley chopped
juice of 1/2 lime
1 teaspoon(s) curry powder
1 clove(s) garlic minced
1 tablespoon(s) honey
salt and pepper
SALAD
4 cup(s) baby salad greens
8 ounce(s) cheddar cheese cut into small cubes
2 fuji apples sliced into strips
2 teaspoon(s) lemon juice
1/2 cup(s) walnutss chopped
1/4 cup(s) dried cranberries
1 bunch(es) scallions finely sliced

Steps:

  • In a small bowl whisk all the dressing ingredients together and set aside.
  • In four plates arrange the baby salad greens. Top with cheese, Toss the apple slices with lemon juice.Then arrange them on the plate
  • Top with walnuts, cranberries, and scallions. Drizzle the dressing and serve
