Deep-frying with a difference, try this super easy method for crisp, chunky chips - you'll never look back

450g Maris Piper potatoes , cut into chunky chips
sunflower oil , for frying (about 300ml/1/2pt)
flaky sea salt

Steps:

  • To cook the chips, put them in a sturdy saucepan that holds them in a double layer and still has plenty of space above them. Pour over enough cold oil to cover them by about 2cm. Put the pan on a high heat and bring the oil to the boil, stirring the chips with a wooden spoon occasionally so they don't stick.
  • After about 20 mins the oil will clear and the chips will look like they are frying. Keep an eye on them, stirring with the spoon occasionally until golden and crisp. Scoop them out with a slotted spoon into a dish lined with kitchen paper, and season with flaky sea salt. Serve with the steak.

Crispy beer battered langoustine or prawn tails with a mayo-based dip of gherkins, capers and herbs

15-20 langoustine or Dublin Bay prawn tails
vegetable or sunflower oil , for frying
140g plain flour
85g cornflour
150ml beer
100ml sparkling water
lemon wedges and chips , to serve
6 tbsp mayonnaise
1 gherkin or 6 cornichons, finely chopped
1 tbsp caper , rinsed and chopped
1 tsp lemon juice
1 tbsp chopped parsley
2 tsp chopped tarragon

Steps:

  • To prepare the langoustines, pull off the head and pincers. Lay the tail flat on a chopping board and use a sharp pair of scissors to cut a line straight down the back of the shell. Carefully peel the langoustine, score down the back, then remove the grit sac.
  • Get the oil heating in a large saucepan or wok - you will need enough to come 2-3in up the side of the pan. For the tartare sauce, mix all ingredients in a bowl and season.
  • Place the flours in a bowl with a good pinch of salt and pepper. Add the beer and sparkling water, and whisk to a smooth batter.
  • To test if the oil is hot enough, put a drop of batter into the pan - it should crisp and brown within 30 secs. Dip each langoustine or prawn tail into the batter, then carefully drop it into the oil. Drizzle a little extra batter over each one while they are cooking - this will give you a really crispy coating. Cook them in batches, making sure you don't overcrowd the pan. When golden and floating to the surface, scoop out and drain well on kitchen paper. Sprinkle the scampi with salt and serve with the tartare sauce, lemon wedges and chips.

  • Preheat the oven to 220°C/fan200°C/gas 7. Put the chips in a large pan, cover with cold water and add 1 tsp salt. Bring to the boil, then cook for 5 minutes. Meanwhile, drizzle 2 tbsp of the olive oil over a large shallow roasting tray and place in the oven to heat through. Drain the potatoes well, then add to the hot oil, turning to coat. Sprinkle with lots of sea salt and return to the oven for 30-40 minutes until golden and crisp. Toss occasionally and drizzle with extra oil if needed.
  • For the tartare sauce, place the egg yolk in the small bowl of a food processor with the mustard powder, half the lemon juice and some seasoning. Pulse to mix, then add the oil really slowly, drop by drop at first, until the mixture begins to emulsify and you have a lovely thick mayonnaise. Add the remaining lemon juice and taste to see if it needs more seasoning. Scrape into a bowl and stir through the chopped capers, gherkins, parsley and shallot. Taste again and add more of any of the flavourings if you need to.
  • Wash and pat the langoustine tails dry. Put the flour in a bowl, season with salt, black pepper and cayenne pepper, and stir to mix. Crack the egg into a second bowl and lightly whisk. Put the breadcrumbs in a third bowl.
  • Taking each langoustine, dust in the flour, dip to coat in the egg, then roll in the breadcrumbs. Place the coated langoustine tails on a plate lined with baking paper.

  • Bring a pan of salted water to the boil and add the chips. Parboil for 4 minutes, then drain and refresh under cold water. Pat the potatoes dry and spread out on the hot roasting tray. Season with plenty of sea salt, shake to coat in the oil and transfer to the oven. Bake for 25-30 minutes until crisp, golden and fluffy in the middle.
  • Meanwhile, heat a large saucepan of sunflower oil for deep-frying until the oil reaches 180°C (a cube of bread dropped into it will turn golden in 30 seconds). Pat the prawns dry with kitchen paper and dust with the flour, then dip the prawns into a bowl containing the eggs, followed by the breadcrumbs.
  • Carefully lower the prawns into the hot oil with a slotted spoon (don’t overcrowd the pan – you may need to do this in batches). Deep-fry for 2-3 minutes until golden and crisp, then remove from the pan using a slotted spoon and drain on kitchen paper. Serve with the chips, lemon wedges and plenty of ketchup.
