Chayote Squash Side Dish image

A simple and elegant, EASY side dish made from an exotic, but inexpensive squash. Paired with chicken or fish, it rounds out a weeknight supper.

1 tablespoon olive oil
1 clove garlic, minced
1 chayote squash, cut into 1/2-inch strips
½ teaspoon salt
ground black pepper to taste
½ teaspoon white sugar
¼ teaspoon red pepper flakes
1 tablespoon red wine vinegar

Steps:

  • Heat olive oil in medium skillet over medium-high heat. When oil is hot, add garlic, squash, salt, pepper, sugar, and red pepper flakes. Stir together and cook 2 to 3 minutes.
  • Add vinegar to the squash mixture and cook 2 to 3 minutes longer, until the squash is slightly wilted, but still firm and crunchy. Taste, and add more salt or sugar if needed.

cooking spray
4 teaspoons pumpkin seeds
1/2 cup finely chopped onion
2 garlic cloves, minced
2 chayotes, peeled and cubed
salt and pepper

Steps:

  • Spray small skillet with cooking spray. Heat over medium until hot.
  • Cook pumpkin seeds until they are toasted and begin to pop, 3-5 minutes. Set aside.
  • Spray large skillet with cooking spray and saute onions and garlic until tender, 3-5 minutes.
  • Add squash and cook over medium until squash is crisp-tender, about 20 minutes, stirring occasionally.
  • Season to taste with salt and pepper.
  • Spoon squash into serving bowl. Sprinkle with reserved pumpkin seeds.
