CHARRED EGGPLANT SOUP

Charred Eggplant Soup image

Provided by Cat Cora

Time 1h25m

Yield 4-6 servings

Number Of Ingredients 13

2 tablespoons extra-virgin olive oil, plus more for brushing
2 large eggplants, quartered lengthwise
Kosher salt
2 large tomatoes, quartered
1 medium onion, sliced 1/2 inch thick
6 cloves garlic
Freshly ground pepper
5 cups chicken stock, plus more if needed
1 tablespoon chopped fresh thyme
1 tablespoon chopped fresh cilantro
Espelette chile powder, to taste
Fennel fronds, for garnish
Vanilla-Curry Cotton Candy, for serving

Steps:

  • Preheat the oven to 450 degrees F. Brush 2 rimmed baking sheets with olive oil. Put the eggplants, flesh-side down, on one of the baking sheets, drizzle with 1 tablespoon olive oil and season with salt. Toss the tomatoes, onion and garlic with the remaining 1 tablespoon olive oil on the other baking sheet (don't crowd the pans or the vegetables will steam). Season with salt and pepper. Roast the vegetables until tender and browned in spots, about 45 minutes, rotating the baking sheets halfway through.
  • Scoop the eggplant flesh from the skin into a saucepan, discarding any excess seeds. Add the remaining roasted vegetables, the chicken stock, thyme and cilantro and bring to a boil over medium-high heat. Reduce the heat to low and simmer about 20 minutes. Cool slightly.
  • Puree the soup in a blender (in batches if necessary) until smooth. Return the soup to the saucepan and thin with more stock, if needed. Season with salt, pepper and chile powder. Ladle into bowls and garnish with fennel fronds; slide the cotton candy into the soup to serve.

SMOKY EGGPLANT SOUP

Smoky Eggplant Soup image

I am a fan of eggplant soup, and this one is a winner, creamy-textured and bright tasting. Charring the eggplant gives it a smoky flavor, but as opposed to some rustic versions, the soup has a smooth texture and a lovely pale color. It gets a good squeeze of lemon juice, a drizzle of olive oil and a sprinkling of the Middle Eastern spice mixture za'atar, made with wild thyme and sesame, now widely available. Make sure to choose small, firm eggplants. Serve the soup chilled or hot, in small portions.

Time 30m

Yield About 6 cups

Number Of Ingredients 11

2 pounds small firm eggplants
5 tablespoons olive oil
2 cups sliced white or yellow onion
Salt and pepper
6 garlic cloves, minced
Pinch cayenne
6 cups chicken broth or mild vegetable broth
3 to 4 tablespoons lemon juice
1/2 teaspoon lemon zest
1 tablespoon za'atar, available in Middle Eastern groceries
2 teaspoons chopped parsley

Steps:

  • Poke 2 or 3 holes in eggplants with a paring knife, then place on a baking sheet under hot broiler, about 2 inches from flame. Cook for 3 or 4 minutes, allowing skins to blacken and char. Turn and cook on other side until eggplants have softened completely, about 4 minutes more. Set aside to cool, then remove and discard skins and roughly chop eggplant flesh.
  • Meanwhile, put 3 tablespoons olive oil in a heavy-bottomed stainless or enameled soup pot over medium-high heat. Add onion, season generously with salt and pepper, and cook until softened and beginning to color, 5 to 7 minutes. Add garlic, cayenne and reserved eggplant and cook 1 minute more, then add broth and bring to a brisk simmer. Reduce heat and simmer gently for 10 minutes. Check seasoning of broth and adjust salt.
  • Purée soup in batches in blender. Strain through fine-meshed sieve and discard solid debris and seeds. Add 3 tablespoons lemon juice to puréed soup and taste again, adding more as necessary. Soup should be well seasoned and rather lemony.
  • Mix lemon zest with remaining 2 tablespoons olive oil for garnish. Ladle soup into small bowls, topping each bowl with 1 teaspoon lemon oil, 1/2 teaspoon za'atar and some chopped parsley. May be served hot or cold.

CHARRED EGGPLANT WITH BURRATA AND FRIED CAPERS

Charred Eggplant With Burrata and Fried Capers image

When summer cooking feels like too much, the simple formula of grilled vegetables served with an herby dressing and a ball of burrata will get you through the season. Here, grilled or seared eggplant is bathed in an herbaceous, lemony caper-infused olive oil for a light dinner or side dish. Salt-packed capers work best, as they are generally larger and have a petal-like shape that opens up when fried, resulting in a crisp shell that is crunchy and salty (but, brined capers work, too). Make sure to dry the capers well before frying to prevent aggressive spitting when they hit hot oil. Fried capers are highly snackable, so consider making a double batch. Serve with bread, flatbread or, for something heartier, pasta.

Time 20m

Yield 4 servings

Number Of Ingredients 9

Extra-virgin olive oil
1/4 cup salt-packed or brined capers, rinsed
1 1/2 to 2 pounds eggplant (about 2 medium or large), trimmed and sliced into ½-inch disks
1 large handful of parsley, basil or a combination, finely chopped, plus more to serve
2 garlic cloves, grated
1 teaspoon red-pepper flakes
Zest and juice of 1 lemon
Kosher salt (such as Diamond Crystal) and black pepper
2 balls burrata (about 1 pound), at room temperature

Steps:

  • In a small saucepan or skillet, heat ¼ cup olive oil over medium-high until it shimmers, about 1 minute. Meanwhile, dry the capers very well by wrapping them in paper towels or a clean dish towel and wringing out the moisture. (If there is too much moisture, the oil will sputter aggressively.) Line a plate or tray with paper towels or a clean dish towel.
  • When the oil is ready, carefully drop the capers in and fry for 2 to 3 minutes, until golden. (Watch closely, as smaller capers will cook more quickly.) Remove the capers from the oil with a slotted spoon and drain on the lined plate. They will crisp up further as they cool.
  • Transfer the caper-infused oil to a large heatproof bowl and set aside to cool for a few minutes.
  • Lay the disks of eggplant on a large cutting board or sheet pan and drizzle with olive oil, flip over and drizzle the other side. Heat a large (12-inch) grill pan or cast-iron skillet on medium-high. (See Tip for grilling instructions.) When hot, working in batches, add the eggplant disks in a single layer and cook for 2 minutes, pressing the eggplant into the pan to encourage browning. Flip, reduce heat to medium and cook on the other side for another 2 to 3 minutes, until completely tender. (The eggplant continues to soften as it soaks up the marinade in the next step, so don't be tempted to overcook.) Remove the eggplant from the pan and place them back on the cutting board or plate. Continue cooking the remaining eggplant.
  • Meanwhile, to the bowl with the cooled caper-infused oil, add the herbs, garlic, red-pepper flakes, lemon zest and juice, ½ teaspoon of kosher salt and a few pinches of black pepper. Toss to combine and taste, making sure it has enough salt. Add the warm eggplant slices to the oil and gently toss to coat. Allow to marinate for at least 5 minutes (see Tip).
  • Serve this on one large platter or as four separate servings. Place the burrata (for single servings, halve each ball of burrata) on the plate along with the eggplant and top with any remaining marinade and the fried capers, and scatter with fresh herbs.

CHARRED EGGPLANT SOUP WITH A RED PEPPER SWIRL

Charred Eggplant Soup with a Red Pepper Swirl image

It is easiest to char the eggplants on the stovetop griddle, but you can also roast the eggplants in a high-heated oven until they are fork-tender. Charring them gives the soup a deeper smoky flavor.

Provided by Martha Stewart

Categories     Soup Recipes

Number Of Ingredients 12

2 medium-size eggplants
2 medium-size onions, sliced
4 garlic cloves, minced
2 teaspoons extra-virgin olive oil
4 cups Chicken Stock to Make 1 1/2 Quarts, or low-sodium canned
1/4 teaspoon herbes de Provence
1 bay leaf
Kosher salt and freshly ground black pepper
2 teaspoons fresh lemon juice
1/2 cup buttermilk
1/2 cup Red Pepper Coulis
1 tablespoon chopped flat-leaf parsley

Steps:

  • Preheat a cast-iron griddle or skillet over medium-high heat. Place the eggplants on the griddle and char them well, turning from time to time, until the outer skin is burnt and peeling and the inside is very soft, about 15 minutes.
  • Transfer to a bowl and let cool. Trim away the skin and discard. On a parchment-lined cutting board, chop the eggplant and set aside, along with any juice that has accumulated on the parchment.
  • Meanwhile, combine the onions, garlic, and olive oil in a 3-quart saucepan over medium heat for 5 to 10 minutes, or until they are soft and translucent. Add the chicken stock, herbes de Provence, and bay leaf and bring to a boil. Reduce the heat and simmer for 15 minutes.
  • Season with salt, pepper, and lemon juice. Remove the bay leaf, add the eggplant, and puree the soup in a blender or food processor. Stir in the buttermilk.
  • Ladle into soup bowls and swirl in the Red Pepper Coulis. Garnish with the parsley and serve.

Estimated Reading Time 3 mins
  • Blend it into soup. The scooped-out flesh of a charred eggplant is a great base for a simple puréed soup. Add it to a pot with a little sautéed garlic or chopped onions along with some vegetable or chicken broth, bring it to a simmer, and blend it until smooth.
  • Purée it into a creamy dip. The classic way to used charred eggplant is to mash it or purée it into a dip. Middle Eastern baba ghanoush is made with the creamy eggplant flesh and tahini to make one glorious dip.
  • Enjoy it simply as is. The flesh of a charred eggplant is so custardy and rich, you honestly don’t need to do much with it at all. Don’t hesitate to simply scoop it out and enjoy with nothing more than a drizzle of olive oil and a sprinkling of salt and pepper, either on top of a salad or all on its own.
  • Pile it into a sandwich. You can also scoop that flesh out and spread it on good bread as the base for a killer sandwich. Top it with a handful of peppery arugula for crunch, or use it to enhance a caprese sandwich.
  • Toss it with pasta. The eggplant’s innards get all sweet and smoky when charred, so they’re complex enough to be used as a pasta sauce without really anything else.
