PORTUGUESE DRESSING



Portuguese Dressing image

With beef and smoked sausage, this meaty dressing is different from many other dressing and stuffing recipes. It's delicious alongside roasted chicken or turkey for holidays or any occasion. I like to use chourico, a Portuguese specialty sausage that's popular in our area.

1 pound ground beef
1 medium onion, chopped
1/2 pound smoked sausage, chopped
2 teaspoons poultry seasoning
1/2 teaspoon garlic powder
1/8 teaspoon ground allspice
1 package (12 ounces) unseasoned stuffing cubes
1 can (14-1/2 ounces) chicken broth
1 egg, lightly beaten
1/4 cup minced fresh parsley
2 tablespoons butter, melted

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Transfer to a large bowl. In the same skillet, saute the sausage, poultry seasoning, garlic powder and allspice for 2 minutes., Add the sausage mixture, stuffing cubes, broth, egg and parsley to the beef mixture; mix well. Transfer to a greased 3-qt. baking dish. Drizzle with butter. , Cover and bake at 325° for 45 minutes. Uncover; bake 10-15 minutes longer or until lightly browned and a thermometer reads 160°.

This recipe was given to me by my cousin, Charlene who was happy to share her mom's recipe. It is delicious and compliments any poultry dinner. We usually make this at Thanksgiving. Since it is spicy, we cook this in a casserole dish alongside the turkey.

2 lb ground chourico
1 medium onion, chopped
2-3 stuffing breads (white)
1 egg
1 Tbsp white vinegar
1-2 Tbsp crushed red pepper (liquid, sold in jars) or to taste
salt and pepper, to taste
1 Tbsp olive oil

Steps:

  • 1. Fry the chourico with a little olive oil. Chop onion up (fine) and add to chourico. Drain pan of excess grease. Soak breads in water till soft then pull the crust off of them. Now add the bread to chourico and onion. Add 1 raw egg, crushed pepper, vinegar and salt and pepper. Keep stirring till well blended. Then either put stuffing in the turkey or as I do, bake it in a casserole dish separately from the bird. Enjoy!!!

20 fresh large quahog clams (about 10 pounds)
1 pound hot chourico or linguica (smoked Portuguese sausage) or fully cooked Spanish chorizo
1 large onion, chopped (about 2 cups)
3 teaspoons seafood seasoning
1 package (14 ounces) herb stuffing cubes
1 cup water
Optional: Lemon wedges and hot pepper sauce

Steps:

  • Add 2 in. water to a stockpot. Add clams and chourico; bring to a boil. Cover and steam 15-20 minutes or until clams open., Remove clams and sausage from pot, reserving 2 cups cooking liquid; cool slightly. Discard any unopened clams., Preheat oven to 350°. Remove clam meat from shells. Separate shells; reserve 30 half-shells for stuffing. Place clam meat in a food processor; process until finely chopped. Transfer to a large bowl., Remove casings from sausage; cut sausage into 1-1/2-in. pieces. Place in a food processor; process until finely chopped. Add sausage, onion and seafood seasoning to chopped clams. Stir in stuffing cubes. Add reserved cooking liquid and enough water to reach desired moistness, about 1 cup., Spoon clam mixture into reserved shells. Place in 15x10x1-in. baking pans. Bake until heated through, 15-20 minutes. Preheat broiler., Broil clams 4-6 in. from heat 4-5 minutes or until golden brown. If desired, serve with lemon wedges and pepper sauce. Freeze option: Cover and freeze unbaked stuffed clams in a 15x10x1-in. baking pan until firm. Transfer to freezer containers; return to freezer. To use, place 3 stuffed clams on a microwave-safe plate. Cover with a paper towel; microwave on high until heated through, 3-4 minutes. Serve as directed.

Emeril Lagasse's Mom's recipe for stuffing (or dressing). It's like a savory bread pudding and would make a fabulous side dish. If you can't find the Portuguese sausage, go ahead and sub in chorizo.

12-14 cup(s) 1/2-inch cubes of day-old hearty bread
4 cup(s) whole milk
4 tablespoon(s) olive oil, extra virgin
1/4 pound(s) ground beef
1 pound(s) chourico sausage (or chorizo), coarsely chopped
1 1/2 cup(s) onions, chopped
1 cup(s) green bell peppers, chopped
1/2 cup(s) celery, chopped
1 - bay leaf
1 teaspoon(s) salt
1 teaspoon(s) crushed red pepper
1/2 teaspoon(s) freshly ground black pepper
1 tablespoon(s) garlic, minced
2 large eggs, lightly beaten
1/4 cup(s) fresh parsley, chopped

Steps:

  • Preheat oven to 350 degrees F. Put the bread into a large bowl and add the milk. Press the bread into the milk and let it stand until the milk is absorbed and the bread is soft, approx. 15 minutes.
  • Heat 3 T olive oil in a large skillet, over med-high heat. Add the ground beef and cook, while stirring, until it's lightly browned, approx. 1 minute. Add the sausage and cook, while stirring, until browned, approx. 3 minutes. Add onions, bell peppers, celery and the bay leaf. Season with salt, crushed red pepper, and black pepper. Cook, while stirring occasionally, until the veggies are slightly softened, approx. 4 minutes. Add garlic and cook, stirring, until it is fragrant, approx. 30 seconds.
  • Add the meat mixture to the bread mixture and stir it together so it's mixed well. Add the eggs and parsley. Stir to blend. Remove the bay leaf and discard.
  • Grease a 9 x 13 inch baking dish, with the remaining tablespoon of oil. Pour the mixture into the pan and sread it evenly with a rubber spatula. Bake this until it gets bubbly and golden brown, approx. 1 hour. Remove it from the oven and serve warm.

1 (10 kg) whole turkey, thawed
4 garlic cloves, minced
3/4 cup dry red wine
2 cups water
4 tablespoons paprika
1/2 teaspoon ground black pepper
2 tablespoons salt
1 teaspoon ground cumin
1 pinch cinnamon
1/2 lemon, juice of
paprika, for sprinkling
olive oil
6 tablespoons butter
3 tablespoons ketchup
1 large onion, quartered
5 lbs potatoes, peeled & halved
2 carrots, peeled & cut into chuncks
10 sprigs parsley, chopped
6 sprigs green onions, chopped
1/2 lemon, juice of
2 (300 g) containers plain breadcrumbs
1 stale italian bun, cut into small pieces
2 tablespoons oil
3 garlic cloves, finely minced
2 tablespoons ketchup
2 tablespoons red pepper paste
3 tablespoons paprika
1 teaspoon ground cumin
1/4 teaspoon black pepper
5 dashes piri-piri, sauce (or to taste) or 5 dashes hot sauce (or to taste)
1/2 teaspoon salt
4 cups boiling water (more if required)

Steps:

  • Combine the first 8 ingredients of the marindate then place the thawed turkey in the marinade. Rub the turkey with the marinade, then put some of it inside the turkey. Marinade for 24 hours in the roasting pan in the fridge, turning it over every couple of hours.
  • Remove the turkey from the fridge 2 hours prior to cooking. Preheat the oven to 400°F.
  • Stuff the turkey with the stuffing. If there is too much, place the balance of the stuffing in a pouch made of a double layer of foil, seal then place in the roasting plan.
  • Pour the lemon juice over the turkey, sprinkle with paprika, dot with butter and a drizzle of oil. To the marinade, add the onion and ketchup.
  • Roast approximately 1/2 hour uncovered, then reduce to 325F and cook for 1 hour uncovered. Baste then cover with lid. After 3 hours in the oven, add the potatoes and carrots to the pan, basting with the sauce . Cover the turkey and continue basting throughout the roasting process. (15 min cooking time per lb of turkey to165 F). Allow turkey to rest 20 minutes prior to carving.
  • Stuffing: Combine all off the ingredients together then add the boiling water to attain a thick consistency. Once cool enough to handle, mix well using your hands. Add more bread crumbs if too soft and water if too hard then taste and adjust for seasoning. *Stuffing can be made a day ahead and stored in the refrigerator in an air tight container.
