Number Of Ingredients 19

5 cloves garlic, sliced
2 tablespoons olive oil
1 medium yellow onion, sliced
1/2 cup sliced scallions
4 cups chicken broth
2 medium red-skinned potatoes, quartered
1 large or 2 small sweet potatoes, peeled and cubed
1 pound cassava (yuca), peeled and cubed
2 ripe plantains, peeled and quartered
2 ears sweet corn, cut into thirds
Two 13 1/2-ounce cans coconut milk
3 tablespoons adobo
1 tablespoon chile powder, such as cayenne, or to taste
1 teaspoon ground black pepper
3 sprigs fresh thyme
2 tablespoons cilantro
Salt
4 large eggs
5 ounces okra, trimmed

Steps:

  • Place the garlic and oil in a medium pot and cook, stirring, over medium heat until the garlic begins to turn golden. Add the onion and scallions to the pot and cook for 2 minutes. Add the chicken broth and 2 cups water and bring to a boil.
  • Add the red-skinned and sweet potatoes. Cover and boil for 5 minutes. Add the cassava, plantains and corn; cover and bring to a boil. Once boiling, add the coconut milk, adobo, chile powder, black pepper, thyme, cilantro and salt to taste. Simmer over medium heat until the corn is cooked, 20 to 25 minutes.
  • Gently place the eggs in the shell into the pot, cover and simmer for 6 minutes. Remove the eggs and place in a bowl of room-temperature water to cool slightly. Sprinkle the okra on top of the stew, cover the pot and reduce the heat to low. Peel the eggs while still warm. Add the peeled eggs back to the pot. Discard the thyme sprigs. Serve the stew hot.

1 cup butter, softened
1-1/2 cups sugar
1 tablespoon lemon juice
2 eggs
3-1/2 cups all-purpose flour
1-1/2 teaspoons cream of tartar
1-1/2 teaspoons baking soda
1 package (15 ounces) golden raisins (2-1/2 cups)

Steps:

  • In a bowl, cream butter and sugar. Add lemon juice and eggs. Combine dry ingredients; gradually add to creamed mixture. Stir in raisins. Roll into 1-in. balls. , Place on greased baking sheets; flatten with a floured fork. Bake at 400° for 8-10 minutes or until lightly browned.

1/2 cup olive oil
1 Spanish onion, small diced
3 cloves garlic, chopped
2 bunches collard greens, washed, and cut in 1/2-inch strips
1 cup golden raisins
1/2 cup slivered almonds, toasted
Kosher salt
Freshly ground black pepper

Steps:

  • Heat an 8-quart saucepan over high heat. When very hot, add the oil, onions, and garlic, sauteing quickly for 1 minute. When the onions just start to turn golden, add the collard greens, raisins, and almonds. Season with salt and pepper, and add a little water if necessary, for a little steam. Saute for about 5 to 6 minutes more, and adjust seasoning, to taste.

Golden Raisin-Fennel Semolina Soda Bread with Buttermilk-Orange Butter image

3/4 cup golden raisins
2 3/4 cups all-purpose flour
3/4 cup cake flour
1/2 cup semolina flour
1 1/2 teaspoons baking soda
1 1/2 teaspoons cream of tartar
1/8 teaspoon fine sea salt
2 tablespoons sugar
3 tablespoons very cold unsalted butter, cut into small pieces, plus 2 tablespoons melted
1 tablespoon roasted, salted fennel seeds or regular fennel seeds
2 teaspoons finely grated orange zest
1 1/2 cups very cold buttermilk
1/2 cup cold buttermilk
2 teaspoons finely grated orange zest
2 sticks unsalted butter, slightly chilled
Pinch sea salt

Steps:

  • For the soda bread: Put the raisins in a bowl and cover with hot water. Set aside until softened, about 30 minutes. Drain and pat dry.
  • Preheat the oven to 375 degrees F.
  • Sift the all-purpose, cake and semolina flours, and the baking soda, cream of tartar and salt into a large bowl; stir in the sugar. Cut the 3 tablespoons butter into the flour until it resembles a coarse meal. Stir in the fennel seeds and the soaked raisins.
  • In a small bowl, stir the orange zest into the buttermilk, and then add to the flour mixture, stirring with a fork just until a dough comes together. Turn the dough onto a work surface and knead briefly until the loose flour is just moistened; the dough should look shaggy and uneven.
  • Form the dough into a 6-inch round and place in a 10-inch cast-iron skillet. Using a very sharp knife, score a deep cross into the top of the loaf. Bake until nicely browned and a skewer inserted into the center of the loaf comes out clean, 40 to 45 minutes. Remove from oven and brush with the 2 tablespoons melted butter. Cool for at least 30 minutes before slicing.
  • While the bread bakes, make the buttermilk-orange butter: Whisk together the buttermilk and orange zest in a small bowl. Put the butter and salt in a stand mixer fitted with the paddle attachment and beat until smooth. Slowly pour in the buttermilk mixture and continue beating until just incorporated. Spread into a ramekin, cover, and refrigerate for at least 1 hour and up to 24 hours to allow the flavors to meld.
  • Serve slices of warm or toasted semolina soda bread with the orange butter.

1 cup real maple syrup
4 star anise
3 whole cloves
1/2 orange, halved
1 cinnamon stick
4 ounces masa harina
1/4 cup fresh whole corn kernels
1 tablespoon pine nuts, toasted
4 tablespoons sultana raisins, softened in hot water
6 tablespoons grated asadero cheese
2 peeled bananas, cut in 1/2 lengthwise and then cut in chunks
6 banana leaves, cut to 8 by 10-inches

Steps:

  • In a large saucepan, slowly boil the syrup, star anise, cloves, orange and cinnamon stick. Simmer the mixture for 5 minutes. Strain the mixture into the masa harina, stir to incorporate and discard the strained spices and fruit.
  • Add the corn, pine nuts, sultana raisins, asadero cheese, and banana pieces to the masa mixture.
  • Preheat oven to 350 degrees F.
  • Thaw a package of banana leaves by placing the still sealed leaves in a shallow pan of hot water, until thawed. Open package and rinse leaves in cool water and then cut into 8-inch pieces. Assemble the tamales by placing 4 ounces of the mixture in the center of each banana leaf. And fold in sides to create a package. Place into the oven and bake for 20 minutes.

1 cup (150g) golden raisins
2 cups (250g) all-purpose flour
2 teaspoons (10g) baking powder
1/2 teaspoon (3g) sea salt
1 1/4 cups (250g) sugar
1 large egg
1/2 cup (120ml) canola oil
1/2 cup (120ml) sour cream
1/2 cup (120ml) heavy cream
1 teaspoon (5ml) pure vanilla extract
1 tablespoon (15ml) fresh orange zest
1 teaspoon (5ml) fresh lemon zest
1 cup (100g) fresh or frozen (thawed) cranberries

Steps:

  • Preheat the oven to 400 degrees F. Spray two 3/4- by 1 1/8-inch muffin trays with nonstick spray.
  • In a small bowl, add raisins and cover with warm water to slightly rehydrate. Set aside
  • In a large bowl, whisk together the dry ingredients (flour, baking powder, salt and sugar). In a medium bowl, whisk together wet ingredients (egg, canola oil, sour cream, heavy cream, vanilla extract, orange zest and lemon zest).
  • Mix together the wet and dry ingredients until evenly combined. Batter is almost too tender, so feel free to beat well. Drain water from raisins. Fold raisins and cranberries into the batter.
  • Spoon batter into muffin tins, almost to the top. Bake until risen and lightly browned, about 20 minutes.
  • Allow to cool in the muffin pans for 5 to 10 minutes. Using both hands on each muffin, loosen the tops of the muffins, then pop them out of the pans. Place on a cooling rack to finish cooling.
