You can use any tea and any fruit zest, lemon would taste great. You can use banana instead of orange or whatever fruit you like or none at all for a smoother consistency. See what flavor combinations you like. If you like very sweet foods you will want to add sugar or honey to taste.

1 black tea bag
1 cup boiling water
1 (.25 ounce) package unflavored gelatin
½ orange, zested
½ teaspoon ground cinnamon
½ teaspoon ground cardamom
2 teaspoons white sugar
½ teaspoon almond extract
⅛ teaspoon ground ginger
⅛ teaspoon ground cloves
1 teaspoon honey
1 orange, peeled and chopped

Steps:

  • Place tea bag into the boiling water. Steep to desired strength. Place gelatin in a bowl. Whisk the tea into the gelatin until dissolved. Stir in orange zest, cinnamon, cardamom, sugar, almond extract, ginger, cloves, and honey. Stir in diced orange. Cover and chill in the refrigerator until set, 2 to 3 hours.

4 whole cloves
2 whole peppercorns
4 tea bags
4 teaspoons sugar
1/4 teaspoon ground ginger
1 cinnamon stick (3 inches)
2-1/2 cups boiling water
2 cups 2% milk

Steps:

  • Place cloves and peppercorns in a large bowl; with the end of a wooden spoon handle, crush spices until aromas are released., Add the tea bags, sugar, ginger, cinnamon stick and boiling water. Cover and steep for 6 minutes. Meanwhile, in a small saucepan, heat the milk., Strain tea, discarding spices and tea bags. Stir in hot milk. Pour into mugs.

2 1/2 cups water
3 chai tea teabags
2 teaspoons sugar or 2 (1 g) packets Splenda sugar substitute
1 cup half-and-half cream or 1 cup milk
1 teaspoon vanilla extract
1 cup cold water
3 (2 ounce) packets knox unflavored gelatin
1 pinch allspice (if you want before it is whipped.The dessert is good either way.) or 1 pinch cinnamon (if you want before it is whipped.The dessert is good either way.)

Steps:

  • In medium saucepan add cold water and gelatin. Let it sit about 10 minutes.
  • In another saucepan add 2 1/2 cups water and 3 tea bags, heat to boil, then simmer until tea is strongly steeped. Squeeze the tea bags and remove.
  • Stir the gelatin and gradually add the half and half or milk.
  • Add the vanilla.
  • Gradually add the tea, then the sugar or Splenda and stir.
  • Pour into a mixing bowl and refrigerate until set. About 2 hours.
  • Whip until fluffy and light. Return to the refrigerator for about 30 minutes.
  • Serve in dishes or pile in parfait glasses and place a maraschino cherry on top.

From Australian BH&G Diabetic Living. Cooking time is freezing time of 4 hours plus time to heat milk. Don't see why you couldn't substitute other berries for the raspberries.

2 tablespoons boiling water
2 teaspoons gelatin powder
400 ml low-fat milk
2 chai tea teabags
2 teaspoons sugar (or granulated sugar substitute)
40 g raspberries (1/3 cup fresh or defrosted frozen)
1 tablespoon mint (small leaves)

Steps:

  • Put water in a small heatproof bowl and sprinkle the gelatine powder over and stir until dissolved and set aside.
  • Put milk in a small saucepan and bring to a simmer over a medium heat.
  • Remove pan from the heat and add tea bags and jiggle and cover and set aside for 5 minutes to steep and then remove tea bags.
  • Add gelatine mixture to milk mixture and stir until combines and then pour into dishes and put in the fridge for 4 hours or until set.
  • Top the jellies with raspberries and mint leaves to serve.
