Homemade Chai image

This chai recipe-inspired by versions in India-combines black tea, spices, and milk. The savory notes from black pepper and cardamom in this version give it a wonderful aromatic complexity.

Number Of Ingredients 9

2-inch piece fresh ginger, cut into thin rounds
2 cinnamon sticks
2 teaspoons black peppercorns
10 whole cloves
6 cardamom pods
6 cups cold water
6 bags of black tea (preferably Darjeeling)
2 cups whole milk
1/2 cup (packed) golden brown sugar

Steps:

  • Combine first 5 ingredients in medium saucepan. Using mallet or back of large spoon, lightly crush or bruise spices. Add 6 cups water; bring to boil over high heat. Reduce heat to medium-low, partially cover pan, and simmer gently 10 minutes. Remove from heat. Add tea bags and steep 5 minutes. Discard tea bags. Add milk and sugar. Bring tea just to simmer over high heat, whisking until sugar dissolves. Strain chai into teapot and serve hot.

Authentic Homemade Indian Chai image

An actually-authentic Indian Chai tea recipe, as made for me by my lovely Indian mother-in-law. Tea the Indian way is rich and milky, deeply coloured, steaming hot, flavourful and sweet.

8 oz water
4 oz whole milk
granulated sugar (to taste (about 2 heaped teaspoons per serving, traditionally))
1 heaping tablespoon of black tea (empty out tea bags to make a tablespoon if you don't buy loose leaves)
4 cardamom pods (smashed with side of a knife)
small piece of cinnamon stick
1/4 " coin of fresh ginger
pinch of fennel seeds (about 10 seeds)

Steps:

  • Bring water and milk to a simmer with desired spices in a medium saucepan. Reduce heat to lowest setting and add tea. Steep until tea takes on a deep, pinky-tan colour, about 3 minutes, stirring occasionally. Strain into a cup and stir in sugar to taste.

4 whole cloves
2 whole peppercorns
4 tea bags
4 teaspoons sugar
1/4 teaspoon ground ginger
1 cinnamon stick (3 inches)
2-1/2 cups boiling water
2 cups 2% milk

Steps:

  • Place cloves and peppercorns in a large bowl; with the end of a wooden spoon handle, crush spices until aromas are released., Add the tea bags, sugar, ginger, cinnamon stick and boiling water. Cover and steep for 6 minutes. Meanwhile, in a small saucepan, heat the milk., Strain tea, discarding spices and tea bags. Stir in hot milk. Pour into mugs.

Number Of Ingredients 9

2 cups water
2 tea bags
1 cinnamon stick
6 cardamom pods, crushed
1 whole clove
1/4 teaspoon ground ginger
2-1/2 cups milk
1/3 cup sugar
Sweetened whipped cream, ground cinnamon and cinnamon sticks, optional

Steps:

  • In a small saucepan, combine the first six ingredients. Bring to a boil. Reduce heat; cover and simmer for 5 minutes. , Stir in milk. Return to a boil; boil for 1 minute, then strain. Stir in sugar until dissolved. Pour into mugs. Top each with whipped cream, cinnamon and a cinnamon stick if desired.

If you want to make your own chai from scratch, just use your own spice mixture instead of a commercially available tea masala. Please feel free to add more or fewer spices to this recipe, depending on your taste.

Number Of Ingredients 9

2 cups water
2 teaspoons loose black tea (preferably Indian)
2 cardamom pods
1 cinnamon stick
2 whole cloves
2 teaspoons sugar
2 black peppercorns (optional)
1/2 cup milk
1 tablespoon peeled and sliced fresh ginger

Steps:

  • Combine the water, tea, cardamom, cinnamon stick, cloves and 1 teaspoon of the sugar, and the peppercorns, if desired, in a large saucepan and simmer over low heat for 5 minutes. Add the milk and the rest of the sugar. Add the ginger 1 to 2 minutes after that, or when the mixture is back to a simmer. Wait for 15 to 30 seconds and then strain the tea into 2 cups.
  • VARIATION: To make Chai II without milk and sugar, combine the water, tea, cardamom, cinnamon stick, cloves and peppercorns, if desired, in a large saucepan and simmer over low heat for 5 minutes. Add the ginger, wait 15 to 30 seconds and then strain the tea into 2 cups.

2 mugs milk (or use almond milk)
2 English Breakfast tea bags
6 cracked cardamom pods
½ cinnamon stick
a grating of fresh nutmeg
2 cloves
2-4 tsp light brown soft sugar

Steps:

  • Heat the milk in a saucepan over a very low heat. Empty the contents of the tea bags into the pan, then add the cracked cardamom pods, cinnamon stick, nutmeg and cloves.
  • Sweeten with light brown soft sugar to taste (chai tea should be sweet, but use less if you like), then leave to infuse, but not boil, for 10 mins. Strain into mugs and enjoy.
