3 3/4 ounces cellophane noodles, uncooked
1/2 cup fresh cilantro, coarsely chopped
3 medium garlic cloves, minced
1 tablespoon vegetable oil
1/4 cup rice wine vinegar
1 tablespoon sugar
1 1/2 tablespoons fish sauce
2 medium carrots, julienned
1 cup snow peas, julienned
1 medium cucumber, julienned

Steps:

  • Bring a large pot of water to a boil. Add noodles, simmer 3 minutes and drain.
  • Stir together cilantro, garlic, oil, vinegar, sugar and fish sauce in a large bowl. Add noodles, carrots, snowpeas and cucumber; toss well. Yields about 1 1/2 cups per serving.

If you love Thai flavors, this one's for you! It's so simple to make and the creamy low-fat coconut milk mixed with the curry, ginger, cilantro and just a squeeze of lime makes this dish quite special. Your family will love you for it!

Half an 8.8-ounce package cellophane noodles (aka bean thread noodles)
1 tablespoon cornstarch
1 cup light coconut milk
1 tablespoon vegetable or canola oil
1 small onion, diced
1 red bell pepper, diced
1 clove garlic, minced
2 teaspoons minced fresh ginger
2 scallions, chopped
2 teaspoons kosher salt
1 teaspoon curry powder
1 pound medium shrimp, shelled and deveined
1 tablespoon lime juice
1 tablespoon chopped cilantro

Steps:

  • Cook the noodles according to package directions. Drain and rinse under cold water.
  • Combine the cornstarch and coconut milk in a bowl and set aside.
  • Heat the oil in a wok or large saute pan over medium heat. Add the onions and saute until softened, 2 to 3 minutes. Add the red bell pepper, garlic, ginger, scallions, salt and curry powder and saute until starting to soften, another 2 to 3 minutes. Add the shrimp and cook until cooked through and pink, 3 to 4 minutes, continuously stirring.
  • Create a well in the center of the wok or pan, pour in the coconut mixture, lime juice and cilantro and heat until the mixture starts to thicken up, about 30 seconds. Then, stir to coat all the ingredients. Add the drained noodles and stir until the noodles are coated with the sauce and heated through, about another minute. Serve.

This incredibly refreshing salad is loosely based on a recipe for a Thai cellophane noodle salad in Jeffrey Alford and Naomi Duguid's "Hot, Sour, Salty, Sweet." The authentic recipe includes more garlic and chiles as well as dried shrimp. Make sure to cut up the noodles before you try to toss them with the other ingredients.

Number Of Ingredients 15

1/2 small green cabbage, finely shredded (about 4 cups)
4 ounces cellophane noodles, soaked for 20 minutes in warm water
1/4 cup chopped roasted peanuts (more to taste)
1 cup chopped cilantro
2 eggs
Salt to taste
2 teaspoons sunflower oil or peanut oil
1 to 3 serrano or Thai chiles, minced (to taste)
3 tablespoons sunflower oil or peanut oil
2 large garlic cloves, finely minced or pureed
2 tablespoons minced ginger
1/2 teaspoon red pepper flakes
3 tablespoons seasoned rice vinegar
1 tablespoon fresh lime juice
Salt to taste

Steps:

  • Place the cabbage in a bowl and cover with ice water. Set aside while you prepare the remaining ingredients.
  • Bring a pot of water to a boil. Salt if desired. Drain the noodles and add to the pot. Boil for 1 1/2 minutes, drain, rinse briefly with cold water and drain thoroughly. Using a scissors, chop coarsely and transfer to a bowl. Drain the cabbage and add to the bowl, along with the peanuts, cilantro and chile(s). Toss together.
  • Beat one of the eggs in a bowl and season with salt to taste. Heat 1 teaspoon of the sunflower oil in an 8-inch nonstick skillet over high heat, or in a wok, and add the egg. Swirl the pan and let the egg spread out in a thin pancake. Lift the edges of the pancake to let egg run underneath. It should cook through quickly. Flip over and cook for a few seconds on the other side, then remove from the heat. Repeat with the other egg. Roll up the pancakes and cut in thin strips. Add half the egg shreds to the noodles and set the other half aside.
  • Place the garlic, ginger and a generous pinch of salt in a mortar and pestle and pound to a coarse paste. Heat 1 tablespoon of the sunflower oil over medium heat in the same skillet or wok in which you cooked the eggs and add the paste and the red pepper flakes. Cook, stirring, until fragrant, about 1 minute. Transfer to a bowl. Allow to cool slightly. Add the rice vinegar, the lime juice and the remaining 2 tablespoons of sunflower oil and whisk together. Taste and add salt. It should be somewhat salty. Toss with the noodle mixture. Transfer to a platter or a wide bowl, sprinkle the remaining egg shreds over the top, and serve.

6 mixed mushrooms, lg. dried Chinese
4 ounces cellophane noodles
1 teaspoon ginger, crushed
3 green onions, diced
1/2 lb pork, diced
2 tablespoons oil
1 1/2 cups chicken broth
1 chicken bouillon cube
3 tablespoons soy sauce
1 1/2 tablespoons vinegar
salt
pepper

Steps:

  • Soak mushrooms in water for 30 minutes; discard tough stocks; cut mushrooms into thin slices.
  • Soak cellophane noodles, in a separate bowl, in hot water for 5 minutes; drain.
  • Slice ginger, green onion, and pork.
  • Heat oil in skillet.
  • Stir fry ginger, pork, and mushrooms for 2 minutes.
  • Add green onions, chicken broth, bouillon cube, and soy sauce.
  • Bring to boil; simmer for 5 minutes.
  • Add noodles, vinegar, salt and pepper.
  • Stir to mix.
  • Simmer another 5 minutes.

5 ounces uncooked cellophane noodles
1 cup carrot, cut into matchsticks
1/2 cup red pepper, sliced thin
2 tablespoons cilantro, chopped
1/4 cup water
1/4 cup soy sauce
2 tablespoons chunky peanut butter
2 tablespoons brown sugar, packed
2 tablespoons rice vinegar
2 teaspoons minced ginger
1 tablespoon canola oil
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon five-spice powder
1/2 teaspoon garlic powder

Steps:

  • Place a medium pot of water on the stove to boil.
  • Once the water boils, add the bean threads and carrots. Boil for one minute and then let stand for 10 minutes until the threads are transparent.
  • While the bean threads are cooking, make the sauce.
  • Combine the water, soy sauce, peanut butter, brown sugar, rice vinegar, ginger, oil, red pepper flakes, five-spice powder and garlic powder in a medium bowl and whisk.
  • Drain bean threads and carrots and toss with the sauce.

Chile-Oil Noodles With Cilantro image

In this 20-minute recipe, a mixture of savory condiments coats bowlfuls of wide noodles chilled slightly by a quick rinse in cool water. While you cook the udon, take the time to prepare the sauce, abundant with contrasting flavors, and the fresh herbs. The sauce can be made in advance, but make sure it's at room temperature before tossing it with the noodles and the cilantro at the last minute. Substitutions are welcome: Swap in chile crisp in place of the chile oil with crunchy garlic, or scallions in place of garlic chives. Sichuan chile oil brings a citrusy flavor that is hard to replicate, so don't skip it. It can vary in spice level: For a milder sauce, use only the liquid oil, or add Sichuan peppercorns from the bottom of the oil for extra tingle. Fried shallots are here for texture, but omit them if you use chile crisp.

2 tablespoons store-bought fried shallots, crumbled by hand (optional)

Steps:

  • Bring a large pot of water to boil and cook noodles according to package instructions, stirring from time to time to prevent them from sticking. Drain well in a colander, then run noodles under cold water until cooled.
  • Meanwhile, in a large bowl, combine all three oils with the soy sauce and 1/2 cup garlic chives.
  • Toss cooled noodles into the chile oil mixture. Gently fold in the crumbled fried shallots and chopped cilantro. Divide among four bowls, and top with more garlic chives and cilantro sprigs.
