FRENCH ONION SOUP WITH CELERIAC
The rich, comforting, savory delight of a traditional French onion soup, made extraordinary with the addition of celeriac and a cheese-topped, buttery roasted garlic toast crust.

Steps:
- Preheat oven to 425 degrees F (220 degrees C). Slice the top off the whole head of garlic, sprinkle with 1 teaspoon olive oil, and season with salt. Wrap loosely in foil, and bake 45 minutes, or until the cloves are very soft. Squeeze the cloves into a small bowl, and mix with the 1/2 cup softened butter.
- Heat 2 tablespoons olive oil in a large pot over medium heat. Melt 2 tablespoons butter in the pot, and blend with the oil. Stir in the onions and celery root, and saute until the onions are lightly browned. Reduce heat to medium low, and mix in the beef broth, wine, and vegetable broth. Mix in the chopped garlic, and season with paprika, parsley, Cajun seasoning, salt, and pepper. Simmer, stirring occasionally, for 1 hour.
- Preheat the oven broiler.
- Spread the toasted bread slices with the garlic butter. Ladle the soup into oven safe bowls, and place the bowls on a baking sheet. Reserving remaining bread, place one slice of toasted bread on top of the soup in each bowl, and sprinkle with Swiss cheese.
- Broil soup 5 minutes in the preheated oven, until the Swiss cheese is melted. Cool for about 2 minutes before serving warm with remaining garlic bread.

- Layer the onions, apples and bacon in a 2 quart casserole.
- Pour the chicken broth over all.
- Cover and bake at 350°F for 45 minutes.
- While baking, saute bread crumbs in 2 tablespoons bacon fat.
- Uncover casserole and sprinkle top with the toasted bread crumbs.
- Bake for an additional 15 minutes.
CELERIAC, APPLE & ONION CASSEROLE
A lovely tasty side dish to compliment any meal. If you are not watching calories etc add a couple tbsp of butter and top with some buttered crumbs. Add some cheese if you wish but it is also delish just plain. I like to use hot paprika.

- In a baking dish mix together the onion, apple. oregano and celeric.
- Sprinkle with paprika.
- Cover with foil.

CORNED BEEF, SPINACH AND CELERIAC CASSEROLE
This recipe uses another food.com recipe for "Corned Beef (Corn Your Own)" by evelyn/athens.If you haven't made your own corned beef, take care in choosing canned. Most are made of mechanically separated meat which looks like mush. I have found brands at my local Asian grocery that actually have chunks of recognizable meat. Usually products of Australia or Argentina. They're far different, and much tastier, than what we're used to in the chain grocery stores.

- Preheat oven to 400°.
- Cook pasta until just a minute or two before time according to package instructions. Drain. Cover with cold water and set aside. (The noodles will finish cooking in the oven.).
- In a sauté pan melt the first 2 tablespoons of butter. Add the onion and celeriac. Cook over medium heat until they start to brown. Remove from pan and set aside.
- Wash spinach, but do not dry. Add spinach to remaining butter in the pan. Sauté spinach until wilted. Add to onion and celeriac and mix.
- Melt remaining 4 tablespoons butter in the same saucepan over medium heat. Stir in flour until well blended to make a roux. Allow to brown slightly if you wish. This will add some depth of flavour.
- Whisk in mustard. Then slowly add wine (or chicken stock), to make a thick sauce. Then, still whisking, add stock and cook until thickened. Remove from the heat. Add a little of the sauce to the egg to temper. Then add back into sauce. Stir in both peppers, thyme and 1 1/2 cups of the cheese and heat until cheese is melted. Add salt to taste. (Remember, if your corned beef is already slightly salty adjust the salt down as you deem fit.).
- To assemble, place half of the noodles on the bottom of a buttered 9x9 casserole dish. Then add the shredded corned beef, and then the vegetables, in separate layers. Top with the remaining noodles. Then pour the sauce over the casserole.
- Distribute the bread cubes on top and sprinkle with remaining cheese. Bake for 30 minutes, or until hot and lightly browned.
- Serves 4 to 6.

CELERIAC (CELERY ROOT), ONIONS & LEMON
Celeriac is very ugly looking and you do waste a lot peeling it but try it - if you like celery you'll love this vegetable it has a mild celery flavor. The onion & lemon compliment it. I threw this together last night and it was rather good - You have to peel all the knots of the celeric and get in to the white flesh.

- Peel the root so you have only the white flesh, cut it into pieces apprx 1/8" thick and bite size.
- Immerse prepared celeriac in boiling water and boil 5 minutes, drain (keep the water to use in a soup recipe).
- Spray a fry pan (large enough to hold the veggies in a single layer) and heat it, Add celeriac& Onions.
- Rotate the veggies but allow the onions and celeriac to brown apprx 10 minutes.
- Sprinkle lemon over the veggies.
- Serve as a side dish vegetable.
