If you like French onion soup, you'll love this baked cauliflower coated in melted Gruyère cheese and sweet caramelized onions. Enjoy this as a side dish alongside roast chicken or steak, or as a healthy appetizer. We called for vegetarian Worcestershire sauce in this recipe to keep the recipe vegetarian, but if you don't care about it being vegetarian, feel free to use regular Worcestershire.

2 tablespoons extra virgin olive oil, divided
1 large onion, halved and sliced (about 2 cups)
1 teaspoon Worcestershire sauce, preferably vegetarian
¾ teaspoon dried thyme
½ teaspoon ground pepper, divided
5 cups cauliflower slices (¼ inch thick; about 1 medium head)
½ teaspoon garlic powder
¼ teaspoon salt
½ cup shredded Gruyère cheese

Steps:

  • Preheat oven to 450°F. Coat a large rimmed baking sheet with cooking spray.
  • Heat 1 tablespoon oil in a large skillet over medium heat. Add onion and cook, stirring occasionally, for 5 minutes. Add Worcestershire, thyme and ¼ teaspoon pepper; reduce heat to medium-low and continue cooking, stirring often, until golden brown, 10 to 15 minutes more. (Add a tablespoon or two of water during cooking if the pan seems dry.) Remove from heat.
  • Meanwhile, arrange cauliflower slices in one layer on the prepared baking sheet. Combine the remaining 1 tablespoon oil with garlic powder and salt in a small bowl. Brush the mixture over the cauliflower slices. Roast until tender, about 10 minutes. Remove from oven and top with the reserved caramelized onions and cheese. Continue roasting until the cheese has melted, 2 to 3 minutes.

1 1/2 tablespoons butter
2 -3 red onions, thinly sliced (about 1 pound)
1 teaspoon balsamic vinegar
kosher salt
fresh ground black pepper
1 (1 1/2 lb) heads cauliflower, separated into florets
2 tablespoons toasted pine nuts

Steps:

  • Put butter in a heavy bottomed skillet over medium heat.
  • Add onions and cook, stirring periodically, until the onions are a deep golden color, about 20 minutes (The longer the onion cooks the more frequently it needs to be stirred).
  • Add balsamic vinegar, salt and pepper.
  • Cook until most of the moisture evaporates and onions are deep brown, about 5 minutes.
  • Meanwhile, steam (12 to 15 minutes) or microwave (8 to 10 minutes) the cauliflower until tender but still firm.
  • Put cauliflower on a platter and top with caramelized onions.
  • Sprinkle with pine nuts.

4 tablespoons extra-virgin olive oil
2 cloves garlic, minced
1/4 cup panko (Japanese breadcrumbs)
1/2 cup fried onions, chopped
4 cups cauliflower florets, roughly chopped
1/2 to 1 teaspoon red pepper flakes
1/4 cup grated parmesan cheese, plus more for topping
2 tablespoons chopped fresh basil
1/4 cup pine nuts

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook as the label directs. Reserve 1 cup cooking water, then drain the pasta. Return to the pot and toss with 1 tablespoon olive oil.
  • Meanwhile, heat 2 tablespoons olive oil in a large skillet over medium heat. Add the garlic and cook about 30 seconds. Add the panko and fried onions and cook, stirring, until lightly toasted, about 3 minutes. Transfer to a plate; wipe out the skillet.
  • Heat the remaining 1 tablespoon olive oil in the skillet over medium-high heat. Add the cauliflower and cook until the edges brown, about 4 minutes. Add the red pepper flakes and toast 30 seconds. Add the reserved pasta water and cook until the liquid is reduced by half and the cauliflower is crisp-tender, about 1 more minute.
  • Add the pasta, onion mixture and parmesan to the skillet and toss. Season with salt. Top with the basil, pine nuts and more parmesan. Photograph by Andrew Mccaul

Roast 15 minutes; turn florets over. Continue roasting until tender, about 25 minutes longer. Cool cauliflower, then thinly slice. Drizzle with truffle oil; toss. Reduce oven temperature to 350°F.
  • Press pie crust onto bottom and up sides of 9-inch-diameter tart pan with removable bottom. Line pie crust with foil; fill with pie weights. Bake crust 20 minutes. Remove foil and pie weights; bake until crust is golden, about 5 minutes, pressing crust with back of fork if bubbles form. Cool crust. Maintain oven temperature.
  • Heat remaining 1 1/2 tablespoons olive oil in heavy large skillet over medium heat. Add onion; sprinkle with salt and pepper.
