- Toss 7 cups small cauliflower florets and 3 chopped plum tomatoes with 1/4 cup olive oil, 2 cloves minced garlic, 1 1/2 teaspoons cumin seeds, 1/4 teaspoon turmeric, a pinch of cayenne, 1/2 teaspoon salt, and pepper to taste on a baking sheet. Roast in a 450 degrees F oven, about 25 minutes. Sprinkle with lemon juice and chopped cilantro.

BROILED CAULIFLOWER WITH FOUR CHEESE TOMATO SAUCE
Florets of cauliflower simmer in a cheesy tomato sauce, then are finished under the broiler with Parmesan and mozzarella cheese for a fresh and easy side dish.

Steps:
- Heat oil in a large pan over medium-high heat. Add onion and saute until beginning to soften but not brown, 2 to 3 minutes. Stir in garlic and cook another minute. Add the cauliflower; salt and pepper to taste. Cook and stir another minute to combine.
- Stir in the sauce and white wine; add 1 tablespoon of the parsley. Cook and stir 5 minutes at a low simmer.
- Turn heat to medium-low, cover. Cook until cauliflower is almost tender, about 10 more minutes, stirring a few times.
- Turn broiler to high. Line a rimmed baking sheet with foil. Spray lightly with cooking spray.
- Pour cauliflower and tomato sauce onto the baking sheet. Gently scoop some of the tomato sauce back over the top of the cauliflower. Spread the cauliflower evenly on the sheet.
- Sprinkle Parmesan cheese then mozzarella cheese over the cauliflower.
- Broil until cheese is bubbly and slightly browned in spots, about 2 minutes. Watch carefully so cheese doesn't burn. Let rest 3 minutes before transferring to serving platter. Garnish with remaining fresh parsley.

This is a very attractive dish to bring to the table! If you want your cauliflower cooked a little more steam it for 5 min prior to putting it in the casserole. I like it crisp so I do it raw.

- Preheat oven to 375°F.
- Lightly grease a 9x13-inch casserole dish.
- Arrange flowerets in the dish.
- Sprinkle with salt, pepper and nutmeg.
- Sprinkle the onion over the cauliflower.
- Cover with 1 cup of cheese.
- Drizzle with the melted butter.
- Tuck in the Tomatoes wedges.
- Sprinkle with remaining cheese.
- Bake uncovered for about 10 minutes.
- Garnish with parsley.
ROASTED CAULIFLOWER GRATIN WITH TOMATOES AND GOAT CHEESE
Roasting is one of my favorite ways to prepare cauliflower, and I have always loved preparations that pair the vegetable with coriander seeds. I use coriander seeds and cinnamon to season the tomato sauce that I toss with the roasted cauliflower and sautéed red onions, then add a couple of eggs beaten with goat cheese.

- Preheat oven to 450 degrees. Line a baking sheet with parchment or foil. Cut away the bottom of the cauliflower stem and trim off leaves. Cut cauliflower into 1/3 inch thick slices, letting the florets on the edges fall off. Toss all of it, including the bits that have fallen away, with 2 tablespoons of the olive oil, salt, and pepper. Place on baking sheet in an even layer.
- Roast for 15 to 20 minutes, stirring and flipping over the big slices after 8 minutes, until the slices are tender when pierced with a paring knife and the small florets are nicely browned. Remove from oven and cut large slices into smaller pieces. You should have about 2 cups. Transfer to a large bowl. Turn oven down to 375 degrees.
- Oil a 1-1/2 to 2-quart baking dish or gratin. Heat remaining oil over medium heat in a medium-size skillet or a wide saucepan and add onion. Cook, stirring, until tender, about 5 minutes. Add a generous pinch of salt and the garlic and thyme and continue to cook, stirring, until garlic is fragrant, 30 seconds to a minute. Add tomatoes, cinnamon, ground coriander seeds, and salt and pepper to taste and bring to a simmer. Cook, stirring often, over medium-low heat, for 10 to 15 minutes, until the tomatoes have cooked down and the sauce is fragrant. Taste and adjust seasoning. Add to bowl with the cauliflower and stir everything together. Scrape into prepared baking dish.
- Set aside 2 tablespoons of the goat cheese. Beat eggs, then add the remaining cheese and beat together until smooth. Pour over cauliflower mixture, making sure to scrape out every last bit with a rubber spatula. Dot top with small pieces of the remaining goat cheese and sprinkle on chives.
- Bake 30 minutes, until top is beginning to brown in spots. Remove from oven and allow to sit for 5 to 10 minutes before serving.

Double Gloucester is a pale, mild cheese with a gentle, salty tang. Worcestershilre sauce and chutney give a lively depth of flavor to this dish". If you can't get Gloucestershire cheese, try a mild to medium fairly crumbly cheddar.

- Blanch the cauliflower in boiling, salted water for 10 minutes or until tender. Drain well.
- Put the flour, butter and milk in a saucepan. Heat, whisking continuously, until the sauce thickens, boils, and is smooth. Simmer 2 - 3 minutes.
- Remove the pan from the heat, add most of the cheeseand stir until melted. Mix in the Worcestershire sauce.
- Place the tomatoes and chutney in the base of a 1 1/4 pint flameproof dish. Cover with the cauliflower and cheese sauce.
- Sprinkle with the remaining cheese and grill it in the oven until bubbling and golden brown.
- Serve with brown bread.

Steps:
- Cut the cauliflower into florets and cut the florets in half or quaters to creat 1-inch pieces.
- Heat 2 tablespoons of the olive oil in a skillet over medium heat.
- Add the cauliflower and cook, stirring occasionally, until the cauliflower begins to brown.
- Add the other half tablespoon of olive oil, tomatoes, garlic, pepper flakes, and basil.
- Cover and simmer until the cauliflower is tender but still has some resistance when sampled, about 6-8 minutes.
- Add salt and pepper to taste.
SUN-DRIED TOMATO CAULIFLOWER CHEESE
This recipe really gives cauliflower a punch with sun-dried tomatoes and Old Cheddar cheese, a real celebration of the cauliflower!!

- In a large pot of boiling water, boil cauliflower for about 7 minutes or until just tender. Drain well; set aside.
- Meanwhile, in a small saucepan, melt butter over medium heat. Sauté garlic for 1 minute until fragrant. Whisk flour into milk; gradually pour into pan whisking constantly. Stir in sun-dried tomatoes, paprika, and pepper and cook, stirring for about 3 minutes or until bubbling and thickened. Remove from heat and stir in half the cheese until melted. Pour over cauliflower in a heatproof serving dish; sprinkle with remaining cheese.
- COOKING TIP: To save time you can purchase pre-cut cauliflower and in a pinch use thawed frozen cauliflower and just boil for 1-2 minutes or until hot. Be sure to drain the cauliflower very well to prevent watering down the cheese sauce.
- FOR THE ADVENTUROUS: Make this a crumb-topped gratin: Spread cauliflower mixture in a shallow 8-cup baking dish. Combine 1 cup fresh whole wheat bread crumbs, 1/2 cup additional shredded cheese, 1 tablespoons melted butter, 1 Tbsp chopped fresh basil, and pepper to taste; sprinkle over cauliflower. Bake in 400F oven for 15 minutes or until lightly browned.
