2 c catalina salad dressing
2 c sweet and spicy brown mustard
2 Tbsp cajun seasoning and sirracha sauce
1/2 c brown sugar

Steps:

1. Mix all together on stove top and simmer until thick. Ladle into jars

1/4 c chopped onion
1/4 c chopped sweet red pepper
1 Tbsp olive oil
1/2 c beer
1/2 c cold water
1 Tbsp creole or cajun seasoning mix
1/4 tsp crushed red pepper
1/4 tsp salt

Steps:

1. In a small saucepan over medium heat, cook chopped onion and chopped red sweet pepper in the olive oil-about 4-5 minutes til tender.
2. In a small bowl, whisk together the beer, cold water and Creole seasonings. Add to onion mixture and stir til thickened and bubbling. Cook and stir 2 minutes more.

A friend gave me this recipe some years ago for a vinegar-based sauce with mustard seed. You can use smoked pork neck bones in place of ham hocks if available.

2 cups apple cider vinegar
1 ½ cups apple cider
1 cup dark brown sugar
1 tablespoon yellow mustard seed
2 tablespoons Dijon mustard
½ cup tomato paste
¼ teaspoon salt
¼ teaspoon fresh ground black pepper
2 smoked pork neck bones

Steps:

Combine the cider vinegar, apple cider, brown sugar, mustard seed, Dijon mustard, tomato paste, salt, black pepper, and neck bones in a heavy-bottomed saucepan over medium heat; simmer until the sauce thickens, 30 to 40 minutes. Skim any foam from the surface of the liquid and discard. Remove and discard the neck bones. Cool the sauce to room temperature or use immediately.
