CREAMY PEA SALAD
Steps:
- Cook bacon to crispy, cool and chop. Set aside.
- Cube cheddar, set aside.
- In a large mixing bowl, combine frozen peas (no need to thaw them), bacon, cubed cheddar and chopped onion. Toss gently.
- In a measuring cup, combine mayo, sour cream, Ranch dressing, vinegar, salt, pepper and parsley. Mix well. Pour dressing over salad. Toss gently to coat.
- Cover bowl with salad with saran wrap and chill for at least 30 minutes.

- 1. In a medium sized bowl add the peas and all other veggies and cheeses. ( add the cashews before serving )
- 2. In another small bowl; mix dressing ingredients...adjust seasoning to your own taste if needed. Stir dressing into the pea mixture; coat evenly and refrigerate till chilled, at least a few hours till flavors mesh.
- 3. Enjoy...even better the next day, if there are any leftovers...

- Thaw the peas in a colander under lukewarm water for a couple of minutes. Drain and let air dry while preparing the rest of the ingredients.
- In a large mixing bowl, gently mix the peas, diced celery, chopped cauliflower, diced green onion, and chopped cashews. Then in a small mixing bowl, mix the sour cream and ranch dressing. Pour the dressing over the mixed vegetables and slowly mix until everything is coated.
- Chill the pea salad with cashews in the refrigerator for a few hours to marry the flavors.
- Stir once more before serving, then garnish with bacon bits and shredded cheddar cheese. Serve chilled and enjoy!
