This recipe is for a quick and easy potato casserole using mozzarella cheese, sour cream, and prepared frozen cubed potatoes.

Ingredients

1 (2 pound) package frozen cubed hash brown potatoes, thawed
2 cups shredded mozzarella cheese
1 (16 ounce) container sour cream
1 (10.75 ounce) can cream of chicken soup
½ cup melted butter
½ cup chopped onion
1 teaspoon salt
½ teaspoon ground black pepper

Steps:

Preheat oven to 350 degrees F (175 degrees C).
Mix potatoes, mozzarella cheese, sour cream, cream of chicken soup, butter, onion, salt, and black pepper together in a casserole dish.
Bake in preheated oven until hot throughout and bubbly on top, about 30 minutes.

4 cups mashed potatoes (about 8 to 10 large) or 4 cups prepared instant potatoes
1 cup sour cream
1 package (8 ounces) cream cheese, softened
1 teaspoon minced chives
1/4 teaspoon garlic powder
1/4 cup dry bread crumbs
1 tablespoon butter, melted
1/2 cup shredded cheddar cheese

Steps:

In a large bowl, combine potatoes, sour cream, cream cheese, chives and garlic powder. Turn into a greased 2-qt. casserole. Combine bread crumbs with butter; sprinkle over potatoes. , Bake at 350° for 50 to 60 minutes. Top with cheese and serve immediately.

12 medium potatoes, peeled and quartered
2 tablespoons butter
2 tablespoons milk
3/4 teaspoon salt
1/4 teaspoon pepper
1 package (8 ounces) cream cheese, softened
1 carton (8 ounces) French onion dip
Paprika

Steps:

Place potatoes in a large saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender. Drain. Mash the potatoes with butter, milk, salt and pepper until smooth. Add cream cheese and onion dip; mix well. , Spread in a greased 2-1/2-qt. baking dish. Sprinkle with paprika. Cover and refrigerate for 8 hours or overnight. , Remove from the refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 50-60 minutes or until heated through.

I got this recipe from an old friend, who got it off a bag of frozen hash browns. My family raved about it the first time I made it, and there are never any leftovers. It's actually not too fattening if you stick to only 1-2 servings...which is hard to do!

Ingredients

1 (32 ounce) bag frozen hash brown potatoes, cube style, not shredded (Do NOT thaw)
2 cups cheddar cheese, shredded
16 ounces light sour cream
1/4 cup butter, melted
10 ounces cream of mushroom soup (lite soup ok)
crushed crackers or corn flakes, to taste

Steps:

Spray 9 x 11 baking dish with cooking spray.
Preheat oven to 350 degrees.
Mix all ingredients except bread crumbs in a very large bowl.
Pour into baking dish and top with bread crumbs, crackers or cornflakes.
Bake for one hour.

1/2 cup melted butter, divided
1 teaspoon salt
1/2 teaspoon onion powder
1/2 teaspoon pepper
2 cups shredded cheddar cheese
2 cups sour cream
2 lbs of thawed shredded hash browns
2 cups frosted flakes

Steps:

Preheat oven at 350 degrees.
Mix all ingredients together, except for 1/4 cup of butter.
Crush 2 cups frosted flakes with 1/4 cup melted butter and sprinkle on top.
Bake for 55 min in a 9 x 13 pan.
