ROASTED CARROTS WITH THYME



Roasted Carrots with Thyme image

These roasted carrots are cooked in a high temperature oven, which brings out their natural sweetness.

2 pounds fresh carrots, peeled
2 tablespoons extra virgin olive oil
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
2 teaspoons fresh chopped thyme (or ½ teaspoon dried), plus more for serving

Steps:

  • Preheat the oven to 425°F. Line a baking sheet with aluminum foil.
  • Slice the carrots on the diagonal about 2-in thick. Make sure all pieces are approximately the same size to ensure even cooking.
  • Directly on the prepared baking sheet, toss together the carrots, olive oil, salt, pepper and thyme. Roast, stirring once mid-way through, until nicely caramelized and tender, 20 to 25 minutes (cooking time will depend on thickness of carrots). Taste and adjust seasoning if necessary. Transfer to a bowl and sprinkle with more fresh thyme, if desired.

Skillet Glazed Carrots with Thyme image

These classic glazed carrots involve nothing more than a little butter, sugar and fresh thyme.

1 1/2 pounds carrots, peeled and cut into 1-inch pieces
1 tablespoon unsalted butter
1 teaspoon sugar
2 sprigs fresh thyme, plus more for garnish, optional
Kosher salt and freshly ground black pepper

Steps:

  • Spread the carrots in a single layer in a large skillet with a lid. Add enough water to cover the carrots halfway and then add the butter, sugar and thyme. Bring to a boil and then reduce the heat to maintain a simmer. Partially cover with the lid and simmer until the carrots are tender, 8 to 10 minutes. Uncover, increase the heat to high and continue to cook, stirring occasionally until the liquid almost completely evaporates and the carrots are glazed. Discard the thyme sprigs and season with salt and pepper. Garnish with fresh thyme if using.

1 pound carrots, cut into 1/4-inch slices
1-1/4 cups water, divided
1 teaspoon chicken bouillon granules
3 medium onions, sliced and separated into rings
2 tablespoons butter
1 tablespoon all-purpose flour
1 teaspoon salt
1 teaspoon honey
1/4 teaspoon sugar
Dash pepper

Steps:

  • In a large saucepan, combine carrots, 1/2 cup water and bouillon. Bring to a boil. Reduce heat; cover and cook for 5 minutes or until carrots are crisp-tender. Drain, reserving cooking liquid. Set carrots aside and keep warm., In a large skillet, saute onions in butter for 8-10 minutes or until tender. Add flour; stir until blended. Stir in the salt, honey, sugar, pepper and reserved cooking liquid and remaining water; bring to a boil. Cook and stir for 2 minutes or until thickened. Reduce heat; simmer, uncovered, for 10 minutes. Stir in carrots; heat through.

2 pounds medium carrots
2 tablespoons olive oil
½ teaspoon salt
½ teaspoon freshly ground pepper
1 teaspoon dried thyme
1 small onion (finely diced)
3 tablespoons water
1 teaspoon vegetable bouillon powder
Fresh parsley for garnish.

Steps:

  • Preheat oven to 375F. Grease or line a sheet pan with parchment paper.
  • Peel the carrots, cut them in half crosswise and then into strips lengthwise.
  • In a large bowl combine the olive oil, salt, pepper, thyme and onion. Add the carrots and toss to coat.
  • In a small bowl mix together the water and the vegetable bouillon.
  • Place the carrot mixture on the prepared sheet pan, pour the water/bouillon over top and cover tightly with aluminum foil.
  • Bake for 40 minutes, until the carrots are just tender. Remove the foil and bake an additional 10 minutes.
  • Transfer to a serving dish and garnish with fresh parsley.

1 1/2 pounds carrots
12 plum tomatoes
2 large onions
2 tablespoons olive oil
2 teaspoons fresh thyme leaves (or one teaspoon dried)
Coarse salt and freshly ground pepper to taste

Steps:

  • Preheat oven to 350 degrees. Slice the carrots into one-inch pieces. Peel the tomatoes by dropping them into boiling water, leaving them for a minute and then draining them and slipping off their skins. Cut them in half and scrape out the seeds. Cut the onions in thick slices.
  • Pour the oil over the bottom of a baking dish about 9 by 13 inches and spread out the onions, tomatoes and thyme. Season with salt and pepper and stir the vegetables lightly to make sure they are coated with the oil. Bake for 30 minutes, stirring from time to time.
  • Add carrots, stir to coat with oil and continue roasting for one hour.

1kg carrots
25g butter
2 tbsp clear honey
5 lemon thyme sprigs, leaves picked, plus extra to serve (use ordinary thyme if you can't find lemon)

Steps:

  • Tip the carrots into a wide shallow pan so they are no more than a double layer. Add the butter, honey and about 500ml or 2cm of water, the leaves from the thyme and a pinch of salt. Partly cover with a lid, turn the heat up high and boil everything down until the carrots are tender, cooked through and sticky with honey. If they aren't tender enough by the time the water has evaporated, add a splash more. Once glazed, turn them over in the sticky juices and serve, with extra thyme on top.

500g carrot , peeled and cut into long chunks
50g butter
1 tbsp olive oil
8 red onions , peeled and quartered with root intact
3 sprigs thyme
1 tbsp soft brown sugar
3 tbsp red wine
1 tbsp good-quality balsamic vinegar

Steps:

  • Blanch carrots in a pan of boiling salted water for 3 mins, drain well, then pat dry. In a large pan, melt the butter and oil, then fry the carrots, onions and thyme over a low heat for 30 mins until golden.
  • Stir in the sugar and red wine and bubble for a few mins to boil off the alcohol. Add the vinegar, then continue to cook until syrupy, about 5 mins. Remove the sprigs of thyme and serve. Make up to 2 days ahead, stored in a covered container. Tip back into a pan and reheat or use a microwave.

1 lb carrot (about 6 medium)
1/2 cup water
1 chicken bouillon cube
1/4 cup butter
3 medium onions, sliced
1 tablespoon flour
1/2 teaspoon salt
1 dash pepper
1 pinch sugar
1/4 teaspoon dried leaf thyme, to taste
3/4 cup water

Steps:

  • Peel carrots and cut into thin strips about 2 inches long.
  • Heat 1/2 cup water to boiling in medium saucepan and add bouillon cube.
  • Stir until cube is dissolved.
  • Add carrots and cook, covered,10 mins.
  • Do not drain.
  • Heat butter in skillet while carrots are cooking.
  • Add onions and cook, covered 5 mins.
  • ,shaking the pan so that onions do not stick.
  • Remove cover and stir in flour,salt, pepper,sugar and thyme.
  • Remove from heat, and add 3/4 cup water all at once.
  • Return to moderate heat and cook, stirring constantly, until boiling,thickened and smooth.
  • Add carrots and their cooking liquid, and simmer uncovered, until carrots are tender,about 5 minutes.
