Apple, Carrot, and Ginger Muffins image

A good-for-you carrot and apple muffin that provides a hefty hit of ginger.

1 ¼ cups whole wheat flour
1 cup rolled oats
1 ½ teaspoons baking powder
1 ½ teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
½ teaspoon salt
¼ teaspoon ground nutmeg
½ cup pure maple syrup
½ cup Greek yogurt
⅓ cup unsweetened applesauce
2 eggs
1 ½ teaspoons vanilla extract
2 cups finely shredded carrots
1 cup shredded apple
½ cup finely chopped crystallized ginger
½ cup raisins
½ cup chopped walnuts

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray 16 muffin cups with cooking spray or line with paper liners.
  • Stir together flour, oats, baking powder, baking soda, cinnamon, ground ginger, salt, and nutmeg in a large bowl. Whisk together maple syrup, Greek yogurt, applesauce, eggs, and vanilla extract in a second bowl until thoroughly combined. Add maple syrup mixture to flour mixture and stir until just combined. Fold in carrots, apple, crystallized ginger, raisins, and walnuts.
  • Divide batter evenly between 16 prepared muffin cups, filling each to the top.
  • Bake in the preheated oven until tops spring back when lightly pressed and a toothpick inserted into the center of one of the muffins comes out clean, 18 to 22 minutes. Cool in the tins for 5 minutes. Transfer to a wire rack to cool completely.

1/2 cup golden raisin
2 1/4 cups all-purpose flour
2 1/2 teaspoons ground ginger
2 teaspoons cinnamon
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1 pinch ground cloves
1/2 cup unsalted butter, softened
1/2 cup brown sugar, packed
1/4 cup granulated sugar
1/4 cup fancy molasses
1 teaspoon vanilla extract
2 eggs
3/4 cup 1% plain yogurt
2 cups shredded carrots

Steps:

  • In small bowl, sprinkle 2 teaspoons water over raisins. Cover and microwave on high for 20 seconds; stir and set aside to cool.
  • In bowl, whisk together flour, ginger, cinnamon, baking powder, baking soda, salt, nutmeg and cloves.
  • In large bowl, beat butter with brown and granulated sugars, until light, about 1 minute. Beat in molasses and vanilla; beat in eggs, one at a time. Stir in flour mixture; stir in yogurt until combined. Fold in carrots and raisins just until combined. Spoon into paper-lined or greased muffin cups.
  • Bake in 350F oven until cake tester inserted in center comes out clean, about 25 minutes. Transfer to rack; let cool.

1 cup raw sugar
3/4 cup vegetable oil
1 tablespoon fresh ginger
1 teaspoon vanilla
3 eggs
1 cup crushed pineapple, drained
2 cups carrots, grated
1 pinch salt
1/2 teaspoon baking soda
1 tablespoon ground ginger
1 tablespoon ground cinnamon
1/2 cup desiccated coconut
2 1/2 cups self raising flour

Steps:

  • Heat oven 160°C.
  • Grease muffin tins.
  • Combine sugar, oil, ginger and vanilla.
  • Whisk then add eggs, beat till creamy.
  • Stir in pineapple and carrot.
  • Add sifted flour,salt, baking soda, ginger and cinnamon.
  • Add coconut - mix all together.
  • Spoon into greased muffin tins.
  • Bake 30 - 40 minutes.
  • When cool they can be frosted with cream chees frosting if desired.

1 3/4 cups all-purpose flour
1/2 cup sugar
2 teaspoons pumpkin-pie spice
2 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
3/4 cups plain yogurt
4 tablespoons melted unsalted butter
1 large egg
2 cups peeled, shredded carrots (about 5 medium)

Steps:

  • Line 12 cups (each 2 1/2 inches wide) of a standard muffin tin with paper liners; set aside. In a large bowl, stir together flour, sugar, pumpkin-pie spice, baking powder, baking soda, and salt; set aside.
  • In a separate bowl, whisk together yogurt, butter, and egg. Make a well in the center of the dry ingredients and add yogurt mixture. Stir until just combined. Fold in carrots.
  • Spoon batter into prepared muffin cups. (If desired, muffins can be baked immediately in a 375-degree oven for about 20 minutes.) Freeze until firm, about 30 minutes, then cover tin with plastic wrap, and freeze until ready to bake, up to 3 months.
  • Preheat oven to 375 degrees. Bake muffins (still frozen) until a toothpick inserted in center of one comes out clean, about 30 minutes. Transfer to a rack. Serve warm or at room temperature.
