I received this recipe from the mother of a patient I cared for back in 1972 in St. Paul, Minnesota. It was, and is, the best carrot cake I have ever tasted. It's requested for many family gatherings and celebrations. -Becky Wachob, Kelly, Wyoming

3 cups shredded carrots
1 can (20 ounces) crushed pineapple, well drained
2 cups sugar
1 cup canola oil
4 large eggs
2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons ground cinnamon
FROSTING:
1 package (8 ounces) cream cheese, softened
1/4 cup butter, softened
2 teaspoons vanilla extract
3-3/4 cups confectioners' sugar

Steps:

  • In a large bowl, beat the first five ingredients until well blended. In another bowl, mix the flour, baking soda and cinnamon; gradually beat into carrot mixture., Transfer to a greased 13x9-in. baking pan. Bake at 350° for 35-40 minutes or until a toothpick inserted in center comes out clean. Cool completely in pan on a wire rack., For frosting, in a large bowl, beat the cream cheese, butter and vanilla until blended. Gradually beat in confectioners' sugar until smooth. Spread over cake. Store in refrigerator.

Beneath this towering yet unpretentious appearance lies multiple layers of moist, mildly spiced cake that are flecked with carrots and pecans and enveloped by a generous coating of cream cheese frosting.

2 1/2 cups all-purpose flour, plus more for pans
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
3/4 teaspoon coarse salt
1/2 teaspoon ground ginger
1/4 teaspoon ground nutmeg
3 sticks (12 ounces) unsalted butter, room temperature, plus more for pans
1 cup packed light-brown sugar
1/2 cup granulated sugar
3 large eggs
2 teaspoons pure vanilla extract
1/2 cup water
1 pound carrots (8 to 10 medium carrots), peeled and shredded on a box grater or in a food processor (about 2 3/4 cups)
2 cups pecans (1 cup finely chopped for batter, 1 cup coarsely chopped for decorating sides of cake)
Easy Cream Cheese Frosting for Carrot Cake

Steps:

  • Preheat oven to 350 degrees. Butter three 9-inch round cake pans. Line bottoms with parchment paper, and butter parchment. Dust with flour, tapping out excess. Whisk together flour, baking powder, baking soda, cinnamon, salt, ginger, and nutmeg.
  • Beat butter and sugars with a mixer on medium speed until pale and fluffy. Add eggs, one at a time, beating well after each addition. Beat 3 minutes. Add vanilla, water, and carrots. Beat until well combined, about 2 minutes. Reduce speed to low, and add flour mixture, then finely chopped pecans.
  • Scrape batter into prepared pans, dividing evenly. Bake, rotating pans halfway through, until golden brown and a toothpick inserted into centers comes out clean, about 30 minutes. Let cool in pans on a wire rack for 15 minutes. Run a knife around edges of cakes to loosen, and turn out cakes onto rack. Turn right side up, and let cool completely.
  • Using a serrated knife, trim rounded top of 2 cakes. Place one trimmed cake, cut side up, on a serving platter. Spread 1 cup frosting over cake. Top with second trimmed cake, cut side down. Spread 1 cup frosting over cake. Top with remaining cake. Spread remaining frosting over top and sides. Gently press coarsely chopped pecans onto sides of cake. Refrigerate 1 hour before serving.

A friend gave this recipe to me years ago. Since my husband doesn't care for cream cheese frosting, this worked out well. The cake is very moist and rich since it absorbs the "Icing".

3/4 cup vegetable oil

3/4 cup buttermilk
2 teaspoons vanilla
2 cups flour

1 can crushed pineapple, drained
2 cups grated carrots
1 cup chopped walnuts or 1 cup pecans
1 cup flaked coconut
1 cup sugar
1/2 cup buttermilk
1/4 teaspoon baking soda
2 tablespoons light corn syrup
1/4 cup butter or 1/4 cup margarine
1/2 teaspoon vanilla

Steps:

  • Combine and mix the first 5 ingredients well.
  • Mix the flour, cinnamon, baking soda and salt together and mix into the egg and buttermilk mixture.
  • Stir in the crushed pineapple, grated carrot, chopped nuts and coconut.
  • Pour into a 13 x 9 x 2 inch baking dish that has been greased and floured.
  • Bake at 350 degrees for about 55 minutes.
  • Shortly before the cake is done, prepare the icing: COMBINE the sugar, buttermilk, baking soda, corn syrup and butter in a saucepan.
  • Bring to boil and boil 5 minutes.
  • Remove from heat and stir in the vanilla.
  • Pour over the cake while the cake is HOT.
  • The cake will absorb the icing.
  • Let cool completely before cutting.

One of my sisters, Beth, learned how to make carrot cake in home economics class in 1978. A few years ago I asked her to write down what she remembered from the recipe. Only remembering two-thirds of the ingredients, I completed the recipe by trial and error. It was worth all the effort. Simply delicious.

1 cup vegetable oil
2 cups white sugar
3 eggs, beaten
1 teaspoon vanilla extract
2 cups all-purpose flour

1 cup shredded coconut

  • Preheat oven to 350 degrees F (175 degrees C).
  • Grease and flour a 9x13-inch baking pan.
  • Whisk vegetable oil, white sugar, eggs, and 1 teaspoon vanilla extract together in a bowl until smooth.
  • Combine flour, cinnamon, baking soda, and salt in a separate bowl.
  • Stir oil mixture into flour mixture until a well-mixed batter forms.
  • Fold carrots, pineapple, coconut, and walnuts into batter; pour into prepared baking pan.

Buttermilk-Glazed Pineapple-Carrot Cake image

This easy pineapple-carrot cake first ran in The New York Times Magazine in the spring of 1972, and it is one of the recipes that former Times columnist Joyce Purnick clipped and saved for decades in her recipe file. This is a snacking cake, mighty sweet, which benefits from a cup of coffee or another bitter drink to cut through the sugar. It might remind you of Jamaican black cake. Pour some rum on top if you so desire.

1 teaspoon baking soda
1/2 teaspoon salt
1 1/2 cups/300 grams sugar
2 teaspoons cinnamon
3 eggs
3/4 cup/175 milliliters buttermilk
1/2 cup/120 milliliters oil
2 teaspoons vanilla
1 (8 ounce/225 grams) can crushed pineapple
2 cups/250 grams finely grated raw carrots (there should not be any liquid)
1 cup/120 grams coarsely chopped nuts
1 cup/85 grams unsweetened flaked coconut
2/3 cup/135 grams sugar
1/4 teaspoon baking soda
1/3 cup/80 milliliters buttermilk
1/3 cup/75 grams butter
2 tablespoons light corn syrup
1/2 teaspoon vanilla

Steps:

  • Heat oven to 350 degrees.
  • Sift the flour, baking soda, salt, sugar and cinnamon together in a bowl. Beat the eggs with the buttermilk, oil and vanilla, and add to the dry ingredients all at once. Mix until smooth.
  • Fold in the pineapple, grated carrot, nuts and coconut, and pour into a greased and floured 9-by-13-inch baking pan. Bake 45 minutes or until the center springs back when lightly touched.
  • About 15 minutes before the cake is done, make the glaze. Combine all the ingredients except the vanilla in a small saucepan. Bring to a boil, stirring, over medium heat and boil gently five minutes.
  • Remove from the heat and stir in the vanilla.
  • Take the cake out of the oven and immediately prick it all over with a fork and slowly pour the buttermilk glaze over the top. Cool in pan. Cut into slices.
