5 carrots, peeled and cut into 1/2 inch pieces
2 red bell peppers, quartered
1 large onion, cut into large pieces
3 cloves garlic, peeled
salt and ground black pepper to taste
2 teaspoons ground paprika
1 teaspoon ground cumin
1 tablespoon olive oil
1 (32 fluid ounce) container vegetable broth
1 bay leaf
½ teaspoon dried oregano
1 pinch red pepper flakes, or to taste
½ teaspoon apple cider vinegar, or more to taste
1 dash hot sauce, or to taste

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Mix carrots, red bell peppers, onion, garlic, paprika, cumin, salt, and pepper together in a bowl. Transfer to a rimmed baking sheet. Drizzle olive oil on top and toss.
  • Roast in the preheated oven until tender, about 30 minutes.
  • Bring vegetable broth, bay leaf, and oregano to a boil in a soup pot. Add roasted vegetables to the pot. Remove bay leaf and add red pepper. Simmer for 15 minutes.
  • Blend soup with an immersion blender.
  • Add apple cider vinegar to pureed soup. Serve with hot sauce.

6 medium-size carrots, peeled and cut into 1-inch rounds
2 roasted red peppers, coarsely chopped
2 teaspoons soft, unsalted butter or 4 teaspoons low-fat yogurt
1/4 teaspoon ground mace
1 1/2 teaspoons salt

Steps:

  • Place the carrots in a medium-sized saucepan and cover with water. Bring to a boil over medium-high heat. Reduce heat and simmer until tender, about 10 minutes. Drain well.
  • Place the carrots in a food processor with the roasted red peppers. Process until smooth, stopping to scrape down the sides of the bowl. Add the butter or yogurt, mace and salt. Process until well combined. Divide among 4 plates and serve immediately.

Roasted red pepper puree is incredibly useful, easy to make, and delicious-you can eat it with a spoon. It contains two basic ingredients, red bell peppers and olive oil, and both are always readily available. And since making a batch is about as difficult as scrambling an egg, and the puree keeps fairly well, there's little reason not to have some on hand. If you are so inclined, you can flavor it with any number of herbs (thyme, basil, and parsley are fine) or spices, like cumin or chile powder (or minced chiles). I usually leave the sauce unadulterated. Of course you can use bottled or canned preroasted peppers ("pimientos") here, though the results will not be as fresh tasting.

4 large red bell peppers (about 2 pounds)
Salt
1/2 cup extra virgin olive oil

Steps:

  • Preheat the oven to 500°F. Line a roasting pan with enough aluminum foil to fold over the top later. Put the bell peppers in the pan and the pan in the oven. Roast, turning the peppers about every 10 minutes, until they collapse, about 40 minutes.
  • Fold the foil over the peppers and allow them to cool. Working over a bowl, remove the core, skin, and seeds from each of the peppers, reserving some of the liquid.
  • Put the pepper pulp in a food processor with about 2 tablespoons of the reserved liquid. Add a large pinch of salt and turn on the machine; drizzle the oil in through the feed tube. Stop the machine, then taste and add more salt and/or olive oil if necessary. Store, well covered, in the refrigerator (for several days) or the freezer (up to a month).
  • Add a couple tablespoons of puree to the cooking liquid of any simmering grain-rice, couscous, or quinoa, for example.
  • Use in place of or with tomatoes in pasta sauce. For example, sauté several vegetables and bind them with the puree during the last minute of cooking.
  • Fold into omelets or scrambled eggs, with or without cooked vegetables.
  • Combine with chopped fresh basil, grated Parmigiano-Reggiano, and minced garlic for a pestolike pasta sauce.
  • Emulsify with fresh lemon juice, salt, and pepper to make a beautiful salad dressing.
  • Spread on crostini or pizza before baking.
  • Use as a finishing sauce for roasted eggplant, zucchini, or other vegetables.
  • Serve as a condiment with grilled or roasted fish, meat, or chicken.
  • Stir into soups or stews just before serving.
  • Mash a couple tablespoons of puree, with a little olive oil, minced garlic, and cracked black pepper, into fresh, salty cheese-like feta or goat-to make a dip for bread or vegetables.

1 teaspoon cinnamon
Salt, to taste
1/4 teaspoon freshly ground black pepper
2 tablespoons unsalted butter
2 cups whole milk
1 teaspoon lemon juice

Steps:

  • Heat the oven to 450 degrees F. In a roasting pan, combine the carrots with the oil, cumin, cinnamon, salt and pepper. Roast the carrots, stirring occasionally until tender and browned, about 25 minutes. In a food processor puree the carrots with the butter, milk, and lemon juice.

BRAISED CARROTS WITH CUMIN AND RED PEPPER



Braised Carrots With Cumin and Red Pepper image

This recipe calls for braising the humble carrot in olive oil and garlic, then seasoning with toasted cumin and red pepper. They taste good hot or at room temperature which makes them ideal for a large dinner party or potluck. Use real carrots and peel your own. Which is not to say that those miniature peeled carrots in bags aren't real, but, convenience aside, they often lack true carrot flavor.

3 pounds medium carrots, peeled
4 tablespoons olive oil
Salt
6 garlic cloves, sliced
1/2 teaspoon cumin seed, toasted and coarsely ground
2 teaspoons mild red pepper flakes, like Aleppo or Marash
2 teaspoons paprika, smoked or unsmoked

Steps:

  • Cut the carrots lengthwise, or quarter them if you wish.
  • Warm the olive oil in a large Dutch oven or heavy bottomed pot over medium heat. Add the carrots and turn them in the oil to coat. Season generously with salt. Add the garlic and 1 cup of water. Bring to a boil, then reduce the heat to a gentle simmer and cover the pan. Cook for about 10 minutes, until the carrots are just tender.
  • Remove the lid, raise the heat, and let any remaining water cook away.
  • Sprinkle the cumin, red pepper and paprika over the carrots and transfer them to an oven-proof serving dish. Serve hot or at room temperature. The carrots may be left at room temperature for 2 to 3 hours, or refrigerated and brought to room temperature, before reheating in a 400-degree oven for 10 minutes.

2 red peppers, approximately 1/2 pound each, or slightly less
1 tablespoon dry white wine
1/4 teaspoon vinegar, preferably balsamic vinegar or red-wine vinegar
Salt to taste if desired
Freshly ground pepper to taste

Steps:

  • Roast and peel the peppers over a gas flame or under a broiler. Cook, turning the peppers as they start to char. They should be charred on all sides, top and bottom. Remove the peppers and drop them into a paper bag. Let stand until cool enough to handle or peel them under cold running water. Discard the peel. Cut away and discard the core and veins. Scrape away and discard the seeds.
  • Cut the flesh of each pepper into cubes and put the cubes into the container of a food processor or, preferably, an electric blender.
  • Add the wine, vinegar, salt and pepper. Blend as thoroughly as possible. Pour and scrape the mixture into a saucepan. Bring to the simmer, stirring, before using.

1 medium sweet red pepper
1 pound carrots, sliced
1 medium onion, chopped
2 tablespoons uncooked long grain rice
2 tablespoons butter
2 cans (14-1/2 ounces each) chicken broth
2 cups water
1/3 cup orange juice
4-1/2 teaspoons snipped fresh dill
2 teaspoons grated orange zest
1/2 teaspoon salt
1/2 teaspoon each dried marjoram, thyme and rosemary, crushed
1/2 teaspoon rubbed sage
1/4 teaspoon pepper

Steps:

  • Broil red pepper 4 in. from the heat until skin is blistered, about 6 minutes. With tongs, rotate pepper a quarter turn. Broil and rotate until all sides are blistered and blackened. Immediately place pepper in a bowl; cover and let stand for 15-20 minutes. Peel and discard charred skin. Remove stem and seeds; set pepper aside., In a large saucepan, cook the carrots, onion and rice in butter until onion is tender. Stir in the broth, water, orange juice, dill, orange zest, salt, marjoram, thyme, rosemary, sage and pepper. Bring to a boil. Reduce heat; cover and simmer for 20-25 minutes or until carrots and rice are tender. Cool for 10 minutes. , In a blender, puree carrot mixture and roasted pepper in small batches. Return to the pan; heat through.
