COPYCAT CARRABBA'S MARINARA SAUCE



Copycat Carrabba's Marinara Sauce image

This is the real deal - Carrabbas's Marinara Sauce. This Marinara Sauce is ideal for dipping all your favorite appetizers. It's fast and easy, and ready in just minutes!

2 tablespoons Extra Virgin Olive Oil
1 small Yellow Onion (, Finely chopped)
2 scallions or green onions ((white & green part) chopped fine)
2 anchovy Fillets in oil (, drained and finely chopped (Optional) [See Note 1])
4 garlic cloves (, minced)
1/4 cup Sweet Red Wine
1 can ((28 oz.) whole tomatoes in juice)
1/4 cup basil (, fresh (chopped or torn))
1 teaspoon Dried Oregano
1/2 teaspoon Crushed, Red Pepper Flakes
1/4 teaspoon Ground Black Pepper

Steps:

  • Heat the oil in a medium saucepan over medium heat.
  • Add the onion, and cook, stirring occasionally, until translucent, about 5 minutes. Add the scallions, anchovies (if using), garlic, and cook. Stir occasionally until garlic is fragrant for about 1 minute.
  • Add the wine. Pour the tomatoes and their juices into a bowl. Crush the tomatoes between your fingers, and pour the mixture into the saucepan. Add the oregano, basil, hot pepper flakes, and pepper and bring to a simmer.
  • Reduce the heat to med.-low. Simmer, stirring often, until the tomato juices have thickened and the sauce has reduced slightly, about 30 minutes.
  • The sauce can be cooled, covered, and refrigerated for up to 3 days. Or freeze for up to 2 months and thaw overnight in the refrigerator before using.

1 1/2 cups Italian-style dried breadcrumbs
1 1/3 cups freshly grated Parmesan
1 teaspoon salt
2 (16-ounce) blocks pasteurized mozzarella cut into 4 by 1/2-inch sticks
4 large eggs, beaten to blend
1 1/2 cups vegetable oil
4 cups Marinara Sauce, recipe follows
1/2 cup extra-virgin olive oil
2 small onions, finely chopped
2 garlic cloves, finely chopped
2 stalks celery, finely chopped
2 carrots, peeled and finely chopped
1/2 teaspoon sea salt, plus more to taste
1/2 teaspoon freshly ground black pepper, plus more to taste
2 (32 ounce) cans crushed tomatoes
2 dried bay leaves

Steps:

  • Stir the bread crumbs, 1 cup of Parmesan and 1 teaspoon of salt in a medium bowl to blend. Dip the cheese in the eggs to coat completely and allow the excess egg to drip back into the bowl. Coat the cheese in the bread crumb mixture, patting to adhere and coat completely. Place the cheese sticks on a baking sheet. Repeat dipping the cheese sticks in the egg and bread crumb mixture to coat a second time. Cover and freeze until frozen, about 2 hours and up to 2 days.
  • Heat the oil in a large frying pan over medium heat. Working in batches, fry the cheese until golden brown, about 1 minute per side. Transfer the fried cheese to plates. Sprinkle with the remaining cheese and serve with the Marinara Sauce.
  • In a large casserole pot, heat the oil over a medium-high flame. Add the onions and garlic and saute until the onions are translucent, about 10 minutes. Add the celery, carrots, and 1/2 teaspoon of each salt and pepper. Saute until all the vegetables are soft, about 10 minutes. Add the tomatoes and bay leaves, and simmer uncovered over low heat until the sauce thickens, about 1 hour. Remove and discard the bay leaf. Season the sauce with more salt and pepper, to taste. (The sauce can be made 1 day ahead. Cool, then cover and refrigerate. Rewarm over medium heat before using.)

MOZZARELLA STICKS

Serve these moreish mozzarella chips hot with your favourite dip. They make a great side dish or snack at a party and will go down a storm with guests

400g block mozzarella (not in water)
50g flour
2 eggs
150g breadcrumbs
2 tsp smoked paprika
2 tsp dried oregano
vegetable or sunflower oil for frying
dips , to serve

Steps:

  • Cut the mozzarella into 'chips'. Tip the flour into a bowl and season well. Whisk the eggs in a second bowl and tip the breadcrumbs, paprika and oregano into a third. Coat the mozzarella sticks in the flour, then the egg, then the breadcrumbs. Transfer to a parchment-lined tray and freeze for at least 2 hrs.
  • Heat enough oil to come 2-3cm up the side of a saucepan. When hot, drop in a test chip - it should sizzle straight away and brown within a minute or two. The secret is to cook them long enough to crisp up the outside without letting the mozzarella ooze out - it may take you a few practice chips to get it right. Cook the chips in batches and drain on kitchen paper. Serve hot with your favourite dip.

2 eggs, beaten
¼ cup water
1 ½ cups Italian seasoned bread crumbs
½ teaspoon garlic salt
⅔ cup all-purpose flour
⅓ cup cornstarch
1 quart oil for deep frying
1 (16 ounce) package mozzarella cheese sticks

Steps:

  • In a small bowl, mix the eggs and water.
  • Mix the bread crumbs and garlic salt in a medium bowl. In a medium bowl, blend the flour and cornstarch.
  • In a large heavy saucepan, heat the oil to 365 degrees F (185 degrees C).
  • One at a time, coat each mozzarella stick in the flour mixture, then the egg mixture, then in the bread crumbs and finally into the oil. Fry until golden brown, about 30 seconds. Remove from heat and drain on paper towels.

1 (8 ounce) package cream cheese, softened
1 (8 ounce) package shredded mozzarella cheese
1 (8 ounce) package imitation crabmeat, chopped
¼ cup sliced green onions
1 tablespoon powdered sugar
½ teaspoon salt
¼ teaspoon garlic powder
½ cup all-purpose flour
2 large eggs
2 tablespoons water
1 ¾ cups panko bread crumbs
2 cups vegetable oil for frying, or as needed

Steps:

  • Line an 8-inch square baking pan with parchment paper so the paper hangs over the sides of the pan.
  • Stir together cream cheese, mozzarella cheese, crabmeat, green onions, powdered sugar, salt, and garlic powder in a bowl until combined. Transfer to the prepared pan, spreading to an even layer. Freeze for 30 minutes.
  • Lift cream cheese mixture from the pan using the parchment paper. Cut the frozen block in half, then cut each half crosswise into 8 sticks (you will have sixteen 4x1-inch sticks.)
  • Put flour in a shallow dish. Beat eggs and water together in a second shallow dish. Put panko in a third shallow dish.
  • Dredge each cream cheese stick in flour; shake off excess. Dip into egg mixture, then lift up so excess egg drips back into the bowl. Press into panko to coat both sides. Place the breaded sticks on a baking sheet and freeze for 15 minutes.
  • Preheat the oven to 200 degrees F (95 degrees C).
  • Add 1 1/2 inches of oil to a medium saucepan. Heat oil to 375 degrees F (190 degrees C).
  • Fry 3 or 4 sticks at a time until golden brown, about 1 minute. (Keep uncooked sticks in freezer until ready to fry.)
  • Drain fried sticks on paper towels, then transfer to a baking sheet and keep warm in the preheated oven. Repeat to fry remaining sticks.
