KARDEA'S CARAMEL APPLE CAKE

Number Of Ingredients 14

Nonstick cooking spray or unsalted butter, for greasing the pan
3 cups all-purpose flour, plus more for the pan
2 teaspoons ground cinnamon
1 teaspoon baking soda
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
3 medium apples (I used a mix of green and Pink Lady apples)
1 1/2 cups vegetable or canola oil
2 cups granulated sugar
1/2 cup dark brown sugar
2 teaspoons vanilla extract
3 large eggs
One 11-ounce package caramels, preferably Kraft Caramels
1/4 cup whole milk

Steps:

  • For the cake: Preheat the oven to 325 degrees F. Generously grease and flour a 9- or 10-inch Bundt pan.
  • Mix together the flour, cinnamon, baking soda, nutmeg and salt in a medium bowl. Set aside. Peel, core and dice 3 cups apples. Set aside.
  • Blend the oil, sugars and vanilla in a bowl with a handheld electric mixer or in a stand mixer until well mixed. Add the eggs one at a time, mixing well after each addition. Stir in the dry ingredients until just incorporated. The batter will be very thick. Fold in the apple pieces. Spoon the batter evenly into the prepared pan.
  • Bake the cake until a toothpick inserted in the center comes out with only a few moist crumbs, about 1 hour 15 minutes. Let cool for 20 to 30 minutes, then remove the cake from the pan to a cooling rack.
  • For the caramel sauce: Meanwhile, heat the caramels and milk in a saucepan on medium-high heat, stirring constantly, until the caramels are completely melted and the sauce is smooth, about 2 minutes. Let cool for 1 to 2 minutes, then drizzle over the cake just before serving.

CAKE
3 c all-purpose flour
1 tsp baking soda
1 tsp salt
4 eggs
1 1/2 c vegetable oil
2 c sugar
2 tsp vanilla
3 c peeled and diced apple, I used Gala you can use whatever you like
1 c chopped nuts, walnuts or pecans
CARMEL GLAZE
1 c brown sugar, firmly packed
1/4 c milk
1 Tbsp butter
1/2 tsp vanillia

Steps:

  • 1. Prepare a 10" bundt pan or tube pan with shortening and a dusting of flour.
  • 2. Sift flour, salt, and baking soda together in a bowl and set aside.
  • 3. In the mixer, cream the sugar, eggs, and oil together until smooth.
  • 4. Then add vanilla.
  • 5. Add the dry ingredients a little at a time until smooth, about 2 min on medium speed.
  • 6. Fold in the chopped apples and nuts stir real good to mix in well.
  • 7. Pour in the prepared pan.
  • 8. Bake at 350 degrees for 1 hour.
  • 9. When finished remove and cool 10 min on a rack in pan.
  • 10. Then convert onto a cake platter.
  • 11. To prepare the glaze, over medium heat melt the butter.
  • 12. Add sugar, vanilla, and stir in the milk. Stir constantly until it begins to form a thickening like consistency.
  • 13. Pour over the still warm cake and allow to drizzle over the side and down inside the middle.
  • 14. This delish cake can be served hot out of the oven with a side of vanilla ice cream and another drizzle of caramel sauce over the ice cream yumm some good eating.

  • Add the dry mixture to the wet mixture in 3 intervals stirring just until combined. Add the apples and pecans stirring just until mixed. Spoon the batter into the prepared pan. Bake for 55-65 minutes or until a toothpick inserted in the center comes out clean. Let the cake cool in the pan for 15-20 minutes before inverting.
  • In a small saucepan over medium add the butter, brown sugar, and cream. Bring to a boil while stirring to dissolve the sugar. Remove from the heat and stir in the vanilla. Drizzle over the warm cake.
