CLASSIC CARAMEL CORN
Sweet and crunchy, this caramel corn is easy to make and tastes better than the county fair's.

Steps:
- Spray large shallow roasting pan with cooking spray. Add popcorn and place in preheated 250 degrees F oven while preparing caramel.
- Mix brown sugar, corn syrup, butter and salt in a heavy 2-quart saucepan. Stirring constantly, bring to a boil over medium heat.
- Boil 5 minutes without stirring. Remove from heat. Stir in baking soda and vanilla; mix well.
- Pour syrup over warm popcorn, stirring to coat evenly.
- Bake for 45 minutes, stirring occasionally. Remove from oven and spread on foil that has been sprayed with cooking spray.
- Cool; break apart. Store in tightly covered container.

CARAMEL PIE
Steps:
- In a large pot, place the can of sweetened condensed milk with the label taken off, in the pot and cover with water. Cook on high until water comes to a boil, then turn on medium/high for 4 hours, only adding water to keep the can covered.
- Carefully open can and pour into pie shell. Cool pie in refrigerator. When completely cooled, top with frozen whipped topping. Serve.

CARMEL POPCORN PIE
I found this recipe in one of my grandma's recipe boxes. It is printed on a bag that had contained Kraft caramels with a price of 39 cents for a 1 pound bag. If you like popcorn balls, you will like this.

Steps:
- 1. Place caramels and water in the top of a double boiler. Heat, stirring frequently, until the caramels are melted and smooth.
- 2. Pour over the popcorn (use large bowl) and toss until every kernel is coated.
- 3. With hands slightly moistened with cold water, pack the popcorn into a 10-inch pan which has been rinsed with cold water. Let stand until the surface is dry.
- 4. With a sharp knife, cut the popcorn pie into 6 wedges. Remove with a spatula to a serving plate.

- Preheat oven to 250 degrees F (95 degrees C). Place popcorn in a very large bowl.
- In a medium saucepan over medium heat, melt butter. Stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly. Boil without stirring 4 minutes. Remove from heat and stir in soda and vanilla. Pour in a thin stream over popcorn, stirring to coat.
- Place in two large shallow baking dishes and bake in preheated oven, stirring every 15 minutes, for 1 hour. Remove from oven and let cool completely before breaking into pieces.

- Heat oven to 250°F.
- Beat pudding mixes and 2 cups milk with whisk 2 min.; pour into crust. Top with COOL WHIP. Refrigerate 2 hours.
- Meanwhile, microwave caramels and remaining milk in microwaveable bowl on HIGH 1-1/2 min. or until caramels are completely melted and sauce is well blended, stirring every 30 sec. Drizzle over popcorn in large bowl. Add nuts; toss to evenly coat popcorn and nuts with caramel sauce.
- Spread popcorn mixture onto rimmed baking sheet sprayed with cooking spray.
- Bake 30 min., stirring every 10 min. Cool completely.
- Break popcorn mixture into small pieces if necessary; sprinkle over pie just before serving.
