Steps:
- In a large nonstick skillet, heat oil over medium-high heat. Add chicken and seasoning; saute until chicken is lightly browned and no longer pink, about 5 minutes. Add tomatoes, pineapple and barbecue sauce. Bring to a boil; cook and stir until flavors are blended and chicken is cooked through, 5-7 minutes. Serve with rice and, if desired, cilantro.

- In a medium mixing bowl combine chili sauce, green onions, jalapeno peppers, garlic, oil, lemon juice, chicken broth or water, salt, ginger, and allspice.
- Pour desired amount of sauce into small bowl.
- Brush on chicken or pork frequently the last 10 minutes of grilling.
- Makes 2-1/3 cups (enough for 6 to 8 pounds chicken pieces or 3 to 4 pounds boneless pork).
- Store unused portion of sauce in refrigerator up to 3 weeks.

CARIBBEAN CHICKEN
Steps:
- Puree all ingredients except chicken in food processor. Add marinade and chicken to re-sealable plastic bag, mix thoroughly and let marinate, refrigerated, for 4 to 8 hours.
- Preheat oven to 350 degrees F.
- Heat grill to high, remove excess marinade from chicken and place on grill. Grill each side of chicken for 3 to 4 minutes then place on a pan and finish in the oven for 15 minutes.
- Squeeze a lime wedge over each piece of chicken and serve.

- Gather the ingredients.
- Into a food processor add pineapple chunks, onion, seeded serrano peppers, and garlic.
- Blend mixture and set aside.
- In medium saucepan, heat olive oil and add puree. Be careful as the onion and peppers can cause fumes, so open a window.
- Cook mixture for one to two minutes, stirring often.
- Add ketchup, vinegar, herbs, spices, peppers, and salt to the saucepan.
- Allow sauce to simmer on medium-low heat for six to eight minutes.
- Remove from heat and let the mixture cool completely before using.

- Cut pork into 1-inch pieces. Add oil to a large skillet and place over medium-high heat. Add pork and saute 5 minutes or until browned. Season with a touch of salt and lots of fresh ground pepper while browning.
- Place browned pork, bell pepper, and green onion pieces in a 4-quart electric slow cooker coated with cooking spray.
- Combine hoisin sauce and next 7 ingredients (through garlic) in a small bowl. Pour chicken broth and hoisin mixture over the pork and vegetables and stir well to combine.
