Field editor Mary Steiner of West Bend, Wisconsin sent her recipe for these melt-in-your-mouth morsels. Cardamom, almond extract and walnuts enhance the flavor of these buttery cookies.

Yield about 6 dozen.

Number Of Ingredients 7

2 cups butter, softened
2-1/2 cups confectioners' sugar, divided
1 teaspoon ground cardamom
1/8 teaspoon salt
1-1/2 teaspoons almond extract
3-3/4 cups all-purpose flour
1 cup finely chopped walnuts

Steps:

  • Preheat oven to 350°. Cream butter, 1-1/2 cups confectioners' sugar, cardamom and salt until light and fluffy. Beat in extract. Gradually beat in flour. Stir in walnuts., Shape dough into 1-in. balls; place 2 in. apart on ungreased baking sheets. Bake until edges are golden, 15-17 minutes. , While warm, roll cookies in remaining confectioners' sugar. Cool on wire racks.

1 cup sugar
1 cup butter
1 cup honey
2 eggs
1 teaspoon vanilla extract
1 tablespoon cardamom
2 teaspoons ginger
1 teaspoon nutmeg
1 teaspoon lemon peel
1 teaspoon baking soda
4 cups all-purpose flour

Steps:

  • In a saucepan over low heat, melt together sugar, butter and honey. Let cool.
  • Mix together eggs, vanilla, baking soda and spices. Gradually add to cooled honey mixture.
  • Slowly add 4 cups of flour to mixture. Stir until well blended. Drop by teaspoonfuls onto cookie sheets about 2 inches apart. Bake at 350 degrees F (180 degrees C) until golden (about 12-15 minutes).

1 cup butter
1 cup honey
2 eggs
1 teaspoon vanilla extract
1 tablespoon cardamom
1 teaspoon nutmeg
2 teaspoons ginger
1 teaspoon baking soda
4 cups all-purpose flour

Steps:

  • In a saucepan over low heat, melt together sugar, butter and honey. Let cool.
  • Mix together eggs, vanilla, baking soda, cardamom, nutmeg and ginger. Gradually add cooled honey mixture.

1 cup flour
3/4 cup toasted almond
1/2-1 cup butter
1/4 cup sugar
1 teaspoon vanilla
1/2 teaspoon ground cardamom
1/2 teaspoon grated orange zest
1 pinch salt
powdered sugar

Steps:

  • Preheat oven to 325F degrees.
  • In a food processor, combine flour and next 7 ingredients.
  • Process until mixture resembles fine meal and dough starts forming.
  • Shape into 1" balls, place on cookie sheet and bake until firm to the touch, about 20 minutes.
  • Sprinkle with powdered sugar, cool.

Number Of Ingredients 14

1 cup butter, at room temperature
1/2 cup granulated sugar
1/2 cup light brown sugar
1 egg, separated
1 teaspoon vanilla extract
2 cups flour
2 teaspoons ground cardamom
1/4 teaspoon salt
1/3 cup chopped nuts
1 1/2 tablespoons butter, melted
1/2 teaspoon vanilla extract
1 cup powdered sugar
milk, as needed
candied fruit, if desired, for garnish

Steps:

  • Preheat oven to 275 degrees. In a large bowl using an electric mixer on medium-high speed, beat butter, granulated sugar and brown sugar until creamy.
  • Add egg yolk and vanilla extract and mix until thoroughly combined. In a medium bowl, whisk together flour, cardamom and salt. Reduce speed to low and add flour mixture to butter mixture until thoroughly combined.
  • Spread dough into an ungreased 9- by 13-inch baking pan. Brush egg white over dough, sprinkle evenly with chopped nuts and bake for 1 hour.
  • Remove from oven and transfer to a wire rack to cool completely.
  • To make icing: In a large bowl, using an electric mixer on medium speed, beat melted butter and vanilla into powdered sugar. Add milk, 1 teaspoon at a time, until icing reaches drizzling consistency. Spread icing over slightly warm bars. Allow icing to set and cut bars into cookies while bars are still slightly warm. Decorate with candied fruit, if desired.
