CARDAMOM AND FENNEL TEA
Cardamom and Fennel tea is my every day (wake up my senses) tea. Now, someone will ask me, "3 years of blogging and so many years of cooking, why didn't you share this recipe before?" I will say "I always thought this tea is so common, everyone will know this recipe." It is not until recently when one of my friends had tea with me and asked about the recipe and I realized, may be its worth sharing. Someone out there would like to try my family staple morning tea recipe. Growing up, I don't remember a morning (not even a single morning) waking up without smelling my mom's cardamom and fennel tea boiling on stove top and filling whole house with perfume of cardamom, fennel and strong black tea. Till today, without a cup of this tea, feels like day has not started yet.

Steps:
- In a sauce pan, bring water to a rolling boil. Add tea, fennel & cardamom and simmer for 6-7 minutes till tea gives nice dark black color to the water and also water has reduced from original 2 cup to about 1 and 1/2 cup.
- Now add milk and continue simmering for 1 more minute. Remove from heat, strain with a tea strainer and serve with your choice of breakfast bread. Enjoy!!
CARDAMOM, CORIANDER, FENNEL TEA WITH PEPPERMINT OIL
I modified this recipe to suite my needs and was thrilled that I could find something to help calm the stomach down. This would be perfect for the person who has problems with stomach cramping or that person who slightly indulged in that spicy meal!!!

Steps:
- Warm the teapot by rinsing it out with hot tap water. Place all the seeds in the warmed pot and cover with the boiling water.
- Steep for 5 minutes and allow to brew to cool. Strain and add maple syrup, if desired.
- Note: I have found the peppermint oil is very soothing on the stomach and leaves your breath nice and fresh. One drop of oil is sufficient -- two is overpowering!. It is important to use a brand of essential oil that can be ingested.

CARDAMOM TEA
When feeling down make this warming tea Drink hot with a little milk twice a day to ward off coughs and colds. In the Middle East and Turkey, green cardamom powder is used as a spice for sweet dishes as well as traditional flavouring. In Arabic, cardamom is called al-Hayl. South Asia green cardamon is often used in traditional Indian sweets and in tea, or chai, a common ingredient in Indian cooking, and is often used in baking in Scandinavia.

- Place all ingredients in 2 1/2 cups of water, heat, but do not boil, for half an hour and strain.
- Add honey and milk. Enjoy!
PEPPERMINT FENNEL TEA
This is one of the many recipes I came up with on my own while experimenting with my various tea herbs. I rather like this particular blend since I've discovered that fennel and mint go together quite well. I added some lemon verbena, too, to help round out the flavors. I strongly recommend you try this particular tea iced! Note: I've listed things in teaspoons because this website won't let me list it in parts, but it's technically in a ratio, so you can make whatever quantity you want.

SWEET FENNEL TEA FOR INDIGESTION
A simple herbal tea that's good for upset stomachs.Fennel has been used for centuries all over the world to sooth and relax the digestive system and freshen breath after a heavy meal.Fennel tea is gentle enough to give to colicky children,just omit the honey if they are very young and give a small spoonfull at the time.Fennel is also supposed to help milk production in nursing mothers and to help with other female problems,as it does have a slight hormonal affect on the female system.It's also just a nice hot drink to relax with before bed.

- Reduce the heat to medium and simmer ,reducing the liquid to 4 cups for a milder tea (beat for children)and to 3 cups for a stronger one.
- Add the honey,stir to dissolve,and let steep a few minutes until it is cool enough to drink.

- Bring two quarts of water, with the cardamom pods, to boil in a pot.
- Remove from heat and add the tea bags.
- Cover and let steep five minutes.
- Remove the tea bags and the cardamom.
- Put the Splenda or sugar in a gallon pitcher and add the tea.
- Fill the pitcher the rest of the way with cold water, chill, and enjoy.
