- Heat 2 teaspoons of the butter in a medium skillet over medium heat. Add the onions and cook, stirring often, until caramelized, about 20 minutes. Let cool and coarsely chop.
- Preheat oven to 425 degrees. Sift the flour, baking powder, salt and pepper into a large bowl. Stir in the onions. Rub in 3 tablespoons of cold butter and shortening until mixture resembles coarse meal. Make a well in the center and gently stir in the milk.
- Turn the dough out onto a lightly floured surface, gently knead until smooth and pat out to a thickness of 1 inch. Using a floured, 2-inch round cutter, cut out as many biscuits as possible. Gather the scraps, pat the dough back out and cut out more biscuits, repeating until all the dough is used. Place the biscuits in a greased 9-inch cake pan so they touch. Melt 1 teaspoon of butter and brush over the tops. Bake until well browned, about 20 minutes.

CARAMELIZED ONION BISCOTTI
This is a wonderful twist on a biscotti! I found this recipe in an italian magazine and they are often requested by my husband and his work crew! The caramelized onions bring out a wonderfully sweet and buttery goodness in these savory biscotti's. They would go great dipped in a nice warm homemade soup! Yum!

- In a medium skillet, melt 1 Tblsp. butter over medium heat. Add the chopped onions, honey, and 1/2 tsp. salt. Cook for around 10-15 min. or until tender and golden. cool.
- While the onions are cooling pre heat oven to 325 degrees. lightly grease a cookie sheet or a silpat works great! set aside.
- In a large bowl combine flour, sugar, baking powder, and the remaining 1 tsp. salt. Stir in the cooled onion mixture and grated lemon if using. Make a well in the center of the flour and onion mixture. Place eggs and egg yolks in the well and stir into the flour mixture. Melt remaining 6 Tblsp butter and add to mixture. Stir until combined. (It will be crumbly) Using your hands, kneed the dough for approx. 5 minutes until it comes together.
- Divide the dough into 2 equal portions. On a lightly floured surface, shape each portion into a 14" log. Place them on your prepared cookie sheet, flatten the logs slightly. Bake about 25 minutes or until golden and firm. Cool for approx. 15 min.
- Transfer logs to a cutting board. Use a serrated knife to cut each log diagonally into 1/2" slices. Place slices cut side down, on cookie sheet. Bake for 7-10 min. Turn slices over and bake for 7-10 minutes more or until golden and crispy. Cool.

- Heat the oil in a large deep frying pan over a low heat.
- Add the onions with a generous pinch of salt and cook slowly for 30-40 mins. Stir occasionally to prevent them from sticking or burning until they become soft and golden. If the onions start to catch, add a splash of water to the pan and mix well.
- Add the sugar and vinegar to give them a sweet, slightly sharp chutney flavour. Keep cooking on a low heat for another 5 mins, stirring occasionally until the mix is sticky, the sugar has dissolved and the vinegar has reduced. The onions are now ready to serve, or use in a recipe.

- In an 8-quart Dutch oven or heavy pot, melt butter over medium-high. Add onions and salt. Cook, stirring often, until softened and just beginning to brown, 35 minutes.
- Reduce heat to medium. Add sugar and cook, stirring often to scrape up any browned bits stuck to bottom of pot, 35 to 40 minutes (lower heat, if bottom of pot begins to scorch).
- When done, onions should be deep golden brown and have a jam-like consistency. Remove from heat; season with salt. Let cool completely.

- Halve both onions through root end. Using the tip of your knife, cut a V-shaped notch around root to remove it (this will ensure that all slices separate when you cut the onion).
