- Cook onions in dressing in large skillet on medium-low heat 15 min. or until onions are soft and caramelized, stirring occasionally.
- Meanwhile, cook carrots in boiling water in saucepan 2 to 3 min. or until crisp-tender; drain.
- Add carrots, zest, juice and sugar to onions in skillet; mix well. Cook on medium heat 2 to 3 min. or until carrots are heated through and evenly glazed, stirring frequently.

INSTANT POT CARAMELIZED ONIONS
Caramelized onions typically require a great deal of attention and time, as the low and slow cooking provide a perfectly tender and golden brown result. But thanks to the Instant Pot®, this typically labor-intensive recipe because an achievable weeknight dish. These sweet and jammy onions are the perfect accompaniment to sandwiches, grain bowls and more.

- Set a 6-quart Instant Pot® to high saute (see Cook's Note). Add the butter and olive oil to the pot. Once the butter has melted completely, add the onions, thyme, sugar, 1/2 teaspoon of salt and several grinds of pepper. Cook, stirring, until the onions start to sizzle and the mixture is thoroughly combined, 1 to 2 minutes.
- Follow the manufacturer's guide for locking the lid and preparing to cook. Set to pressure cook on high for 4 minutes. After the pressure-cook cycle is complete, follow the manufacturer's guide for quick release and wait until the quick-release cycle is complete (this should take about 2 minutes). Being careful of any remaining steam, unlock and remove the lid, then stir in the balsamic vinegar. At this point, the onions should be tender and blonde in color.
- Set the pot back to high saute and cook, stirring frequently and scraping any brown bits from the bottom and sides of the pot, until almost all the liquid has evaporated and the onions are a deep golden brown and saucy, about 30 minutes. Be sure to stir the onions frequently and watch them closely; you want to scrape the brown bits from the pot before they turn too dark and burn. Remove the thyme stems; taste and adjust the seasoning with salt and pepper.
BAKED CARROTS WITH CARAMELIZED ONIONS
This is something I just whipped up over the Christmas Holidays. Try to use larger carrots. My MIL loved it so much that she even asked me to write down the recipe. Hope you enjoy it as much as she did!

- Grease the bottom and sides of a covered casserole dish with 1 tablespoon of butter and set aside.
- Melt the other tablespoon of butter in a skillet and slowly cook the onions, stirring occasionally, until golden brown and tender.
- Preheat oven to 180C/350°F.
- While the onions cook, peel and THINLY slice the carrots and put them into the buttered casserole dish. The slices should be about the thickness of a nickel (or a pound coin in the UK). If they are too thick, they will take longer than noted to cook.
- When the onions are cooked, add them to the carrots and mix them around a bit.
- In a small bowl, combine the orange juice, honey, paprika, garlic powder, dill, cayenne (if using), melted butter, salt and pepper.
- Pour this mixture over the carrots, cover and bake for one hour. Remove from oven and test to see that carrots are firm but tender. If need be, return to oven and cook an additional 5-15 minutes.
- Enjoy now because I can almost guarantee that you won't have any leftovers!

- Blanch carrots in a pan of boiling salted water for 3 mins, drain well and pat dry.
- In a large pan, melt the butter and oil.
- Fry the carrots, onions and thyme over a low heat for 30 mins until golden.
- Stir in the sugar and red wine and bubble for a few mins to boil off the alcohol.
- Add the vinegar; continue to cook until syrupy, about 5 minutes
- Remove the sprigs of thyme and serve.

My younger brother, David, attended cooking school years ago and this was one of the recipes he taught the whole family to make. He has since passed, but this recipe will live on forever. It's very sweet and even if you don't like carrots, which I don't, you will love this recipe.

- To make this roasted carrots side dish with caramelized onions, start by peeling the carrots and slicing them into coins. Transfer to an oven dish and season with olive oil and salt. Bake in the oven at 355°F for 30 minutes. Add 1 tablespoon parsley for extra flavor before baking if desired.
- Peel the onions and cook them whole in already boiling water for about 20 minutes. Cut each onion in half. Melt 20 g butter in a pan with 1 tablespoon of sugar. Add the onions with the sliced side facing down and let them caramelize for 1 minute. Add ½ cup wine and continue cooking for another 3-4 minutes. Blanch the borage leaves for a couple of minutes in boiling water. Then transfer them to a bowl with ice water and dry on paper towels.
- Wrap each half section of onion in a borage leaf, closing it like a roulade. Sprinkle each roulade with 1 tablespoon grated parmesan cheese and cook on a wire rack in the same pan as the carrots for 3-4 minutes. Serve with marjoram and a few teaspoons yogurt.
