6 tablespoon butter (no substitutions)
1 cup pecans (I like this brand)
1 and ½ cup self-rising flour (I like this brand)
1 and ½ cup granulated sugar
2/3 cup milk (more if needed)
1 teaspoon pure vanilla extract (I like this brand)
1 and ½ cup brown sugar (packed, light )
1 and ½ cup water (hot )

Steps:

  • Preheat oven to 350 degrees.
  • Add butter to a 9x13 inch cake pan or casserole dish and melt in the oven.
  • Once butter is melted, sprinkle the pecans over butter.
  • In a bowl, mix flour, sugar, milk and vanilla. Stir to combine, but don't over-mix.
  • Pour batter over butter and pecans, do not mix.
  • Sprinkle brown sugar evenly over batter, do not stir.
  • Carefully pour the hot water over the mixture; do not stir.
  • Bake 30 to 35 minutes or until golden brown.

Pecans and caramel! The only thing that could make this decadent dessert better is NO guilt. Well you got it, this cobbler is gluten, sugar and grain free!

Number Of Ingredients 12

6 tbsp (75g) butter
1 1/2 cups (150g) pecans - chopped
1 1/2 cups (150g) almond flour
1/2 tsp baking powder
salt
1 tbsp cinnamon
1/2 cup (100g) erythritol
1 cup (236ml) heavy cream
1 tbsp vanilla
1/2 cup (90g) Sukrin Gold (or another brown sugar substitute)
1/8th (25g) erythritol
1 cup (236ml) boiling water

Steps:

  • Preheat your oven to 350°F/175°C.
  • Place your butter in a 9×13 inch casserole dish and put in the oven to melt.
  • In a mixing bowl, whisk together your almond flour, erythritol, baking powder, vanilla and heavy cream. Set aside.
  • Once the butter is melted in your casserole dish, pour in the chopped pecans and spread evenly around the casserole dish.
  • Pour the almond flour batter on top of the pecans. Spread it around evenly but don't whisk it all together. Just spread it!
  • Whisk together your Sukrin Gold and erythritol. Spread evenly on top of the almond flour batter.
  • Pour the boiling water on top (do not mix) and place in the oven.
  • Bake for 90 minutes. I realize that this sounds absurd, but the water needs to boil off and it will give you a nice caramel flavour. Keep your eye on it and check at 45 minutes, then every 10 minutes after. If it starts to smell like burning, take it out!

nonstick cooking spray
1/2 c unbleached all purpose flour
1/2 c oat flour
1/8 tsp salt
1/4 c (1/2 stick) butter
1/4 c cold water
3 eggs, lightly beaten
1 1/2 c sugar
1 1/2 c light-color corn syrup
3 Tbsp butter, melted
1 1/2 tsp vanilla extract
1 1/2 c pecans, coarsely chopped
vanilla ice cream

Steps:

  • 1. For pastry, in a medium bowl stir together both flours and salt. Using pastry blender cut in the 1/4 cup butter until pieces are pea-size. Sprinkle 1 Tbsp. of the cold water over part of the flour mixture; gently toss with a fork to mix. Push moistened pastry to side of bowl. Repeat moistening flour mixture, using 1 Tbsp. of water at a time, until all of the flour mixture is moistened. Form dough into a ball.
  • 2. On a lightly floured surface use your hands to slightly flatten pastry into a square. Roll pastry from center to edges into a 9x9-inch square, lightly dusting with flour as needed. Set aside.
  • 3. For filling, in a large bowl combine eggs, sugar, corn syrup, the 3 Tbsp. melted butter, and vanilla. Pour one-third of egg mixture into a sprayed 9x9-inch baking pan. Stir pecans into remaining egg mixture.
  • 4. Wrap pastry around the rolling pin. Unroll on top of egg mixture in baking dish. Slowly pour nut mixture over pastry.
  • 5. Bake in a preheated 350-degree oven for 45 to 50 minutes or until a knife inserted near the center comes out clean. Cool 45 minutes before serving. Serve with vanilla ice cream.

1 jar (12.25 oz) Smucker's™ caramel topping
1/4 cup butter, melted
3 cups pecan halves
1 box Betty Crocker™ Super Moist™ white cake mix
3/4 cup butter, melted
Vanilla ice cream, if desired

Steps:

  • Heat oven to 350°F. Spray 13x9-inch pan with cooking spray.
  • In large bowl, beat eggs, brown sugar, caramel topping and 1/4 cup melted butter with whisk until well blended. Stir in pecans. Pour mixture into pan; spread evenly over bottom of pan. Sprinkle top with dry cake mix; gently shake pan to distribute evenly. Pour 3/4 cup melted butter over top, tilting pan to cover as much of top with butter as possible.
  • Bake 25 to 30 minutes or until top is light golden brown, mostly dry on top and bubbling around edges. Cool 20 minutes before serving. Use large spoon for serving. Top individual servings with ice cream, if desired.
  • Store loosely covered in refrigerator.

⅔ cup milk, or more as needed
1 teaspoon pure vanilla extract
1 ½ cups packed light brown sugar
1 tablespoon ground cinnamon
1 cup pecan halves
1 ½ cups hot water

Steps:

  • Place butter in a 9x13-inch cake pan or casserole dish and put in the oven. Preheat the oven to 350 degrees F (175 degrees C).
  • Combine flour, sugar, milk, and vanilla in a bowl. Stir to combine but don't overmix; batter must be of pouring consistency. If batter is too thick, add more milk.
  • Mix brown sugar and cinnamon together in a small bowl.
  • Remove melted butter from the oven and sprinkle pecans over top. Without mixing or stirring, pour batter over the pecans, sprinkle with brown sugar mixture, and carefully pour hot water over top.
