NUTTY CARAMEL CORN

Nonstick cooking spray
3 tablespoons coconut or vegetable oil
Slightly rounded 1/2 cup popcorn kernels
3/4 cup light brown sugar
1/4 cup light corn syrup
6 tablespoons unsalted butter
1 teaspoon kosher salt
1/2 teaspoon baking soda
1 cup roasted, salted mixed nuts

Steps:

  • Preheat the oven to 300 degrees F. Line a baking sheet with a piece of parchment paper and spray lightly with cooking spray.
  • Put the oil and 3 or 4 popcorn kernels in a large pot with a lid (at least 6 quarts). Cover the pot and turn the heat up to medium-high. Wait until you hear one of the kernels pop, then uncover the pot and add the remaining kernels. Quickly stir everything together then replace the lid. Cook the popcorn until the kernels begin popping and then reduce the heat slightly. Cook, shaking often, until the rate of popping starts to slow, 2 to 3 minutes. Do not wait for all of the kernels to pop or they will burn. Take off the heat.
  • Combine the brown sugar, corn syrup, butter and salt in a medium pot. Heat over medium heat until melted and smooth. Stir in the baking soda.
  • Pour the nuts on top of the popcorn. Then pour the caramel into the pot with the popcorn; stir to coat and spread the popcorn onto the prepared baking sheet.
  • Bake, stirring occasionally, until slightly golden, about 20 minutes. Cool completely, and then break apart before serving.

1 cup semisweet chocolate chips
1/4 cup heavy whipping cream
12 ice cream sugar cones
CARAMEL CORN:
7 cups air-popped popcorn
1/2 cup semisweet chocolate chips
1/4 cup chopped pecans
25 caramels
2 tablespoons heavy whipping cream
1/8 teaspoon salt
TOPPING:
5 caramels
2 teaspoons heavy whipping cream, divided
1/4 cup semisweet chocolate chips
1/4 cup chopped pecans

Steps:

  • Tightly cover a large roasting pan that is at least 3 in. deep with two layers of heavy-duty foil. Poke 12 holes, about 2 in. apart, in the foil to hold ice cream cones; set aside., In a microwave-safe bowl, melt chocolate chips and cream; stir until smooth. Spoon about 2 teaspoons inside each cone, turning to coat. Dip rims of cones into chocolate, allowing excess chocolate to drip into bowl. Place cones in prepared pan. Let stand until chocolate is set., Meanwhile, place the popcorn, chocolate chips and pecans in a large bowl; set aside., In a microwave, melt the caramels, cream and salt on high for 2 minutes, stirring occasionally until smooth. Pour over popcorn mixture and toss to coat., Using lightly greased hands, fill cones with popcorn mixture. Shape popcorn into a 2-in.-diameter ball on top of cones, pressing down until popcorn mixture is firmly attached to cones., For topping, place caramels and 1 teaspoon cream in a small microwave-safe bowl. Microwave on high at 20-second intervals until caramels are melted; stir until smooth. Drizzle over cones., Microwave chocolate chips and remaining cream until smooth. Drizzle over cones. Immediately sprinkle with pecans. Let stand until set. Place in bags and fasten with twist ties or ribbon if desired.

8 cups broken salted pretzels
20 cups popped popcorn
4 cups dry roasted peanuts
3 cups brown sugar
¾ cup light corn syrup
1 ½ cups butter
1 teaspoon salt
1 teaspoon baking soda
2 teaspoons vanilla extract

Steps:

  • Place the pretzels, popcorn and peanuts into a large paper bag or, if you have one, a very large bowl. Set aside.
  • In a saucepan over medium heat, combine the brown sugar, corn syrup, and butter. Cook, stirring to melt the butter and dissolve the sugar, until the mixture comes to a boil. Once the mixture is at a full boil, continue to cook for 5 minutes, stirring constantly.
  • Remove from the heat, and stir in the salt, vanilla, and baking soda. The mixture will foam up when you add the soda, so use a long spoon to stir. Immediately pour the sugar mixture over the popcorn and pretzels in the bag. Shake until evenly coated. For a crispier treat, boil the sugar mixture longer, or bake the finished mix in the oven at 350 degrees F (175 degrees C) for about 10 minutes.

1/2 cup popcorn kernels, freshly popped
2 cups roasted peanuts
1 1/4 cups (packed) golden brown sugar
1/4 cup (1/2 stick) unsalted butter
1/4 cup light corn syrup
2 teaspoons vanilla extract
1/2 teaspoon salt
1/4 teaspoon baking soda

Steps:

  • Preheat oven to 250 degrees F. Generously butter heavy large baking pan. Mix warm popcorn and peanuts in prepared pan. Place in oven while preparing syrup.
  • Combine brown sugar, butter and corn syrup in heavy medium saucepan. Whisk over medium-low heat until sugar dissolves and butter melts. Attach clip-on candy thermometer to side of pan. Increase heat to high and boil without stirring until thermometer registers 255 degrees F, occasionally brushing down sides of pan with wet pastry brush, about 4 minutes. Remove from heat. Stir in vanilla extract, salt and baking soda (mixture will bubble). Gradually pour syrup over popcorn and nuts completely.
  • Bake until caramel feels dry, stirring frequently, about 1 hour 30 minutes. Remove from oven. Using metal spatula, scrape mixture from bottom of pan to loosen. Cool completely in pan. (Can be prepared 1 week ahead. Store in airtight container at room temperature.)

½ teaspoon baking soda

Steps:

  • Preheat oven to 250 degrees F (95 degrees C). Place popcorn in a very large bowl.
  • In a medium saucepan over medium heat, melt butter. Stir in brown sugar, corn syrup and salt. Bring to a boil, stirring constantly. Boil without stirring 4 minutes. Remove from heat and stir in soda and vanilla. Pour in a thin stream over popcorn, stirring to coat.

7 quarts plain popped popcorn
2 cups dry roasted peanuts
2 cups brown sugar
½ cup light corn syrup
1 teaspoon salt
1 cup margarine
½ teaspoon baking soda
1 teaspoon vanilla extract

Steps:

  • Place the popped popcorn into two shallow greased baking pans. You may use roasting pans, jelly roll pans, or disposable roasting pans. Add the peanuts to the popped corn if using. Set aside.
  • Preheat the oven to 250 degrees F (120 degrees C). Combine the brown sugar, corn syrup, margarine and salt in a saucepan. Bring to a boil over medium heat, stirring enough to blend. Once the mixture begins to boil, boil for 5 minutes while stirring constantly.
  • Remove from the heat, and stir in the baking soda and vanilla. The mixture will be light and foamy. Immediately pour over the popcorn in the pans, and stir to coat. Don't worry too much at this point about getting all of the corn coated.
  • Bake for 1 hour, removing the pans, and giving them each a good stir every 15 minutes. Line the counter top with waxed paper. Dump the corn out onto the waxed paper and separate the pieces. Allow to cool completely, then store in airtight containers or resealable bags.

3/4 cup sugar
125 g butter

Steps:

  • Cover the bottom of a big saucepan with vegetable oil, heat slowly.(when you place a piece of corn in the oil & it spins, it's ready).
  • Add the popping corn.
  • Cover & shake saucepan regularly until popping sound ceases.
  • Empty popcorn into a large bowl & discard any un-popped kernels.

1 cup butter or 1 cup margarine
2 cups brown sugar
1/2 cup corn syrup
1 teaspoon salt
1/2 teaspoon baking soda
1 1/2 teaspoons vanilla
1 1/2 cups whole peanuts (or use both) or 1 1/2 cups unsalted walnut halves (or use both)

Steps:

  • Set oven to 250 degrees F.
  • Put the popped corn in a large bowl.
  • Melt the margarine (or butter) stir in brown sugar, corn syrup and salt; bring to a boil, stirring constantly.
  • Then boil for 5 minutes WITHOUT stirring (this is important DO NOT stir for 5 minutes!).
  • Remove from heat and stir in baking soda and vanilla.
  • Add in the nuts and stir to combine.
  • Pour the mixture over popped corn in bowl; mix well with a wooden spoon to combine.
  • Transfer to a large greased roasting pan, and bake for 1 hour, stirring every 10-15 minutes.
  • Remove from oven then cool.
  • Break into pieces.
  • Store in a tightly covered tin box.
  • Delicious!
