It looks like a caramel apple but it's really a chocolate chip cookie. You can coat the caramel with your favorite type of nut, sprinkles or mini chips. I am often asked to bring these to parties.-Tammy Daniels, Batavia, Ohio

1/2 cup butter, softened
1/4 cup confectioners' sugar
1/4 cup packed brown sugar
1/4 teaspoon salt
1 large egg, room temperature
1/2 teaspoon vanilla extract
2 cups all-purpose flour
1/2 cup miniature semisweet chocolate chips
48 round toothpicks
1 package (11 ounces) Kraft caramel bits
2 tablespoons water
1 cup finely chopped pecans, peanuts or M&M minis

Steps:

  • Preheat oven to 350°. In a large bowl, cream butter, sugars and salt until light and fluffy. Beat in egg and vanilla. Gradually add flour and mix well. Stir in chips., Shape into 1-in. balls; place 2 in. apart on greased baking sheets. Bake until set, 10-12 minutes. Immediately insert a round toothpick in center of each cookie. Remove to wire racks to cool completely., In a small saucepan, combine caramels and water. Cook and stir over medium-low heat until smooth. Holding a cookie by the toothpick, dip cookie in caramel mixture, turning to coat. Allow excess to drip off. Immediately dip the bottom and sides in pecans., Place on waxed paper. Repeat with remaining cookies, caramel mixture and pecans. Let stand until set.

¾ cup confectioners' sugar
⅔ cup butter, softened
3 tablespoons frozen apple juice concentrate, thawed, divided
1 ½ cups all-purpose flour
¼ teaspoon salt
flat toothpicks
30 individually wrapped caramels, unwrapped
2 tablespoons water
¾ cup finely chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Beat confectioners' sugar, butter, and 1 tablespoon apple juice concentrate together in a bowl using an electric mixer until light and fluffy; stir in flour and salt until dough is just combined. Roll dough into 3/4-inch balls and arrange on ungreased baking sheets.
  • Bake in the preheated oven until edges are light golden brown, 12 to 17 minutes. Immediately insert toothpicks in the center of each cookie. Place cookies on a wire rack to cool completely.
  • Combine caramels, 2 tablespoons apple juice concentrate, and water in a saucepan over low heat; cook and stir until mixture is smooth, 5 to 10 minutes. Spoon caramel sauce over each cookie, letting excess caramel sauce drip off.
  • Pour walnuts onto a plate. Press the bottom of each caramel-coated cookie into the walnuts and transfer to a sheet of waxed paper to set.

1 pouch (17.5 oz) Betty Crocker™ oatmeal cookie mix
Butter, water and egg called for on cookie mix pouch
1/3 cup butter, melted
1 package (8 oz) cream cheese, softened
1 cup powdered sugar
1/2 cup plus 2 tablespoons caramel sauce
1 container (12 oz) Cool Whip frozen whipped topping, thawed
1 can (21 oz) apple pie filling with more fruit, chopped (about 2 cups)
2 boxes (4-serving size each) Jell-O™ vanilla-flavor instant pudding & pie filling mix
3 cups cold milk

Steps:

  • Heat oven to 375°F. Make and bake cookies as directed on pouch. Cool completely, at least 20 minutes.
  • In food processor, process half of the cookies to coarse crumbs. Remove to medium bowl. Continue to process second half of remaining cookies to coarse crumbs; add to bowl. Stir in melted butter until well blended. In ungreased 13x9-inch (3-quart) glass baking dish, press cookie crumb mixture firmly in bottom. Set aside.
  • In large bowl, beat cream cheese, powdered sugar, and 1/2 cup caramel sauce with electric mixer on medium speed until smooth, scraping down side of bowl frequently. Beat in 2 cups of the whipped topping. Spread over cookie crust. Spoon and spread apple pie filling over cream cheese layer.
  • In medium bowl, beat dry pudding mixes and milk with whisk about 2 minutes or until thick. Drop by spoonfuls all over apple layer; spread evenly. Drop remaining whipped topping by spoonfuls over pudding layer; spread evenly. Cover and refrigerate 4 hours.
  • When ready to serve, drizzle remaining 2 tablespoons caramel sauce on top. Cut into 6 rows by 4 rows. Cover and refrigerate any remaining pieces.

1 cup brown sugar, packed
1/2 cup white sugar
1 egg
1/4 cup water
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon baking soda
1 tablespoon ground cinnamon
3 cups rolled oats
1 (4 1/2 ounce) package dried apples, chopped into small pieces
1 (11 ounce) bag caramels, chopped (Kraft Premium Caramel Bits were used)

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets or line with parchment paper.
  • In a medium bowl, cream together the shortening, brown sugar and white sugar. Stir in the egg, water and vanilla. Combine the flour, salt, baking soda and cinnamon, stir into the creamed mixture. Stir in the rolled oats. Finally, stir in dried apple and caramel bits.
  • Drop by rounded spoonfuls onto the prepared cookie sheets.
  • Bake for 12 to 15 minutes in the preheated oven. Cool on baking sheets for a couple of minutes before removing to cool on wire racks.

COOKIE CUPS:
3/4 cups butter
1/2 cup brown sugar
1/2 cup sugar
1 egg
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon cinnamon
1 teaspoon baking soda
2 teaspoon cornstarch
CARAMEL SAUCE:
1/2 cup (1 stick) butter
1 cup light brown sugar
1/3 cup heavy cream
CINNAMON APPLES:
2 apples, chopped
pinch of nutmeg
1 teaspoon cinnamon
1/4 cup brown sugar
2 tablespoons butter

Steps:

  • Coat cupcake pan with non stick cooking spray. Preheat oven to 350 degrees. Cream butter and sugars together for 5-7 minutes, until light and fluffy. Add the egg and vanilla and beat until well combined. Add the dry ingredients to the wet ingredients and mix until smooth. Dough will be thick. Makes balls of about 2 tbsp of dough. Press cookie dough in bottom and about 1/3-1/2 way up the sides of each cupcake cup, forming a cup shape. Bake for 10-12 minutes. Remove from oven and allow to cool for about 5 minutes, then remove to cooling rack to finish cooling. If the centers aren't cupped enough to add filling, use the end of a wooden spoon or the bottom of a tablespoon to press the center down a bit. Make caramel sauce according to instructions. Allow to cool for 2-3 minutes, then pour into cookie cups, leaving enough space to add apples on top. I poured it into a measuring cup with a spout to make pouring easier. Set cookie cups aside to allow caramel to cool while you make the cinnamon apples. Combine apples, nutmeg, cinnamon and brown sugar in a medium pan and toss to coat. Add butter and cook apples for about 10-15 minutes, or until at preferred softness. Top cookie cups with apples. Cookie cups can be stored in the fridge or at room temperature for 2-3 days. Best served warm. After they've cooled, they can be warmed up in microwave for 5-10 seconds. CARAMEL SAUCE: Melt butter in a saucepan. Add brown sugar and heavy cream and whisk constantly over medium heat until sugar is dissolved. Bring to a boil and allow to boil for 3 minutes, no more. Remove from heat and allow to cool. Store in refrigerator.

1 package (0.13 to 0.14 oz) strawberry, cherry, tropical punch or lemon-lime-flavored unsweetened soft drink mix
About 12 craft sticks (flat wooden sticks with round ends)
24 caramels (from 14-oz bag)
2 tablespoons water
Betty Crocker™ candy sprinkles, if desired

Steps:

  • Heat oven to 400°F. In large bowl, beat sugar, butter and shortening with electric mixer on medium speed, or mix with spoon. Stir in vanilla and egg. Stir in flour, baking soda, salt and soft drink mix (dry).
  • On lightly floured cloth-covered surface, roll dough 1/4 inch thick. Cut with 3-inch round or apple-shaped cookie cutter. On ungreased cookie sheet, place cutouts 2 inches apart. Carefully insert 1 inch of wooden stick into side of each cookie.
  • Bake 6 to 8 minutes or until edges are light brown. Cool 2 minutes; remove from cookie sheet to cooling rack. Cool completely, about 30 minutes.
  • In 2-quart saucepan, heat caramels and water over low heat, stirring frequently, until melted and smooth. If caramel glaze becomes too stiff, heat over low heat, stirring constantly, until softened.
  • Spread top third of each cookie (opposite wooden stick) with caramel glaze. Hold cookie upright to allow glaze to drizzle down cookie. Sprinkle with candy sprinkles.

  • Heat oven to 400°F. Mix brown sugar, butter and shortening in large bowl. Stir in 1 3/4 cups flour, the oats, salt and baking soda. Reserve 2 cups oat mixture; press remaining oat mixture in ungreased rectangular pan, 13x9x2 inches.
