This recipe is from The Times - Picayune. It sounds unctuously glorious. When I make it, I think the shrimp will be added with the final seasonings. The serving suggestions accomapanying the recipe were stupendous - "Jack Oser, AKA Capt'n Jack, sells soups every week at the Gretna Farmers Market. He shared this rich, versatile sauce recipe that he uses for pasta, fried fish, fried or grilled eggplant, or steamed or grilled asparagus. His suggestion for a special dinner: Find No. 1 softshell crabs, and make the sauce with a pint of lump crabmeat. Let the sauce sit about three minutes, then serve it over the fried softshells." OMG! Will have to be eating low carb/ no carb for a week after that wonderful meal!

1/2 cup butter
2 onions, chopped
1 bunch green onion, chopped
1/4 cup celery, minced
garlic, to taste
1 lb medium shrimp, peeled (or crawfish or lump crabmeat)
1/2 cup flour
1 quart whole milk
1 pint heavy cream
1 tablespoon Worcestershire sauce
1/3 cup dry white wine (optional)
3/4 cup parsley, minced
salt, to taste
white pepper, to taste
1/2 teaspoon cayenne (optional)
1 bay leaf (2 ok too)
1 cup mushroom, chopped (optional)

Steps:

  • In a saucepan melt butter and add onions, green onions, celery and garlic.
  • Add shrimp and cook until shrimp turn pink.
  • Add flour and stir in completely.
  • Add about half the whole milk and half the cream. Let simmer for about 10 to 15 minutes, stirring often. Add more milk and cream to desired thickness.
  • Add Worcestershire, wine (if using), parsley, salt and white pepper to taste, cayenne if using, bay leaves, and chopped mushrooms if using.
  • Let seasonings marry, over low heat, about 5 minutes. Stir well.

SEAFOOD AND TORTELLINI IN CREAM SAUCE

I was just looking for something to do with the seafood I had in my freezer, I found a bag of tortellini in there too and we were in business. Just kinda made this one up from stuff I had in the kitchen one day. We decided it was worth making again.

1 bag(s) frozen cheese tortellini, cooked & drained
1 lb raw shrimp, peeled & deveined
1 pkg imitation crabmeat
1/2 stick butter
3 c milk
1/4 c flour
1/2 tsp salt
1/4 tsp pepper
1 c grated parmesan cheese
1/2 c diced onion
1/2 c frozen english peas
2 c colby jack blended shredded cheese

Steps:

  • 1. Cook tortellini according to package directions, drain and set aside. Meanwhile, melt half of the butter in pan and cook shrimp and diced onion, just until onions are tender and shrimp is pink. Remove shrimp & onions to a warm plate, reserving pan drippings.
  • 2. Add more butter to pan, melt and add flour whisking until well blended with butter. Gradually pour in milk, whisking constantly. Add parmesan cheese, salt & pepper. Stir over medium heat until thick and bubbly.
  • 3. Combine all ingredients in a pan except the colby-jack cheese. Mix thoroughly.
  • 4. Sprinkle with colby jack and heat just until the cheese is melted. Serve with crusty garlic bread.

CREAMY SEAFOOD CASSEROLE

1 1/2 lbs large shrimp, peeled and deveined
1 1/2 cups dry white wine
1/4 cup chopped onion
1/4 cup fresh parsley sprig
4 tablespoons butter, divided
1 teaspoon salt
1 lb bay scallop
3 tablespoons flour
1 cup half-and-half
2 ounces swiss cheese, shredded
1 tablespoon lemon juice
3/4 teaspoon lemon-pepper seasoning
1 (7 ounce) can sliced mushrooms, drained
1 cup soft breadcrumbs
1/4 cup grated parmesan cheese
1/4 cup sliced almonds
2 tablespoons butter, melted
steamed rice

Steps:

  • In a large pot, place wine, onion, parsley, 1 tbsp of the butter, and the salt.
  • Bring to a boil.
  • Add seafood and cook until shrimp turn pink, about 3 minutes.
  • Drain shrimp, and reserve 2/3 cup of broth.
  • Place remaining butter in pan and add flour and cook 1 minute, stirring.
  • Add half and half gradually, stirring constantly, until mixture thickens.
  • Add Swiss and stir until cheese melts.
  • Add lemon juice and lemon-pepper seasoning to reserved broth and stir into sauce gradually.
  • Add shrimp and mushrooms to pan.
  • Place mixture into a large buttered casserole dish.
  • Cover with foil or a lid and bake at 350°F for 40 minutes.
  • Mix breadcrumbs with melted butter, Parmesan and almonds.
  • Sprinkle mixture evenly over the casserole and bake 10 minutes more.
  • Allow to stand 10 minutes before serving.
  • Serve with steamed rice.

CREAM AND SEAFOOD SAUCE

I copied this recipe years ago out of a cookbook a friend received for Christmas. It has been one of my favorite pasta recipes ever since. I can't stand mushrooms, so I never use them. I also use lobster meat sometimes. Imitation crab and/or lobster meat works well in a pinch. Sauce tends to thicken after removed from heat. Since the recipe was listed as a sauce, it didn't give an exact amount of pasta. It simply recommended using a shell or curly type. I'm guessing 6-8 ounces is how much I use and I usually use rotini. Cooking the pasta isn't included in cooking time.

1/2 clove minced garlic

8 ounces dried crabmeat
1 cup grated parmesan cheese

Steps:

  • Place all ingredients (except last 3) into a large saucepan.
  • Bring to a boil, stirring frequently.
  • Add cooked and drained pasta along with shrimp and crab meat.
  • Cook for one minute.
  • Stir in grated cheese.
  • Simmer until all cheese has melted (about 2 additional minutes).
