Captain Ds makes some of the best batter dipped fish out there.

Number Of Ingredients 8

1 1/2 cups all-purpose flour
1/2 cup cornstarch
1 tablespoon baking powder
2 teaspoons kosher salt
1/2 teaspoon cayenne pepper
1 1/2 cups water
2 pounds cod (hake, or other white fish)
vegetable oil (for frying)

Steps:

  • Preheat the oil to 350 degrees in either a deep fryer or a medium sized saucepan. In a medium bowl, mix together the flour, cornstarch, baking powder, salt, and cayenne pepper. Whisk in the water. The batter will get a little foamy, continue to mix. Pat the fish dry with a paper towel to remove excess moisture. Coat the fish in the batter, working to fully coat each fillet. Deep-fry the fish for 3 to 4 minutes. You want to cook the fish until it is golden brown. If you fry multiple pieces at once you may want to separate the pieces when cooking. Drain fish on a wire rack.

Number Of Ingredients 8

1 cup yellow cornmeal
1/4 cup all-purpose flour
1-1/2 teaspoons baking powder
1/2 teaspoon salt
1 large egg, room temperature, lightly beaten
3/4 cup 2% milk
1 small onion, finely chopped
Oil for deep-fat frying

Steps:

  • In a large bowl, combine the cornmeal, flour, baking powder and salt. Whisk the egg, milk and onion; add to dry ingredients just until combined. , In a cast-iron Dutch oven or an electric skillet, heat oil to 365°. Drop batter by tablespoonfuls into oil. Fry until golden brown, 2 to 2-1/2 minutes. Drain on paper towels. Serve warm.

Vegetable oil, for frying
1/2 cup all-purpose flour
1/2 cup cornmeal
1 tablespoon sugar
1 teaspoon baking powder
Kosher salt
1/2 cup buttermilk
1/2 cup sliced pickled okra
1/2 cup shredded smoked Cheddar
1/2 cup corn kernels
3 scallions, sliced
1 large egg, lightly beaten
Honey mustard, for serving

Steps:

  • Pour enough oil in a large Dutch oven to fill about a third of the way. Heat over medium heat until a deep-frying thermometer inserted in the oil reaches 350 degrees F. Line a plate with paper towels.
  • Combine the flour, cornmeal, sugar, baking powder and 3/4 teaspoon salt in a large bowl. Stir in the buttermilk, okra, Cheddar, corn, scallions and egg. Working in batches, carefully drop heaping tablespoons of the batter into the oil. Fry, turning, until golden, about 5 minutes. Drain on the prepared plate. Season with salt. Serve with honey mustard.

Deep-fry spoonfuls of the batter in 350 degrees F vegetable oil until golden, 2 to 3 minutes.
