CANTONESE STYLE PRAWNS WITH MANGO

Cantonese Style Prawns with Mango image

The recipe says it all. The mango season is coming up in India and we all look forward to the Alphonso variety which is arguably the tastiest mango in the world I am told. :)Adapted from the Femina once more. I have a whole collection of the pull outs of the recipe section of this magazine. This recipe can be made with baby corn for vegetarians. Only you will need to add a little vegetable stock to cook the baby corn after sauteeing in a little oil. And no need of marinating the corn add all the marinade ingredients too at the time of cooking.

  • Begin by peeling and cleaning all the shrimp. Place them in a bowl and add the rice wine, salt, chili flakes, and garlic.
  • In a high walled pan on high heat add the oil along with the bell pepper, onion, and ginger. Stir and toss the pan so the ginger doesn't burn. Once you see the vegetables get a little char on the edges you can add the shrimp + shrimp marinade
  • Toss the pan so the shrimp aren't bunched up and the marinade mixes with the vegetables. After about 20 seconds pour in the black bean sauce. Stir the pan. Once the sauce comes to temperature and bubbles it will thicken and you should turn off the heat.
