FROSTED ORANGE DATE BARS



Frosted Orange Date Bars image

Luxuriously moist, old-fashioned date bars accented with orange peel and a buttery orange frosting.

¾ cup white sugar
½ cup butter, softened
½ cup water
1 (8 ounce) package chopped pitted dates
1 ¼ cups all-purpose flour
¾ teaspoon baking soda
½ teaspoon salt
¼ cup orange juice
¾ cup milk
2 eggs
1 tablespoon orange zest
1 cup chopped pecans
3 cups confectioners' sugar
⅓ cup butter, softened
1 (3 ounce) package cream cheese, softened
1 tablespoon orange zest
2 ½ tablespoons orange juice

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 10x15 inch jellyroll pan.
  • In a small saucepan over medium heat, combine sugar, 1/2 cup butter, water and dates. Cook, stirring frequently until dates have softened and the mixture is well blended. Remove from heat. Combine the flour, baking soda and salt; stir into the date mixture, then mix in the 1/4 cup orange juice, milk, eggs and 1 tablespoon orange zest. Spread the batter evenly into the prepared pan.
  • Bake for 15 to 20 minutes in the preheated oven, until a toothpick inserted into the center comes out clean. To make the frosting, combine the confectioners' sugar, 1/3 cup butter, cream cheese and orange zest. Beat until smooth. Gradually mix in the remaining orange juice a tablespoon at a time until the icing is spreadable. Spread over the bars when cool. Cut into squares.

A good friend of mine gave me the recipe for these yummy, rich date bars. Chopped candied orange slices really make them special. I dip my kitchen shears in hot water to make cutting the orange slices a little easier.

1 package (7 ounces) orange candy slices
1/2 cup sugar
2 tablespoons plus 1-3/4 cups all-purpose flour, divided
1/2 cup water
1/2 pound chopped dates
1 cup butter, softened
1 cup packed brown sugar
2 large eggs
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chopped walnuts
Confectioners' sugar

Steps:

  • Cut orange slices horizontally in half, then into 1/4-in. pieces; set aside. In a saucepan, combine the sugar and 2 tablespoons flour. Stir in water until smooth. Add dates. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; cool., In a large bowl, cream butter and brown sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Combine the baking soda, salt and remaining flour; add to creamed mixture and mix well. Stir in walnuts., Spread half of the batter into a greased 13x9-in. baking pan. Spread date mixture over batter; sprinkle with reserved orange pieces. Spread remaining batter over the top. , Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. Cool on a wire rack. Dust with confectioners' sugar.

I've had this recipe since 1938, when the girls I worked with game me a bridal shower. One of their presents was a recipe box filled with their favorites. Inside, I found this recipe, and I've used it for just about every occasion since. They're always well received.

2 teaspoons baking powder
1/4 teaspoon salt
2 cups chopped dates
2 cups chopped walnuts or pecans
4 large eggs, lightly beaten, room temperature
2 tablespoons butter, melted
1 teaspoon vanilla extract
Confectioners' sugar

Steps:

  • In a large bowl, combine the sugar, flour, baking powder, salt, dates and nuts. Add the eggs, butter and vanilla; stir just until dry ingredients are moistened (batter will be very stiff). , Spread in a greased 15x10x1-in. baking pan. Bake at 350° for 20-25 minutes or until golden brown. Cool bars on a wire rack. Dust with confectioners' sugar. ,

3 cups chopped pitted dates (1 lb)
1 1/2 cups water
1/4 cup granulated sugar
1 cup packed brown sugar
1 cup butter or margarine, softened
1 3/4 cups all-purpose* or whole wheat flour
1 1/2 cups quick-cooking oats
1/2 teaspoon baking soda
1/2 teaspoon salt

Steps:

  • In 2-quart saucepan, cook filling ingredients over low heat about 10 minutes, stirring constantly, until thickened. Cool 5 minutes.
  • Heat oven to 400°F. Grease bottom and sides of 13x9-inch pan with shortening.
  • In large bowl, stir brown sugar and butter until well mixed. Stir in flour, oats, baking soda and salt until crumbly. Press half of the crumb mixture evenly in bottom of pan. Spread with filling. Top with remaining crumb mixture; press lightly.
  • Bake 25 to 30 minutes or until light brown. Cool 5 minutes in pan on cooling rack. Cut into 6 rows by 6 rows while warm.

12 tablespoons (1 1/2 sticks) unsalted butter, cold and diced
1 1/2 cups all-purpose flour
1/2 cup Dutch processed cocoa powder
1/4 cup confectioners' sugar
1/4 cup granulated sugar
2 ounces bittersweet or semisweet chocolate, melted
Fine salt
Nonstick cooking spray
4 large eggs plus 2 large yolks
1 1/2 cups granulated sugar
1/3 cup all-purpose flour, sifted
Fine salt
2 teaspoons grated zest plus 1 cup freshly squeezed orange juice (about 2 oranges)
1/2 teaspoon grated zest plus 2 tablespoons freshly squeezed lemon juice (about 1 lemon)
Confectioners' sugar, for dusting
Thin strips of candied orange peel, for garnish, optional

Steps:

  • For the base: Position a rack in the middle of the oven and preheat to 350 degrees F. Put the butter, flour, cocoa, confectioners' and granulated sugars, chocolate and 1/4 teaspoon salt in a food processor. Process until the mixture is slightly damp and holds together when pinched, about 1 minute.
  • Generously spray a 9- by 13-inch pan with cooking spray. Line the pan with aluminum foil leaving a 2-inch overhang on all four sides and spray the foil as well. Sprinkle the crust mixture into the prepared pan and press evenly along the bottom. Take care to seal up any cracks. Bake the base until it is no longer shiny and leaves only a slight indentation when pressed, 25 to 30 minutes. After removing the base, reduce the oven temperature to 300 degrees F.
  • Meanwhile, make the orange filling: Whisk the eggs, egg yolks, granulated sugar, flour and pinch of salt together in a large liquid measuring cup or bowl until smooth. Whisk in the orange and lemon juices and zests. Pour the filling over the warm crust. Bake until the filling is just set, 35 to 40 minutes.
  • Cool the bars in the pan completely on a rack. When cool, refrigerate for 2 hours or up to overnight. Lift the bars out of the pan by using the foil. Trim the edges and cut into 24 bars. Dust with confectioners' sugar and top with a strip of candied orange, if using, before serving.

6 thick-skinned Valencia or navel oranges
4 1/2 cups sugar, plus extra for rolling
1 1/2 cups water

Steps:

  • Cut tops and bottoms off of the orange and score the orange into quarters, cutting down only into the peel and not into the fruit. Peel the skin and pith of the orange in large pieces, use the orange for another recipe. Cut the peel into strips about 1/4-inch wide. Put the orange peel in a large saucepan with cold water to cover, bring to a boil over high heat. Then pour off the water. Repeat 1 or 2 more times depending up how assertive you want the orange peels to be. (Test kitchen liked the texture of a 3 time blanch best, it also mellowed the bitterness. But it is a matter of preference.) Remove the orange peels from the pan.
  • Whisk the sugar with 1 1/2 cups water. Bring to a simmer and cook for 8 to 9 minutes (If you took the sugar's temperature with a candy thermometer it would be at the soft thread stage, 230 to 234 degrees F.) Add the peels and simmer gently, reducing heat to retain a simmer. Cook until the peels get translucent, about 45 minutes. Resist the urge to stir the peels or you may introduce sugar crystals into the syrup. If necessary, swirl the pan to move the peels around. Drain the peels, (save the syrup for ice tea.) Roll the peels in sugar and dry on a rack, for 4 to 5 hours. Return to the sugar to store.
  • Cook's Note: One way to use orange peels is to stuff a dried date with a piece of orange peel and almond, then dip the entire thing into dark chocolate.
