1 pound elbow macaroni
1 tablespoon vegetable oil
2 tablespoons butter
1 large onion (chopped, about 1 1/2 cups)
Optional: 1 green bell pepper (chopped)
2 pounds ground beef
2 cloves garlic
1 teaspoon garlic powder
1 (28-ounce) can crushed tomatoes
1 (14.5-ounce) can diced tomatoes
1 (8-ounce) can tomato sauce
3 tablespoons tomato paste
1 teaspoon sugar
1/2 teaspoon ground black pepper
Salt (to taste)

Steps:

  • Gather the ingredients.
  • Cook the pasta in boiling salted water following the package directions.
  • Drain in a colander and rinse under hot water. Set aside.
  • In a large, deep skillet or saucepan, heat the vegetable oil and butter over medium heat. Add the onion and bell pepper, if using. Cook, stirring until onion is softened and edges are lightly browned.
  • Add the ground beef and cook, stirring and breaking up, until the beef is cooked through and no longer pink.
  • Add the garlic and garlic powder and cook, stirring for 1 to 2 minutes longer.
  • Stir in the crushed tomatoes, diced tomatoes, tomato sauce, tomato paste, sugar, and pepper. Cook, stirring, until the sauce mixture begins to boil. Taste and add salt, as needed. Simmer for 5 to 10 minutes.
  • Add the drained macaroni to the sauce, mix well, and heat through. Serve and enjoy.

3 tablespoons butter
1 medium yellow onion, chopped
1 green bell pepper, stemmed, seeded, and chopped
2 garlic cloves, minced
1 pound ground beef
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon ground black pepper
Kosher salt
1 (14.5-ounce) can diced tomatoes
1 (14.5-ounce) can tomato sauce
1/4 cup tomato paste
2/3 cup tomato juice
Pinch of sugar
1 pound elbow macaroni

Steps:

  • 1. Heat the butter in a large pot over medium heat. Add the onion and bell pepper and cook, stirring occasionally, until soft, about 5 minutes. Add the garlic and cook, stirring, for about 1 minute. Then add the ground beef and continue to cook, stirring and breaking up the chunks of meat with a spoon. Cook until the meat is no longer pink, about 7 minutes. Sprinkle the herbs and pepper over the meat, add salt to taste, and mix in well.
  • 2. Add the canned tomatoes with their juices, the tomato sauce, paste, and juice. Add sugar to taste. Simmer while you cook the pasta.
  • 3. Bring a large pot of salted water to a boil over high heat. Add the macaroni and cook, stirring occasionally, until al dente. Drain. Mix the macaroni into the chop suey. Serve hot.

This is the American Chop Suey that I was served growing up. Mom says it was one of her old Girl Scout recipes. Maybe I've become too much of a gourmet because if you ask me...about the only time I would think this was fabulous now is if I was camping, worked up a terrible appetite, and had this cooked over a fire in a cast iron skillet. Still, gotta have it once in a blue moon just for the memories. Once under the label of Franco-American, the canned spaghetti goes by strictly the name Campbell's.

2 (14 3/4 ounce) cans campbell's canned spaghetti in tomato sauce

1 teaspoon Worcestershire sauce

Steps:

  • Brown ground beef with onion and pepper.
  • Drain off excess grease.
  • Add remaining ingredients.
  • Let simmer for about 10 minutes.

1 lb hamburger, browned and drained
1 green pepper, chopped
1 large onion, chopped
1 cup celery, chopped
1 (4 1/2 ounce) jar mixed mushrooms (I like to double it)
1 pint canned whole tomatoes
3/4 cup raw rice
seasoning salt (I prefer creole seasoning) or salt and pepper (I prefer creole seasoning)

Steps:

  • Mix ingredients in skillet.
  • Do NOT saute' or cook veggies first or you will get mush.
  • Season with seasoning salt or salt and pepper to taste.
  • Cover, and leave on highheat until food begins to steam and you see steam coming out from under the lid.
  • Turn off heat and leave on burner for 1 hours.
  • Do not lift cover during cooking period.

½ cup chopped onion
1 (14.5 ounce) can stewed tomatoes
2 (15 ounce) cans spaghetti with sauce

  • In a large skillet, brown the beef with the celery and onion until the onion is tender. Add the tomatoes and spaghetti and heat, stirring all together. Serve with garlic bread and a dinner salad if desired. SO easy!

1 (1 lb) box elbow macaroni
1 -1 1/2 lb ground beef
2 (10 1/2 ounce) cans tomato soup
1 (14 1/2 ounce) can diced tomatoes
1/4-1/2 cup dry red wine
2 green bell peppers, diced
1 large onion, diced
2 stalks celery, diced
8 ounces sliced fresh mushrooms
2 -3 teaspoons minced garlic
1 teaspoon oregano
1 teaspoon basil
2 whole bay leaves
3 -5 dashes Worcestershire sauce
salt and pepper
2 tablespoons olive oil

Steps:

  • Cook macaroni according to package directions.
  • Spray a large skillet with a cooking spray like pam.
  • Add about two tablespoons Olive Oil.
  • Brown the ground beef.
  • Add the peppers, onions, celery, garlic and mushrooms and continue to cook till vegetable are almost tender.
  • Add the tomato soup, diced tomatoes, wine and the spices.
  • Simmer for about 20 minutes.
  • Drain cooked macaroni and place in a large bowl.
  • pour the tomato mixture over the macaroni and mix well.
  • Serve with lots of freshly grated Parmesan cheese.

1 lb lean ground beef
1 small onion, finely diced
3 garlic cloves, crushed
1 (28 ounce) can pastene ground peeled tomatoes (NO substitutes)
1/2 cup water
2 teaspoons dried oregano
1 teaspoon dried basil
3 teaspoons sugar
3/4 teaspoon salt
1/2 teaspoon black pepper
1/2 lb uncooked elbow macaroni
parmesan cheese

Steps:

  • In large skillet over medium-high heat, brown ground beef with onion and 1 clove garlic; drain.
  • Add oregano, basil, salt, pepper, and rest of garlic; mix into beef. Return to heat, add tomatoes, water and sugar, stir to mix well. Heat till slightly bubbly, then cover and reduce heat to low. Simmer for 30-60 minutes, stirring occasionally.
  • Meanwhile, cook elbows according to package directions.
  • Mix drained elbows into sauce in skillet and sprinkle generously with a good quality parmesan cheese.

This recipe was my grandmother's and it has such amazing flavor. The key to flavor is cooking it on medium low heat for about 3 hours. You want the bacon to melt in your mouth. Preparation is quick and easy. You can start this recipe around 1:00 in the afternoon and dinner is on the table at 5:00

3 tablespoons extra virgin olive oil
1 large onion, chopped
3/4 lb colonial meaty bacon, 1/2 inch slices (hint ( use scissors while bacon is cold)
1 lb lean ground beef
1 (28 ounce) can pastene crushed tomatoes
1 (28 ounce) can water
1 lb elbow macaroni
salt and pepper

Steps:

  • In a medium pot (large pot if you double the recipe)add the onion and cook until translucent.
  • Add the bacon and cook until the bacon is slightly browned, DO NOT DRAIN, that is where the flavor comes from.
  • Add the ground beef and cook until browned.
  • Add the crushed tomatoes along with one equal can of water and mix very well gently.
  • Allow to come to a slight boil then turn heat down to medium low.
  • Cook for 3 hours, stirring every 20 to 30 minutes uncovered.

2 cloves garlic, minced
1 -2 teaspoon dried oregano

  • Cook Elbows according to package directions.
  • Drain and set aside.
  • In a large skillet, brown the hamburg, onion and garlic together until the hamburg is done.
  • Drain off the fat, return to skillet and add in the can of tomatoes.
  • Add the oregano and salt, bring to a boil and then lower heat to a simmer.
  • Let simmer for 30 minutes to blend flavors.
  • After 30 minutes, add the elbows to the hamburg mixture and stir to coat.
