ELLA MAE'S CREAMY-SURE FUDGE
I like this recipe because it is easy to prepare, no-fail recipe. This was given to me by a friend many years ago, and I would like to pass it on to others. It is a chocolate confection that candy lovers will enjoy.

Steps:
- Mix first five ingredients in saucepan, stirring.
- constantly, heat to boiling, and boil five minutes.
- Remove from heat, add chocolate and stir till melted.
- Stir in vanilla and walnuts/or pecans.
- Spread in buttered 8" pan.
- Cool until firm.
- Makes about two pounds of fudge.

This is one of my wife's most delicious fudge recipes. I have always liked divinity, and you can't go wrong with the way she cooks this one. Bon Appetit!!

Steps:
- Cook sugar, corn syrup and water over medium heat until it forms a soft ball when dropped in water.
- Over the egg whites which have been beaten stiff, pour 1/2 of mixture and cook remaining half until it will crack when dropped in water.
- Pour other half over first mixture, beating constantly.
- Add vanilla flavoring and nuts.
- Drop on cookie sheet.

BUTTERED RUM FUDGE

- Line 8-inch square pan with foil. Spray foil with nonstick cooking spray.
- Melt butterscotch chips in medium saucepan over low heat, stirring constantly. Stir in all remaining ingredients until well mixed.
- Spread fudge in foil-lined pan. Refrigerate 1 hour or until firm.
- Use foil to lift candy from pan. Remove foil; cut into 1-inch squares.

CAN'T FAIL FUDGE
This is a staple at our holiday parties. Rich and smooth. *Hint: Do not use too much butter to grease pan, or bottom of fudge will be soggy. ENJOY!!

Steps:
- Mix first 3 ingredients in a 2-quart saucepan over medium heat.
- Bring to a boil stirring entire time. Boil until candy thermometer hits 234 degrees (or exactly 5 minutes boiling), stirring entire time.
- Remove from heat and add remaining ingredients. Stir until chocolate and marshmallows are dissolved.
- Pour in buttered 8x8 pan.
- Chill 30 minutes, cut with buttered knife.
- Chill again until set.
