CAMARONES GUISADOS (STEWED SHRIMP)



Camarones Guisados (Stewed Shrimp) image

Succulent shrimp stewed in a Puerto Rican-style tomato sauce. Loaded with garlic, onions and plenty of fresh cilantro. No sofrito needed! Serve over a bed of rice or with crusty bread for soaking up every last drop!

Number Of Ingredients 13

2 tablespoons olive oil
1 medium onion, finely chopped*
1/2 green bell pepper, finely chopped*
3 teaspoons minced garlic (about 3 cloves)*
1 can (14.5oz) whole plum tomatoes, with liquid
2 tablespoons pimento stuffed Spanish olives, roughly chopped
2 tablespoons chopped cilantro
1 bay leaf
1/8 teaspoon dried oregano
Salt and pepper
1 pound raw shrimp, peeled and deveined (and thawed if using frozen)
Additional chopped cilantro, for garnish
Cooked rice or French bread, for serving

Steps:

  • Heat the oil in a small caldero or large frying pan over medium heat.
  • Sauté the onion and green pepper until softened, about 5 minutes. Add the garlic and sauté for 1 minute longer. *You can also use 2 heaping tablespoons of SOFRITO [click for recipe]
  • Add the tomatoes along with their liquid, olives, 2 tablespoons of cilantro, bay leaf and oregano. Season to taste with salt and pepper.
  • Crush the tomatoes with the back of a spoon and bring the sauce to a simmer. Allow to cook for 5 minutes.
  • Add the shrimp and sauté for 2-4 minutes, just until opaque. Do not overcook!
  • Garnish with additional chopped cilantro before serving. Serve over rice or with bread for sopping up the sauce.

Wife received this recipe from... her brother's friend's girlfriend who lived in Brazil. The origin sounds longer when you're talking and seems way more confusing. When I was first introduced to this recipe I was amazed at something so simple tasting so good. Since we received this recipe we have cooked it several times per week and have convinced our 10yr and 8yr old to eat it as well. I do suggest on the last three items you add to your desired taste, we like it spicy and only "real" amounts of salt on the plate as each person in our family has a different "version" of too salty or too hot.

3 teaspoons olive oil
1 onion, finely chopped
6 tomatoes, peeled seeded, and chopped or 1 (14 1/2 ounce) can diced tomatoes
1/4 cup fresh flat-leaf parsley, finely chopped
1 lb shrimp, shelled, deveined, and cut into bite size pieces
1/2 teaspoon ground black pepper
1 tablespoon butter
1 tablespoon flour
1 (13 1/2 ounce) can coconut milk
1/2 teaspoon salt
1 small dried red pepper, minced
1 teaspoon dried chipotle powder

Steps:

  • Heat the oil in a large saucepan and sauté the onion until it is softened.
  • Add and sauté the tomatoes and parsley for 5 minutes.
  • Add the shrimp and cook, stirring frequently for 3 minutes.
  • Season with salt/pepper.
  • Melt the butter and add to main dish with coconut milk, STIR FREQUENTLY.
  • Add the red peppers/chipotle powder and stir for 2 -5 minutes (make sure shrimp are done).
  • Serve with some rice (white, wheat, or fried -- your choice).

1 tablespoon olive oil
¼ cup butter
½ green bell pepper, sliced
1 large onion, sliced
10 cloves garlic, pressed
1 pound fresh large shrimp, shelled and deveined
½ cup tomato sauce
1 tablespoon dried parsley
¼ teaspoon crushed red pepper flakes
salt and ground black pepper to taste

Steps:

  • Heat the olive oil and butter in a skillet over medium heat. Stir in the bell pepper and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir in the garlic, and cook until fragrant, about 1 minute more. Add the shrimp and cook until opaque, about 2 minutes on each side. Stir in the tomato sauce, parsley, and red pepper flakes, and cook until tomato sauce is warmed through, about 5 minutes. Season with salt and pepper.

2 pounds medium size shrimp
1 cup lemon juice
1 clove crushed garlic
2 tablespoons cooking oils
1 large yellow onion grated
2 tablespoons chopped cilantro
pepper
1 pound tomato without seeds
hot sauce

Steps:

  • Very typical. Clean and prepare shrimp. Marinate for 30 min with lemon juice and crushed garlic clove. In a large frying pan heat cooking oil and add grated onion. Add shrimp. When shrimp are golden, add 2 tablespoons chopped cilantro. Sprinkle with pepper and cook until the shrimp turn pink. In the blender beat tomatoes without seeds, and a dash of hot sauce and add to shrimp mixture. Taste to see if more salt or hot sauce is needed. Serve over white rice.

This is another recipe from my mother-in-law. She likes to serve this during Lent. It is shrimp patties fried and smothered in sauce and nopales. You may serve this with rice and tortillas (also some like to top it with cilantro), or I just eat it like a soup!

2 dried ancho chilies, stemmed and seeded
6 eggs, beaten
¼ cup shrimp powder
1 cup vegetable oil for frying
½ white onion, coarsely chopped
2 cloves garlic, minced
1 cup water, or more as needed
1 ½ chicken bouillon cubes
1 (16 ounce) jar nopales (cactus), drained and rinsed
½ cup chopped fresh cilantro, or to taste

Steps:

  • Soak ancho chilies in a bowl of warm water until tender, about 20 minutes. Drain.
  • Whisk eggs and shrimp powder together in a bowl.
  • Heat oil in a skillet over medium heat; pour egg mixture into small 2-inch circles in the hot oil. Fry until golden brown, about 3 minutes per side. Transfer to a plate. Repeat with remaining egg mixture.
  • Blend ancho chilies, onion, garlic, and water in a blender until smooth. Add more water if needed to make a soup consistency. Pour chile mixture into a pot over medium heat; add chicken bouillon and egg patties. Cook and stir until bouillon is dissolved, about 5 minutes. Add nopales, reduce heat to low, and cook until soup is heated through, about 5 minutes. Garnish with cilantro.
