SPINACH ARTICHOKE CALZONES



Spinach Artichoke Calzones image

Nonstick cooking spray, for the baking sheet and plastic wrap
12 frozen unbaked dinner rolls
One 10-ounce box frozen chopped spinach, thawed
1 cup chopped drained canned artichoke quarters
1 cup shredded low-moisture mozzarella
1 cup whole-milk ricotta
1/4 cup grated Parmesan
1/4 cup heavy cream
Freshly ground black pepper
All-purpose flour, for dusting
Warm marinara sauce, for dipping
Serving suggestion: salad

Steps:

  • Coat a baking sheet and some plastic wrap with the cooking spray. Place the rolls on the baking sheet and cover with the plastic wrap. Let thaw and rise for 2 to 3 hours.
  • Meanwhile, make the filling: Place the spinach in a kitchen towel and wring dry. Put in a large bowl, separating any clumps. Add the artichokes, mozzarella, ricotta, Parmesan and heavy cream and stir until combined. Season with pepper.
  • Preheat the oven to 400 degrees F.
  • Roll out each dinner roll on a lightly floured surface into a 5-inch round. Spoon 1/4 cup of the filling on half of each dough round. Dampen the edges of the rounds with water, then fold the dough over the filling to enclose, pressing the edges to seal.
  • Arrange the calzones on 2 baking sheets lined with parchment paper. Bake until golden brown, 10 to 13 minutes.
  • Serve the calzones with the warmed marinara sauce for dipping, and a salad.

1/2 cup ricotta cheese
1 teaspoon Italian seasoning
1/4 teaspoon salt
1/2 cup mozzarella cheese (shredded)
3 ounce pepperoni (diced)
1/4 cup Parmesan cheese (grated)
1/4 cup mushrooms (fresh, chopped)
1/4 cup onion (finely chopped )
8 ounce crescent rolls (1 tube)
14 ounce pizza sauce (warmed)

Steps:

  • In a small bowl, combine the ricotta, Italian seasoning and salt. Stir in the mozzarella cheese, pepperoni, Parmesan cheese, mushrooms, green pepper and onion. Separate crescent dough into four rectangles; seal perforations.
  • Spread cheese mixture over each rectangle to within 1/4 inch of edges. Roll up jelly-roll style, starting with a short side; pinch seams to seal. Cut each into four slices.
  • Place cut side down on greased baking sheets. Bake at 375 F for 10 to 15 minutes or until golden brown. Serve warm with pizza sauce. Refrigerate leftovers.

1 package (8 ounces) cream cheese, softened
1 cup shredded cheddar cheese
1 cup sour cream
1 can (4-1/4 ounces) chopped ripe olives
1 can (4 ounces) chopped green chiles, well drained
1/2 cup chopped green onions
Garlic powder to taste
Seasoned salt to taste
5 flour tortillas (10 inches)
Salsa, optional

Steps:

  • Beat cream cheese, cheese and sour cream until blended. Stir in olives, green chiles, green onions and seasonings., Spread over tortillas; roll up tightly. Wrap each in plastic, twisting ends to seal; refrigerate several hours., Unwrap. Cut into 1/2- to 3/4-in. slices, using a serrated knife. If desired, serve with salsa.

1/4 cup grated parmesan cheese
1/2 cup shredded mozzarella cheese
1/2 cup chopped pepperoni
1/4 cup finely chopped fresh mushrooms
1/4 cup finely chopped green bell pepper
2 tablespoons finely chopped onions
1 (8 ounce) can crescent roll dough
1 (14 ounce) jar pizza sauce

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • In a medium bowl, stir together the ricotta cheese, Italian seasoning, salt, Parmesan cheese, mozzarella cheese, pepperoni, mushrooms, green pepper and onion. Set aside.
  • Unroll the crescent roll dough and separate into 4 rectangles. Press the remaining perforations together to seal. Spread the filling evenly onto the rectangles. 1 loaf (1 pound) frozen bread dough, thawed
1 cup Three-Meat Sauce
1/4 cup shredded part-skim mozzarella cheese
1 to 2 tablespoons 2% milk
1/2 teaspoon Italian seasoning
1 tablespoon grated Parmesan cheese

Steps:

  • Preheat oven to 350°. On a lightly floured surface, divide dough into four portions. Roll each into a 6-in. circle. Spread 1/4 cup sauce over half of each circle to within 1/2 in. of edge; top with 1 tablespoon mozzarella cheese. Fold dough over filling; pinch edges to seal. 1 package (3-1/2 ounces) sliced pepperoni, finely chopped
1 cup shredded provolone cheese
2 tablespoons onion soup mix
2 tablespoons sour cream
1 teaspoon grated Romano cheese
2 tubes (13.8 ounces each) refrigerated pizza crust

Steps:

  • In a small bowl, combine the first six ingredients.
