California Sourdough Veggie Panini image

Here's the perfect panini for all the veggie lovers out there, stuffed with sliced avocado, tomatoes and sharp cheddar cheese.

Number Of Ingredients 8

2 slices sourdough bread
1 Tbsp. KRAFT Mayo with Olive Oil Reduced Fat Mayonnaise
6 fresh basil leaves
1 KRAFT Slim Cut Sharp Cheddar Cheese Slice
1 thin red onion slice
3 thin avocado slices
2 thin tomato slices
1/2 cup baby spinach leaves

Steps:

  • Heat panini grill sprayed with cooking spray.
  • Spread 1 bread slice with mayo. Fill bread slices with remaining ingredients.
  • Grill 2 to 3 min. or until golden brown.

San Francisco Sourdough Bread image

Use a good sourdough starter, one you have tended to, for best flavor.

Number Of Ingredients 10

4 ¾ cups bread flour
3 tablespoons white sugar
2 ½ teaspoons salt
1 (.25 ounce) package active dry yeast
1 cup warm milk
2 tablespoons margarine, softened
1 ½ cups sourdough starter
1 extra large egg
1 tablespoon water
¼ cup chopped onion

Steps:

  • In a large bowl, combine 1 cup flour, sugar, salt, and dry yeast. Add milk and softened butter or margarine. Stir in starter. Mix in up to 3 3/4 cups flour gradually, you may need more depending on your climate.
  • Turn dough out onto a floured surface, and knead for 8 to 10 minutes. Place in a greased bowl, turn once to oil surface, and cover. Allow to rise for 1 hour, or until doubled in volume.
  • Punch down, and let rest 15 minutes. Shape into loaves. Place on a greased baking pan. Allow to rise for 1 hour, or until doubled.
  • Brush egg wash over tops of loaves, and sprinkle with chopped onion.
  • Bake at 375 degrees F (190 degrees C) for 30 minutes, or till done.

  • To make the levain: Weigh your flour; or measure it by gently spooning it into a cup, then sweeping off any excess. Mix all of the levain ingredients together and place in a covered container with room for the levain to grow.
  • To make the dough: Mix and then knead together all of the dough ingredients, including the levain, to make a smooth, supple, and not overly sticky dough.
  • Place the kneaded dough in a lightly greased bowl, cover the bowl, and let the dough rise for 1 to 2 hours, until doubled in size.
  • Divide the dough in half, and shape each half into 8" logs. Place the logs in two lightly greased 8 1/2" x 4 1/2" bread pans. Cover the pans with lightly greased plastic wrap (or a couple of plastic shower caps), and let the loaves rise until they've crowned about 1" over the rim of the pan, about 1 to 2 hours.
  • Bake the bread for 30 to 35 minutes, until the crust is golden brown and the sides of the loaf feel firm. Remove the loaves from the oven, and turn them out of the pans onto a rack to cool.
