SNOWBALL
I've been making these popular treats for 40 years, much to my family's delight. They look impressive with chocolate and coconut wrapped around a chewy marshmallow center, yet they're surprisingly simple to assemble.

- Line a baking sheet with waxed paper; set aside. , In a large saucepan, combine the butter, milk, cocoa and vanilla. Cook and stir over medium heat until butter is melted and mixture is smooth. Remove from the heat; stir in cracker crumbs and 1-1/2 cups coconut. Let stand until cool enough to handle., Using moistened hands, wrap about 1 tablespoon of mixture around each marshmallow (dip hands in water often to prevent sticking). Roll in remaining coconut; place on prepared baking sheet. Cover and freeze until firm. Store in an airtight container in the refrigerator or freezer. May be frozen for up to 2 months.

SNOWBALLS
Steps:
- Preheat oven to 325 degrees F (165 degrees C.) Lightly butter 2 baking sheets, or line with parchment paper.
- Cream the butter, sugar, and vanilla until light and fluffy. Sift together the flour and salt; mix into the butter mixture. Stir in the pecans. Dust your hands with a little of the confectioners' sugar and roll the dough into 1 inch balls.
- Place 2 inches apart on the baking sheets and bake for 25 minutes or just until brown. Put on racks to cool for 15 minutes, then roll in the confectioners sugar.

Steps:
- Grind 1/2 cup of the coconut in food processor.
- Chop remaining coconut and set aside.
- Add flour, 1/4 cup of the confectioners' sugar and the salt.
- Pulse to blend.
- Add butter and vanilla; pulse until dough comes together.
- Heat oven to 350 degrees.
- Roll dough into 1-inch balls.
- Place dough balls 1 inch apart on an ungreased baking sheet.
- Bake cookies until firm but tender, 15 minutes.
- Remove to rack, let cool completely.
- In small bowl, stir together remaining 1 cup confectioners' sugar and enough milk until smooth but still thick.
- Dip cookies in glaze (about 1/2 t for each), letting it drip down sides.
- Dip in chopped coconut and set aside for glaze to dry.

- cream butter and 3 tbsp powdered sugar.
- add vanilla.
- mix in flour and nuts.
- roll into tiny balls (about one teaspoon size).
- bake for 20 minutes.

- allow cookies to cool and roll in powdered sugar again.
- pop one in your mouth and enjoy.

NO-BAKE SNOWBALLS
Slightly sweet, nutty little no-bake snowballs taste indulgent but are a pretty nutritionally sound snack, especially during the holidays. Full of cashews, coconut, agave, oats, and vanilla, they keep tummies satisfied without the sugar overload.

- In a food processor or blender, blitz the oats and cashews until you have a fine meal, 1 to 2 minutes. Add the agave syrup, vanilla, salt, and water and blitz again briefly, just until the mixture resembles wet cookie dough.
- Dump the mixture into a bowl and stir in 2 tablespoons of the desiccated coconut. Shape into small balls. Place the remaining coconut on a plate and roll the balls to fully coat with coconut.
- Stored in a tin or jar in the refrigerator, the no-bake snowballs will keep for about a week.

These are a great sweet treat to serve with coffee. They are very simple to make and only have 3 ingredients. You can serve them as is or in small paper patty cases. I usually make a double batch. They keep well in an airtight container- though dont last more than a few days in my home! As a bonus this recipe is also gluten free as it has no flours- just ensure you use pure icing sugar in the recipe.

- Preheat oven to 160°C ( 325°F ).
- Process ground almons in a food processor until a paste forms. This shoud take a couple of minutes. Use shorter bursts on the processor until completed.
- Add icing sugar and eggwhite and process until combined and smooth consistency.
- Roll 2 teaspoons of mixture at a time into balls. Then roll each ball into sifted icing sugar to coat thickly. (I make mine on the small side- will fit into a chocolate paper/foil wrapper after being cooked. You can make larger ones if you wish).
- Place on baking trays lined with baking paper and bake for 10 minutes. They will puff up as they cook.
- Cool on trays and then store in airtight containers.

CHERRY SNOWBALLS
My mom made these every Christmas and we SO looked forward to them. The dough is almost like a shortbread and kind of melts in your mouth. I often make a double batch, using half red cherries and half green. Enjoy!

- Blend together butter, 1/2 cup icing sugar and vanilla.
- Then add flour, salt and chopped pecans.
- Mix well to form a dough.
- Chill dough thoroughly.
- Drain candied cherries well.
- Form dough around each cherry to form a small ball.
- Bake at 400 for 10- 15 minutes.
- (Dough should not brown).
- Roll in icing sugar while warm and again when cool.
