Time 13h30m

Yield 6-8 servings

Number Of Ingredients 17

Water
2 tablespoons kosher salt
1 pound small dried beans, such as great northern, navy, or pinto beans, picked over and rinsed
8 ounces sliced bacon, cut into 1/2-inch strips
1 1/2 cups finely minced yellow onion (about 1 large onion)
2 tablespoons finely diced seeded jalapeño (about 1 medium pepper)
1/4 cup finely diced green bell pepper
1 tablespoon minced garlic (about 3 medium cloves)
2 cups chicken stock or low-sodium broth
1 1/2 cups ketchup
1/2 cup dark brown sugar
1/4 cup honey
1/4 cup molasses
2 tablespoons yellow mustard
2 tablespoons apple cider vinegar
1 tablespoon barbecue rub
1 tablespoon hot sauce

Steps:

  • In a large container, whisk together 2 quarts water and salt until salt has dissolved. Add beans, cover, and let stand overnight at room temperature. Drain and rinse beans.
  • Place a large dutch oven over medium-high heat. Add bacon and cook until fat has rendered and bacon has crisped, 7-10 minutes. Transfer bacon to a paper towel-lined plate, leaving as much fat in dutch oven as possible.
  • Add onion to dutch oven and cook, stirring occasionally, until onion softens and begins to brown around the edges, about 7 minutes. Stir in green pepper, jalapeño, and garlic and cook until fragrant, about 1 minute. Stir in 3 cups of water, chicken stock, reserved bacon, and beans. Bring to a boil, then reduce heat to low and simmer for 1 hour. Preheat oven to 300°F while beans are simmering.
  • Stir in ketchup, brown sugar, honey, molasses, mustard, vinegar, barbecue rub, and hot sauce. Cover and transfer to oven. Cook beans for 4 hours, stirring occasionally. Remove cover and cook until beans are tender throughout and sauce has thickened, about 1 hour longer. Remove from oven and let cool for 15 minutes. Season with salt. Serve immediately; alternatively, store in an airtight container in the refrigerator for up to 1 week, or freeze. Reheat before serving.

BBQ BAKED BEANS

BBQ Baked Beans image

BBQ baked beans are a summer staple. This shortcut version relies on ordinary canned baked beans, which we dress up with fresh peppers, onions, cider vinegar and barbecue sauce. The sweet and tangy side dish is perfect for a summer barbecue, picnic, potluck or weeknight dinner. The beans taste even better the next day, so they can be prepared ahead of time and reheated or served at room temperature.

Time 1h20m

Yield 6 servings

Number Of Ingredients 12

8 slices bacon (about 8 ounces), cut into 1/2-inch pieces
1 medium yellow onion, diced
1 green bell pepper, seeded and diced
Two 28-ounce cans baked beans
1 cup barbecue sauce
1/4 cup molasses
1/4 cup apple cider vinegar
1 tablespoon Worcestershire sauce
1/3 cup packed dark brown sugar
2 teaspoons yellow mustard powder
1/4 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat an oven-proof heavy-bottom pot or Dutch oven over medium heat. Add the bacon and cook, stirring often, until the fat has started to render and the bacon is beginning to crisp, about 5 minutes. Add the onions and bell pepper and continue to cook, stirring often, until the vegetables are slightly softened, about 3 minutes.
  • Stir in the canned beans, barbecue sauce, molasses, vinegar, Worcestershire, brown sugar, mustard powder, cayenne, 1 teaspoon salt and several grinds of black pepper. Bring to a simmer and let cook over low heat, stirring occasionally, until the sauce has thickened slightly, about 5 minutes.
  • Transfer the pot to the oven and bake (uncovered) until the sauce thickens and the beans on top begin to brown, about 40 minutes. Remove from the oven and let cool for at least 15 minutes before serving warm or at room temperature.

Season, to taste, with salt and pepper. Continue cooking until flavors have come together and beans are tender and cooked through and the sauce has thickened.

LOVE'S BARBECUE PIT BBQ BEANS

LOVE'S BARBECUE PIT BBQ BEANS image

I found this recipe online after searching for quite a while. These beans are the recipe from Love's restaurant that is no longer in West Covina that I loved so much as a kid. This recipe was taken from a previous employee at Love's. It's spot on!

Provided by Gina C

Categories     Other Side Dishes

Number Of Ingredients 7

3 can(s) (1 lb) ea. pork and beans
1 c packed brown sugar
2 Tbsp worcestershire sauce
2 tsp chili powder
1/4 c dark molasses
1/2 c bottled chile sauce
2 Tbsp vinegar

Steps:

  • 1. Combine all ingredients in bean pot or crockpot with lid, mix well. I used a pyrex 13 x 9 or bigger which worked fine too.
  • 2. Cover with foil or lid and bake at 400 degrees F for 1 hour for thin bean mixture, or 1 1/2 to 2 hours for thicker bean mixture.
  • 3. Sprinkle with crumbled bacon bits to serve if desired.
  • 4. *Special tip that a reviewer wrote: I tested the recipe, added some fried bacon and the left over bacon drippings, and smoked the beans for four hours on my Traeger Pellet Smoker. The recipe was spot on, even the chile sauce (Hienz Chili) was right. It was like being at Love's all over again.

CALIFORNIA BBQ BEANS

CALIFORNIA BBQ BEANS image

Number Of Ingredients 16

Serves 4 to 6
If you can find them, pinquito beans (a variety grown in the Santa Maria Valley) are traditional in this dish. Bottled taco sauce is available in the Mexican aisle of most grocery stores. Don't add the tomato puree, taco sauce, brown sugar, and salt before the beans have simmered for an hour; they will hinder the proper softening of the beans.
Ingredients
4 slices bacon, chopped fine
1/2 pound deli ham, chopped fine
1 onion, chopped fine
4 garlic cloves, minced
1 pound pink kidney beans, soaked overnight and drained
6 cups water
1 cup canned tomato puree
1/2 cup bottled taco sauce
5 tablespoons packed light brown sugar
1 tablespoon dry mustard
Salt
1/4 cup chopped fresh cilantro leaves
2 tablespoons cider vinegar

Steps:

  • Instructions 1. Cook bacon and ham in Dutch oven over medium heat until fat renders and pork is lightly browned, 5 to 7 minutes. Add onion and cook until softened, about 5 minutes. Stir in garlic and cook until fragrant, about 30 seconds. Add beans and water and bring to simmer. Reduce heat to medium-low, cover, and cook until beans are just soft, about 1 hour. 2. Stir in tomato puree, taco sauce, sugar, mustard, and 2 teaspoons salt. Continue to simmer, uncovered, until beans are completely tender and sauce is thickened, about 1 hour. (If mixture becomes too thick, add water.) Stir in cilantro and vinegar and season with salt. Serve. (Beans can be refrigerated for up to 4 days.)
