MALTED OATMEAL COOKIES

The first time I saw Pleasantville, I had a single complaint about what is otherwise a masterpiece: how could Margaret possibly instigate a classic alpha-male catfight over cookies that didn't contain chocolate? Nevertheless, her oatmeal cookies earned her town-wide fame and Toby Maguire's young heart. I had to figure out what could be so special about oatmeal cookies. I think this recipe might come close to her heart-stealers. The malted milk powder and ground walnuts give the cookies a more grown-up flavor, and the sea salt on top really puts them over the edge.

Number Of Ingredients 14

1 cup unsalted butter, at room temperature
2/3 cup firmly packed dark brown sugar
1/2 cup granulated sugar
2 large eggs, at room temperature
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon nutmeg
1 1/2 tablespoons instant malted milk powder
1/2 teaspoon salt
3 cups old fashioned oats
1/2 cup walnuts, toasted until light brown
maldon sea salt, to top

Steps:

  • Do not preheat the oven yet. This cookie dough needs to rest for at least two hours before baking.
  • In the bowl of a stand mixer fitted with the paddle attachment, cream together butter and both sugars on medium speed until the mixture is light and fluffy, about 3 minutes. Add the eggs one at a time, scraping down the bowl in between each egg. Beat on medium speed until the mixture is airy, about 2 minutes. Add the vanilla and mix until combined.
  • In a medium bowl, whisk together the flour, baking soda, cinnamon, nutmeg, malted milk powder, and salt. Add the dry ingredients to the wet ingredients in three increments, mixing the dough until just combined.
  • In a food processor, process the oatmeal and toasted walnuts until the mixture resembles coarse sand. Add to dough and stir until just combined.
  • Cover the bowl with plastic wrap and refrigerate for at least 2 hours. Overnight is even better.
  • Preheat oven to 350 degrees Fahrenheit. Line a cookie sheet with parchment paper or a silicon baking mat. Using a large cookie scoop (about 2 Tablespoon capacity), make individual dough balls and place on the baking sheet two inches apart. Top with Maldon sea salt. Bake for 12-15 minutes or until cookies are golden brown. Let cool on cookie sheets for 5 minutes, then place on cooling racks to cool completely.

3 medium bananas, mashed
2 cups uncooked quick oats
1/2 cup raisins
1/3 cup light margarine spread, melted
1/4 cup nonfat milk
1 teaspoon alcohol-free vanilla extract
1 teaspoon cinnamon

Steps:

  • Preheat oven to 350°F.
  • Mix all ingredients in a large bowl, let stand for 5 minutes so oats absorb moisture.
  • Drop dough by tablespoons (should make 36) onto ungreased baking sheets.
  • Bake for 15 to 20 minutes.
  • Let cool for 1 minute on baking sheets, then transfer to wire racks to cool completely.
  • It is possible to substitute margarine spread with oil or clarified butter.
  • Feel free to experiment with other extracts. Walnut works well.

1 1/4 teaspoons vanilla
2 1/2 cups oatmeal
1 cup flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup raisins
1/2 cup M&M'
1/4 cup coconut

Steps:

  • cream butter and sugar together.
  • blend in egg and vanilla.
  • add oats,soda,salt, and flour.
  • mix well.
  • stir in raisins, coconut.
  • drop onto ungreased cookie sheets and top each cookie with 2 or 3 m&m's.
  • bake at 350 for 8-10 minutes.

1 cup butter
1/3 cup white sugar
1/3 cup brown sugar
2 eggs
2 teaspoons vanilla extract
1 teaspoon almond extract
1 1/2 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon ginger
1 pinch salt
2 1/2 cups oatmeal
1/2 cup chocolate chips
1/2 cup dried cranberries
1/2 cup sliced almonds
1/2 cup toffee pieces
may also use raisins butterscotch chips, peanut butter pieces or white chocolate, chips. mix and match to your heart's content

Steps:

  • Cream butter with sugars. Add eggs, vanilla and almond extracts. Beat well. Add flour mixed with baking soda cinnamon, ginger and salt. Fold in oatmeal and beat well. Fold in the nuts, chips and bits; mix well. Place teaspoon-sized rounds of dough on foil-lined cookie sheets. Bake 7-8 minutes at 350 degrees. Freezes well.
