The extra-rich taste of our cream scones comes from using milk powder in addition to the standard ingredients butter and cream. A light touch when combining the dough ensures a tender crumb.

1 1/4 cup heavy cream, plus more for brushing
1 large egg, beaten
2 tablespoons dry low-fat milk powder
3 cups all-purpose flour, plus more for dusting (see Cook's Note)
1/4 cup granulated sugar
1 tablespoon baking powder
2 teaspoons kosher salt
1 stick (8 tablespoons) cold unsalted butter, cut into pieces
Demerara or raw sugar, for sprinkling
Softened butter and jam, for serving

Steps:

  • Position a rack in the center of the oven and preheat to 400 degrees F. Line a baking sheet with parchment paper.
  • Whisk the cream, egg and milk powder in a liquid measuring cup. Pulse the flour, granulated sugar, baking powder and salt in a food processor until combined. Add the butter and pulse only until pea-size pieces remain. Transfer to a large bowl and make a well in the center. Pour the wet ingredients into the well and mix with a fork, incorporating the dry ingredients a little at a time until a shaggy dough forms (it's okay if the dough looks a little dry, just don't overwork it). Lightly knead the dough in the bowl until it just comes together.
  • Turn the dough out onto a lightly floured surface and pat into a 1-inch-thick rectangle (about 9 by 7 inches). Cut in half lengthwise, then cut in half again crosswise; you should have 4 equal rectangles. Cut each piece in half from corner to corner making 8 triangular wedges. Transfer to the prepared baking sheet and freeze for 10 minutes.
  • Brush the tops with cream and sprinkle with demerara sugar. Bake the scones until golden brown, 20 to 25 minutes. Let them cool on the baking sheet for 10 minutes, and then transfer to a wire rack to cool for 15 more minutes. Serve warm with softened butter and jam.

4 tablespoons cold (1/2 stick) unsalted butter, cut into pieces, plus more for baking sheet
1 large egg
1/4 cup milk
1 1/3 cups packed self-rising flour (white lily)
3 tablespoons sugar
Pinch of salt
1/3 cup golden raisins

Steps:

  • Preheat oven to 425 degrees. Lightly butter a baking sheet; set aside. In a small bowl, whisk together egg and milk. Set aside about 1 tablespoon for egg wash.
  • In a medium bowl, combine flour and butter. Using your fingers, work together until the mixture resembles coarse meal. Add sugar, salt, and raisins. Stir to combine. Gradually add egg mixture, stirring with a fork until the mixture begins to come together and form dough.
  • Turn out onto a lightly floured surface, and pat out about 3/4-inch-thick. Cut into desired shapes, and transfer to prepared baking sheet. Brush with reserved egg wash. Transfer to oven and bake until golden brown and cooked through, about 15 minutes.

BLUEBERRY CREAM CHEESE SCONES WITH YOGURT GLAZE



Blueberry Cream Cheese Scones with Yogurt Glaze image

2 cups (254 grams) all-purpose flour
1/2 cup (100 grams) granulated sugar
1 tablespoon baking powder
1 teaspoon kosher salt
Zest of 1 lemon
1/2 cup (1 stick) unsalted butter, cold and cubed
6 ounces (170 grams) fresh or frozen blueberries, rinsed and dried (1 1/2 cups)
2 large eggs
1/2 cup (113 grams) plain whole milk yogurt
2 teaspoons vanilla extract
1/2 teaspoon almond extract
1/2 cup (120 grams) cream cheese
3/4 cup (90 grams) powdered sugar
1 to 2 tablespoons plain whole milk yogurt
Pinch kosher salt
Sanding sugar, optional

Steps:

  • For the scones: Preheat the oven to 400 degrees F. Line 2 baking sheets with parchment paper and set aside.
  • Add the flour, granulated sugar, baking powder, salt and lemon zest to a food processor and pulse to combine. Add the butter and pulse until it's mostly pea-sized; a few larger chunks are okay. Dump the mixture into a large bowl and gently toss in the blueberries.
  • In a medium bowl, whisk together the eggs, yogurt, vanilla and almond extract. Pour into the dry ingredients and, using a rubber spatula, mix until about 80 percent of the dry mixture is incorporated. Dollop teaspoon-sized plops of cream cheese all over the mixture, then gently fold the mixture just until the remaining dry ingredients are incorporated. (You want the cream cheese to generally stay intact but it will of course swirl a little.) Using an ice cream scoop or large spoon, divide the dough into 8 balls and place them on the lined baking sheets about 2 inches apart (they will spread quite a bit). Bake until the tops are lightly browned and the bottoms are golden, 16 to 20 minutes.
  • For the glaze: Meanwhile, whisk together the powdered sugar, yogurt and salt in a bowl.
  • Let the scones cool on the baking sheets for 5 minutes, then transfer them to a wire rack to cool for 5 more minutes. While they're still a little warm, brush with the glaze, then sprinkle with the sanding sugar, if using. These are best enjoyed the day of.

HAM AND CHEESE SCONE SANDWICHES

1 1/2 cups (210 grams) all-purpose flour, plus more for dusting
1 tablespoon granulated sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon kosher salt
Roasted Garlic, recipe follows
1/2 cup sour cream
1 large egg, beaten
2 tablespoons unsalted butter, cold and cubed
3 tablespoons chopped fresh chives
1 tablespoon heavy cream
1 teaspoon flaky salt
3 tablespoons apricot jam
1/2 pound sliced deli honey ham
1/4 pound sliced sharp white cheddar
1 head of garlic
Olive oil

Steps:

  • For the scones: Preheat the oven to 375 degrees F.
  • Combine the flour, sugar, baking powder, baking soda and kosher salt in a large bowl and whisk together. In the bowl with the Roasted Garlic, add the sour cream and egg. Whisk together and set aside.
  • Using your fingers or a pastry blender, cut the butter into the flour mixture until it forms pea-size bits. Toss in the chives. Add the sour cream mixture and mix just until a sticky dough forms. Turn the dough out onto a liberally floured counter and press together to form a 6-by-6-inch square. Trim each side (keep the trimmings and bake off for a little snack) and cut into 9 squares. Place on a parchment-lined baking sheet. Brush the tops with heavy cream, sprinkle with flaky salt and bake until lightly browned and crackly on top, 15 to 20 minutes.
  • For the sandwiches: Split open the scones and toast the insides on a griddle or pan. Spread about 1/2 teaspoon of the apricot jam on each of the toasted sides. On the bottom halves, layer on the ham, cheese and then the tops of the scones and eat right away.
  • The scones will keep for a couple days in a plastic bag or airtight container at room temperature. Toast and spread with butter or jam.
  • Preheat the oven to 325 degrees F.
  • Slice off the top of the head of garlic, drizzle with olive oil and wrap in foil. Roast for about an hour. Remove from the oven and allow the garlic to cool inside the foil. When cool, open the foil and squeeze the roasted garlic from each clove into a small bowl.
