Baked Stuffed Squid: Calamari Ripieni al Forno image

Provided by Food Network

Categories     main-dish

Time 2h20m

Yield 6 to 12 servings

Number Of Ingredients 20

1/4 cup olive oil
1 large onion, sliced thinly (preferably sweet white Vidalia onion)
Salt and freshly ground black pepper
1/4 cup pine nuts
1/4 cup raisins
1/4 cup Italian or kalamata olives (preferably pitted)
1 teaspoon capers, optional
One 24-ounce can peeled crushed/ground tomatoes (recommended: Kitchen Ready)
5 or 6 basil leaves, torn
3 eggs
3/4 cup seasoned bread crumbs, plus extra for sprinkling
1 tablespoon raisins, coarsely chopped
1 tablespoon pine nuts, coarsely chopped
1/4 cup chopped squid tentacles
1 tablespoon caciocavallo cheese or Pecorino Romano, chopped into small cubes
12 cleaned fresh or frozen medium squid
Grated Romano
Dry seasoned bread crumbs
Salt and freshly ground black pepper
Extra-virgin olive oil

Steps:

  • To make the sauce: Pour the oil into a medium size saucepan, add the onion, a pinch of salt and pepper and saute at medium to medium-high heat until the onion becomes golden and tender and you can see through it. Add the pine nuts, the raisins and the olives, (for a tangy taste, add the capers). Saute for about 3 more minutes). Add the can of tomatoes (add about 1/2 can of water to thin the sauce for cooking) and cook at medium heat for about at least 1 hour, stirring occasionally. Lastly, add the basil leaves for a more fresh and tasty flavor.
  • Preheat the oven to 400 degrees F.
  • To make the stuffing: in a medium bowl, beat the eggs and gradually add the bread crumbs, raisins, pine nuts, tentacles and cheese. Mix to a soft consistency. Stuff squid loosely with the mixture and secure opening with a small skewer or toothpick. Place a single layer of squid in a medium baking dish (9 by 13-inches). Top with the sauce. Sprinkle a little grated romano, some dry seasoned bread crumbs, a pinch of salt and pepper over the sauce, then drizzle with some olive oil. Cover pan with aluminum foil and bake for about 45 minutes or until tender.

CALAMARI "BRUCE"

Calamari

Provided by Robert Irvine : Food Network

Categories     appetizer

Time 2h37m

Yield 4 servings

Number Of Ingredients 18

2 pounds cleaned calamari, sliced crosswise
1 cup buttermilk
1 liter canola oil or enough to deep-fry calamari
1 1/2 cups all-purpose flour
3/4 cup cornstarch
4 teaspoons baking powder
1 teaspoon salt
1/4 teaspoon pepper
8 ounces cold seltzer
2 tablespoons olive oil
1 large red bell pepper cut brunoise (julienne then crosswire into 1/8-inch pieces)
1 large yellow bell pepper cut brunoise (juliennes then crosswire into 1/8-inch pieces)
1/2 cup oil packed sun-dried tomatoes, drained and sliced
4 to 5 scallions, white and tender green parts only, sliced on the diagonal
1-ounce fresh ginger (about a 1 to 1/2-inch piece) peeled and finely diced
1 tablespoon prepared wasabi
1 fresh lemon, halved and seeds removed
1 fresh lime, halved and seeds removed

Steps:

  • Toss calamari with buttermilk in a non-reactive bowl, cover and let marinated in the refrigerator for 2 hours.
  • Make topping by heating olive oil over medium heat in a medium skillet. Add peppers, sun-dried tomatoes, scallions, fresh ginger, and wasabi and saute until peppers are tender and flavors integrate. Remove from heat and set aside.
  • Drain marinated calamari through a strainer or colander. Heat canola oil in deep-fryer to 375 degrees F (or as deep-fryer manufacturer directs for similar foods). To make tempura, mix flour, cornstarch, baking powder, and salt and pepper in a bowl. Dredge sliced calamari in the dry mix, then set aside briefly. Add seltzer in a stream to the tempura mix while whisking constantly to make into a batter. Dip calamari into the batter or ladle batter over the calamari, and place into the deep-fryer basket, frying for a minute or two until golden brown. Drain on paper towels.
  • Finish by adjusting seasoning in topping with salt and pepper. Serve topping over fried calamari and squeeze lemon and lime juice over.

CRISPY FRIED CALAMARI & AïOLI

Crispy fried calamari & aïoli image

Transport yourself to a seaside taverna with Mediterranean-inspired deep-fried squid rings and garlicky aïoli. Cooking this is easier than you think

Provided by Esther Clark

Categories     Starter

Time 20m

Number Of Ingredients 10

500g squid, tubes and tentacles, cleaned
vegetable oil, for deep-frying
50g plain flour
50g cornflour
¼ tsp baking powder
pinch of cayenne pepper
150g mayonnaise
1 large garlic clove, finely grated
pinch of saffron
½ lemon, juiced

Steps:

  • Cut the tentacles off the squid and put in a bowl. Slice the squid tubes into roughly 1cm thick rings and add to the bowl. Heat the oil in a large heavy-based pan over a low heat, ensuring it is no more than two-thirds full.
  • For the aïoli, mix the mayonnaise, garlic, saffron and lemon juice in a small bowl. Set aside.
  • Toss the squid with the flour, cornflour, baking powder, cayenne and ½ tsp salt. When the oil has reached 170C on a thermometer, or when a cube of bread is dropped in and turns golden brown in 30 seconds, deep-fry the squid in batches for 2 mins, or until lightly golden and crisp. Set aside on a tray lined with kitchen paper. Serve the fried squid with the aïoli on the side for dipping.

  • Slice the cleaned squid into rings about half an inch thick. Move to a mixing bowl and pour over the lemon juice or milk. I prefer the milk method, but you can use whatever you have on hand. Set aside for 30 minutes to tenderize the squid.
  • Meanwhile, combine the flour, paprika, salt, and black pepper together in a bowl. Pour half of the mixture into a second bowl. Pour the 1/2 cup of milk into a third bowl.
  • When the squid has finished tenderizing, drain off the liquid. Dry the squid with paper towels. You don't want any extra moisture.
  • Place a large skillet over medium-high heat and pour in the olive oil to a depth of just over half an inch.
