Number Of Ingredients 13

1 (2 lb.) boneless pork top loin roast, cut into 1-inch cubes
OR 1 (2 lb.) boneless pork sirloin roast, cut into 1-inch cubes
1/2 teaspoon salt
2 tablespoons Crisco® Pure Vegetable Oil
1 pound ham, cut into 1/2-inch pieces
1 (16 oz.) jar mild or medium chunky salsa
1 (15 oz.) can diced tomatoes, undrained
1/2 cup Smucker's® Peach Preserves
1 (15.25 oz.) can whole kernel corn, drained
1 (15 oz.) can black beans, rinsed and drained
2 cups cooked rice
1/2 cup chopped green onions
2 tablespoons chopped cilantro

Steps:

  • STOVE TOP METHOD
  • SEASON pork with salt. Heat oil in large Dutch oven over medium-high heat. Brown pork on all sides. Add ham, salsa, tomatoes, preserves, corn and beans. Reduce heat. Simmer, covered, for 20 to 25 minutes or until pork is tender.
  • STIR in cooked rice. Simmer 5 minutes or until heated through. Stir in green onions. Garnish with cilantro.
  • SLOW COOKER METHOD
  • COAT slow cooker with Crisco® No-Stick Cooking Spray.
  • SEASON pork with salt. Heat oil in large skillet over medium-high heat. Brown pork on all sides. Place in slow cooker. Add ham, salsa, tomatoes, preserves, corn and beans.
  • COVER and cook on Low 8 to 10 hours or on High 4 to 5 hours. Add cooked rice at end of cook time. Stir in green onions. Garnish with cilantro.

1 lb lean pork, cubes cut 3/4-inch (shoulder, fresh leg, tenderloin)
2 tablespoons flour
1 tablespoon olive oil
3 medium carrots, pared and sliced 1/2-inch thick
2 garlic cloves, crushed
1 (14 1/2 ounce) can diced tomatoes
1/2 cup dry red wine
1 teaspoon italian seasoning
1/4 teaspoon salt
1/4 teaspoon black pepper
1/8 teaspoon cayenne
1 cup frozen pearl onions
1 (9 ounce) package Italian cut green beans

Steps:

  • Toss pork cubes with flour and brown in hot oil in large skillet with lid. Remove pork and reserve. Sauté carrots in skillet, adding more olive oil if necessary, until brightly colored; return pork to pan with garlic, tomatoes, wine, Italian seasoning, salt, pepper and cayenne. Bring to a boil, lower heat, cover and simmer for 20 minutes, until pork and carrots are tender. Stir in onions and green beans and heat through, about 5-7 minutes.

1 tablespoon extra virgin olive oil
2 pounds cubed pork stew meat
salt to taste
ground black pepper to taste
garlic powder to taste
2 tablespoons cornstarch, or as needed
8 red potatoes
1 green bell pepper, chopped
1 red bell pepper, chopped
1 sweet onion, diced
1 (11 ounce) can whole kernel corn
1 (14 ounce) can stewed tomatoes
1 (10.75 ounce) can cream of mushroom soup
1 ¼ cups milk
1 (14 ounce) can beef broth
1 tablespoon Italian seasoning

Steps:

  • Heat the olive oil in a skillet over medium heat. Sprinkle pork on all sides with salt, pepper, and garlic powder, and lightly coat with cornstarch. Place pork in the skillet, and cook until lightly browned but not done. Transfer to a slow cooker. Place potatoes, green bell pepper, red bell pepper, onion, and corn in the slow cooker.
  • In a bowl, mix the tomatoes, cream of mushroom soup, milk, broth, and Italian seasoning. Pour into the slow cooker.
  • Cover, and cook 1 hour on High. Reduce heat to Low, and continue cooking at least 1 hour.
